EASY HOMEMADE GRANOLA
With only a few minutes of hands-on time, you can have the best crispy, healthy homemade granola!

- Heat oven to 300 degrees F. Prepare a baking sheet by lining with parchment paper. Move the center rack up a level so it's on the second level from the top.
- Mix the oats, almonds, brown sugar, cinnamon, and salt together in a large mixing bowl until combined. In a small, separate bowl, stir the melted butter, honey, vanilla and egg white together, then drizzle over the oat mixture, stirring together until well-combined.
- Transfer the granola mixture to the prepared baking sheet and spread it out in an even layer. If you want large chunks of granola, flatten into an even layer with a spatula, adding pressure so the granola is nice and compact. Bake for 30-35 minutes, rotating the pan once halfway through for even toasting, until golden and crispy and the almonds look lightly toasted.
- Remove from oven and let the granola cool completely before transferring to an airtight container. Keeps for 2 weeks at room temperature.

BASIC GRANOLA RECIPE
This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

- Preheat the oven to 325°F. Line a 13 x 18-inch rimmed baking sheet with parchment paper. (If using parchment sheets, line the pan first with heavy-duty aluminum foil, then parchment.)

- Toss the granola with a spatula and mix in the dried fruits. Spread and press into an even, compact layer, then let cool on a rack to room temperature. Break the granola into large clusters and store in an airtight container in the refrigerator for up to two weeks.
