Sticky white rice tossed with vibrant green edamame, flaky furikake, and a splash of saltiness from the soy sauce flavored mushrooms. This simple edamame rice recipe is perfect for weeknight dinner, family potlucks, bento lunches for the kids. . . let's be honest ANYTIME.

1 cup white rice, uncooked
1 cup water
3/4 cup frozen shelled edamame
2 tablespoons ochazuke wakame furikake
1 tablespoon nametake

Steps:

  • In a large bowl rinse rinse with cool water until the water runs clear. Drain excess water. Place rinsed rice into a rice cooker pot with 1 cup water and set to cook. This will take about 15-20 minutes.
  • Heat a small pot of water to a rolling boil. Add shelled edamame and boil for about 3-5 minutes or until edamame are tender.
  • Allow rice to cool for 10 minutes upon completion. Add edamame, furikake, and nametake. Toss to combine.
  • Best served warm.

2 rice cups (2 rice cups equals 1 1/2 regular cups)
1/4 cup ochazuke wakame
1/4 cup nametake
1/4 cup shelled edamame, cooked

Steps:

  • Prepare the rice. Wash the rice several times, until the water runs almost clear.
  • Cook the rice. (Use the same amount of water and same standard setting and you normally use to prepare rice in the rice cooker.)
  • Once the rice is finished cooking, pour in the ochazuke wakame. Use a rice paddle and gently mix.
  • Add the nametake. Mix again.
  • Add the cooked edamame. Mix again until everything is evenly combined.
  • Ready to eat!

Edamame mixed rice, or Japanese maze gohan, is a simple yet delicious brown rice bursting with edamame, nametake (seasoned mushrooms), and seaweed.

2 cups brown rice, uncooked
1 1/2 cup frozen shelled edamame
3 tablespoons Wakame-Chazuke (Green Tea) Furikake (dried rice seasoning)
2 1/2 tablespoons Nametake (seasoned mushrooms)

Steps:

  • Gather the ingredients.
  • Wash brown rice well and drain until water runs almost clear. Allow rice to soak in clean water for 30 minutes.
  • Cook rice according to rice cooker's instructions.
  • While rice is cooking, cook frozen shelled edamame in boiling water for about 5 minutes until beans are tender. Drain and rinse with cold water. Set aside.
  • After rice is done cooking, let rest in rice cooker for about 15 minutes. Transfer rice to a large shallow wooden sushi dish (or Japanese oke ).
  • Gently incorporate the wakame-chazuke (green tea) furikake seasoning into rice. If available, use a Japanese shamoji or rice paddle for ease of use.
  • Add bottled Nametake (seasoned mushrooms) to the rice and gently mix.
  • Add cooked shelled edamame. Serve immediately.

This healthy rice salad has a substantial helping of edamame beans.

Coarse salt and ground pepper
3/4 cup long-grain brown rice
1 1/4 cups frozen shelled edamame
1 tablespoon fresh lime juice
1 tablespoon rice vinegar
1 1/2 teaspoons toasted sesame oil
1/2 teaspoon sugar
3 scallions, thinly sliced on the diagonal

Steps:

  • In a medium saucepan, bring 1 1/2 cups lightly salted water to a boil. Add rice, reduce to a simmer; cover and cook, 30 minutes.
  • Stir in edamame; cover and cook until rice is tender, 15 to 20 minutes. In a small bowl, stir together lime juice, vinegar, oil, and sugar until sugar is dissolved.
  • With a fork, stir lime juice mixture and scallions into rice; season with salt and pepper.

RICE WITH EDAMAME



Rice With Edamame image

This dish is called mame gohan, the Japanese version of rice and beans. The beans are simmered in dashi seasoned with mirin and light soy sauce, and then the same cooking liquid is used for the rice. Before serving, the beans and rice are folded together, with a light dusting of salt and black sesame seeds.

1 or more packages instant dashi, mixed according to package instructions to yield at least 2 cups of dashi broth
2 teaspoons mirin, sake or dry sherry
1 teaspoon low-sodium Japanese soy sauce
Kosher salt
3/4 cup shelled fresh or frozen soybeans (edamame)
1 1/2 cups short-grain white rice
1 small piece of kombu (kelp), optional
2 tablespoons black sesame seeds

Steps:

  • In a medium saucepan, combine 2 cups dashi broth, mirin, soy sauce and 1/4 teaspoon salt. Bring to a boil over high heat. Add edamame, reduce heat to medium, and cook 4 minutes. Place a colander over a medium heatproof bowl, and pour in contents of saucepan. Reserve broth and beans separately.
  • Place rice in a bowl, and rinse with cold water until water runs clear. Drain rice well in a fine strainer. In a medium saucepan, combine rice, reserved broth and kombu.
  • Cover saucepan, and place over high heat. When lid jiggles and foam begins to appear at its edges (in 3 to 4 minutes), reduce heat to medium and cook 10 minutes. Raise heat to high for 30 seconds, and then turn it off. Immediately remove kombu from pan and add edamame; do not stir. Cover pan, and remove from heat. Let sit 10 minutes.
  • With a wooden paddle or fork, mix beans into rice. Scoop rice into serving bowls, and sprinkle each portion with a teaspoon of black sesame seeds and a little salt. Serve immediately.

2 to 3 tablespoons vegetable oil
4 scallions, sliced, white and green parts separated
1 red bell pepper, diced
1 cup shelled edamame, thawed if using frozen
2 cloves garlic, chopped
2 large eggs
2 tablespoons low-sodium soy sauce, plus more if needed
2 cups cooked long-grain white rice

Steps:

  • Heat the oil in a large skillet. Add the scallion whites and bell peppers and cook until just starting to soften, a few minutes. Stir in the edamame and garlic, then cook for 30 seconds.
  • Break the eggs into the skillet and stir-fry them quickly to scramble them. Add the soy sauce. Add the rice and stir it around to cook it for a couple of minutes. Add more soy sauce if you like.
  • Serve garnished with the scallion greens.

GINGER EDAMAME RICE

6 scallions, green and white parts separated
1 (2-inch) piece fresh ginger, peeled and cut into large chunks
2 garlic cloves, minced
Kosher salt
1 1/2 cups basmati white rice
1 cup shelled frozen edamame
Freshly cracked black pepper

Steps:

  • Fill a large pot with water and put over medium-high heat. Add the white whole scallion pieces, the ginger, garlic and a healthy pinch of salt. Bring to a boil, and cook about 5 minutes to infuse the water with the flavors.
  • Carefully add the rice to the boiling water, stir, and simmer the rice until cooked through but firm, about 15 minutes. During the last few minutes of cooking, add the edamame to the simmering water.
  • Meanwhile, slice the scallion greens and reserve. Drain the rice in a colander; remove the scallions, ginger and garlic, and discard. Transfer to a serving bowl and season with salt and pepper, to taste. Add 3/4 of the scallion greens and stir with a fork to fluff the rice and combine the ingredients.
  • Garnish the rice with the remaining scallions and serve immediately.

MISO COD WITH EDAMAME RICE



Miso Cod with Edamame Rice image

Cod is a very mild and affordable fish that lends itself well to a variety of seasonings including the umami-rich, sweet-salty miso glaze in this recipe. To complete the meal, we steam sliced carrots in the same pot as the rice while it cooks for a complete one-pot side dish.

4 6-ounce cod fillets
2 tablespoons white miso paste
1 tablespoon plus 1 teaspoon toasted sesame oil
4 teaspoons honey
2 teaspoons grated fresh ginger
1 cup long-grain white rice, rinsed well
Kosher salt
2 carrots, thinly sliced on an angle
1 cup frozen shelled edamame, thawed
2 scallions, sliced
1 tablespoon toasted sesame seeds
Freshly ground pepper

Steps:

  • Preheat the broiler. Place the cod fillets on a foil-lined baking sheet. Stir the miso, 1 tablespoon sesame oil, the honey and ginger in a small bowl until smooth. Rub the cod all over with about 2 tablespoons of the sauce. Arrange flat-side down and spread the remaining sauce over the top of the fillets.
  • Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in the rice and 1/2 teaspoon salt. Return to a boil, then stir and reduce the heat to medium low. Add the carrots on top of the rice, cover and cook until the liquid is absorbed and the rice is tender, about 15 minutes. Sprinkle the edamame on top, cover and let stand, 5 minutes.
  • Meanwhile, broil the cod until the sauce is browned and the fish flakes easily with a fork, 6 to 8 minutes, depending on the thickness.
  • Fluff the rice to mix in the carrots and edamame. Add half the scallions and sesame seeds and the remaining 1 teaspoon sesame oil and stir to combine; season with salt and pepper. Divide the rice among plates. Top with the cod and sprinkle with the remaining scallions and sesame seeds.

2 eggs, beaten
2 tablespoons light olive oil, divided
8 ounces shiitake mushroom caps, thinly sliced
1 red bell pepper, seeded and chopped
4 cups broccoli florets
4 ounces kale, chopped (about 2 cups)
4 garlic cloves, minced
1 2-inch piece fresh gingerroot, minced (about 2 tablespoons)
1 cup uncooked short-grain brown rice, cooked according to the package instructions
1 1/2 cups frozen, shelled edamame, defrosted
3 tablespoons reduced-sodium soy sauce
2 scallions, thinly sliced

Steps:

  • Heat a large skillet over high heat. Remove from the heat and coat with cooking spray. Return the skillet to the burner and add the eggs, turning the pan to coat it with a thin layer of eggs. Cook 30 seconds, loosening the inside edges of the eggs with a spatula. Gently flip the eggs over and cook 10 to 15 seconds. Transfer the eggs to a cutting board.
  • Heat the same skillet over medium heat. Add half the oil. Add the mushrooms, bell pepper, broccoli, and kale. Cook 4 to 5 minutes, turning often, until the vegetables soften. Add the garlic and ginger. Cook 1 minute, until it becomes fragrant.
  • Increase the heat to high. Push the vegetables to one side of the skillet and add the remaining olive oil, and the rice. Cook 1 to 2 minutes, turning the rice over with a metal spatula and scraping up bits that stick to the pan. Add the edamame and soy sauce and remove from the heat. Stir two or three times to mix in the soy sauce.
  • Thinly slice the eggs. Top the rice mixture with the eggs and scallions and serve.

Steps:

  • Bring 1 1/4 cups water to a boil, stir in rice and season with salt. cover, reduce heat to medium low and simmer 45 minutes or until rice is tender.
  • Bring 2 cups salted water to a boil, add edamame and cook 2 minutes or until tender; drain and set aside.
  • Toss together rice, edamame, cranberries, feta, olives, cilantro, oil, lime juice and red pepper flakes in a large bowl. Season with salt and pepper.
