Steps:
- In a large pot, bring four cups of water to a boil.
- Wash the plantains and cut the end off, leave the skin on. Cut the plantains in half and place the plantains with skin on in the boiling water.
- Cover your pot and cook the plantains on high heat for around 20 minutes.
- Once done, remove the pot from heat and drain the water. Allow your plantains to cool and then peel off the skin and discard it.
- Once the plantains have cooled completely, place them in a medium-size bowl and mash the peeled plantains. Add butter, salt, milk and cheese and combined together.
- Scoop a spoonful of the plantain mix into the palm of your hand and shape it into a ball. Repeat until mix is used up.
- In a medium-size skillet, heat up corn oil and fry the plantain balls until golden brown, about 1-2 minutes on each side.
- Once brown, remove balls, drain, and cool on paper towels.
FRIED YELLOW PLANTAINS

- With a small sharp knife, cut off both ends of the plantains, and cut in half.
- Carefully slit just the skin along the natural ridges of each plantain.
- Ease up the edge of the skin and run the tip of your thumb along the plantains, lifting the skin.
- Gently peel away the skin and slice the plantains lengthwise. Heat a little oil in a large frying pan and fry the plantain slices for 2-3 minutes on each side until golden brown.
- When brown and crisp, drain on paper towels and serve hot or cold, sprinkled with chives.

SPIRAL PLANTAINS WITH MOJO SAUCE RECIPE BY TASTY
Your favorite accordion potato recipe just got a new twist. Replace the spuds with slightly sweet plantains for a delicious take on the fairground classic. Zesty mojo sauce brightens up these fried delights to create the perfect bite!

- Make the mojo sauce: In a high-powered blender, combine the orange juice, lime juice, cilantro, salt, oregano, cumin, and garlic. Turn the blender on to medium speed and slowly drizzle in the olive oil until emulsified. Set aside until ready to use. The sauce will keep in an airtight container in the refrigerator for up to 1 week.
- Make the accordion plantains: Heat the oil in a large pot over medium-high heat until the temperature reaches 325°F (160°C). Set a wire rack over a baking sheet.
- Use a sharp knife to remove the tips of the plantains, then peel and cut the plantains in half crosswise. Place a plantain half between two chopsticks or skewers on a flat surface. Slice the plantain crosswise at ¼-inch intervals, using the chopsticks to avoid cutting all the way through. Flip the plantain over and slice diagonally at ¼-inch intervals, again using the chopsticks to avoid cutting all the way through. Gently thread a 6-inch skewer through the center of the plantain and carefully separate the layers with your fingers so that they are evenly spaced. Repeat with the remaining plantains.
- Fry the plantain skewers in the hot oil until light golden brown, using a slotted spoon or tongs to rotate for even frying, about 5 minutes total. Carefully transfer the skewers to the wire rack.
- Increase the heat to high to bring the oil temperature to 375°F (190°C).
- Return the plantains to the hot oil and fry until a deep copper color, about 3 minutes. Transfer to the wire rack and immediately season with salt.
- Serve the accordion plantains with the mojo sauce and mayoketchup for dipping.

EASY FRIED PLANTAINS SLICES
So easy, that even the most novice cook can make this. And it is delicious! It is a typical delicasy in Southern Mexico, Central America and the Carribean. It is best to choose plantains (not bananas) that are yellow with black spots (as shown in the picture), as these will be sweet and tender and will fry even more delicious! Enjoy by itself with sour cream or as a side dish (as shown in the picture).

- On medium high, heat oil in large frying pan.
- Meanwhile, cut each banana in half, across the middle (NOT lengh wise). Now take each banana half and cut 3 slices length wise. Do the same to the other half. You should end up with 6 slices about 2-3 inches long PER a banana. After you have done this with all 3 bananas, there will be a total of 18 slices.
- Add the sliced bananas slowly into the hot oil and fry each side for 3-5 minutes or until golden brown.
- Remove from pan, drain in paper towel and add salt to taste.
