EGG & BACON FLAN
My recipe for Egg & Bacon Flan is a family favourite. It's a simple recipe that uses only 2 large eggs, 1/4 pint of milk (150ml), about 8 rashers of streaky bacon and 6 ounces (175g) of shortcrust pastry. It's my grandmother's recipe, and my mum used to make it too. It's NOT a quiche, a tart or a pie, but very much an old-fashioned flan! It's perfect for hard times, as it uses very few ingredients, and unlike a quiche, there is no cheese in it. or onions for that matter. But, what it lacks in a long list of expensive ingredients is more than made up for in taste. It's quite simply absolutely delicious. Serve it warm with baby salad potatoes or cold with a salad, and don't forget the pickles or chutney.

- Pre-heat the oven to 200C/180C Fan/400F/Gas mark 6 and grease an 8" (20cm) flans dish or a pie plate. I used an old Pyrex glass flan dish for mine.
- Roll out the pastry and line the prepared flan/pie dish with the pastry. Prick all over the base of the pastry case with a fork and put it in the fridge whilst you make the filling.
- Beat the eggs with the milk, and salt and pepper to taste.
- Cut the bacon into small pieces, I used a pair of kitchen scissors and fry the bacon until it is cooked and the fat is crispy.
- Spoon the bacon into the pastry flan case, and then pour the eggs and milk mixture over the top.
- Bake in the pre-heated oven for 25 to 30 minutes until the filling has set and the pastry is golden brown.
- Serve warm with boiled salad potatoes and sliced tomatoes, or cold with salad, pickles and chutney.

CLASSIC BACON AND EGG QUICHE
This is a classic bacon and egg quiche in the Alsatian manner (cheese or stewed onions are sometimes added, though not traditional). It is baked in a nine-and-a-half-inch fluted French tart pan, the sort with the removable bottom. The resulting quiche, as opposed to those baked in a deeper pie pan, stands only one inch high, and their relatively short baking time ensures a creamy, unctuous texture.

- Bake chilled dough in a 9 1/2-inch tart pan at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
- Make the custard: in mixing bowl, beat eggs. Whisk in crème fraîche, milk, salt, pepper, nutmeg and cayenne. Set aside.
- Put bacon in small saucepan, cover with water and bring to a simmer over medium heat. Simmer for about 5 minutes or until tender, then drain and cool slightly.
- Set tart pan on a baking sheet. Sprinkle bacon evenly over bottom of pastry. Add Gruyère if using. Beat custard once more and carefully pour into tart shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.

CHEESE AND BACON FLAN
My mother used to make this when I was a child. Apologies for the imperial measurements but I've been making this since before metrication!

Steps:
- To make the pastry, combine the flour, salt and margarine. Rub until it resembles fine breadcrumbs. Add the water a spoonful at a time until it comes together in a dough. I use a stand mixer on speed 2 with a K beater. Place in the fridge for 30 minutes wrapped in cling film.
- Pre heat the oven to 200 degrees (not fan). Roll out the pastry to fit a 7-8" flan dish and bake blind for 10 minutes.
- Fry the bacon until crisp. Beat the eggs with some seasoning then add the hot milk, bacon, cheese and onion. Spoon the mixture into the part baked pastry case, lower the oven to 180 degrees and cook for about 30 minutes until set.
- This can be served hot or cold with salad. You can always swap the bacon for a vegetarian option if you prefer.
BACON-AND-EGG MUFFINS
Great brunch item and has many ways to customize this with egg styles and flavors to add.

- Preheat oven to 375 degrees F (190 degrees C). Prepare 12 muffin cups with cooking spray.
- Arrange bacon on a microwave-safe plate. Cook bacon in microwave for 75 seconds.
- Place a slice of bacon into each muffin cup so that the bacon lines the edges of the cup.
- Beat eggs and milk together in a bowl; ladle into muffin cups. Top 4 of the egg portions with 1 tablespoon each of the green onion, 4 with 1 tablespoon each jalapeno pepper, and 4 each with 1 tablespoon roasted red pepper.

- Preheat oven to 400 degrees F (200 degrees C).
- Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.

- place flour into a bowl and stir in the salt, rub in the butter quickly until it resembles breadcrumbs, then using a metal knife stir in the egg yolk and water to form a dough. wrap in cling film and chill for 30-45minutes.
- pre-heat oven to 200C/gas 6, roll out the pastry and line a lightly greased 23cm/9in loose bottomed quiche tin. trim the edges leaving a slight overlap and line the case with parchment/greaseproof paper and fill with baking beans, chill for 10minutes then bake blind for 12-15minutes.
- Meanwhile, fry the bacon in a little oil until crisp, add the onions to the pan and fry gently until soft but not brown, about 8-10mins. Add the herbs and stir through, drain off the fat and set aside using a little kitchen paper to soak up any more excess fat.
- remove pastry case from the oven and cool slightly for 5 mins, then remove the bsking beans and paper, pierce the base all over with a fork and brush with the dijon mustard. bake for a further 6 mins. Remove the case from the oven and turn the oven down to 180C/gas 4. When cool enough, trim the edges with a knife.
- Beat the cream with the eggs and season with plently of pepper. Sprinkle the onions and bacon onto the pastry case, then the cheese and pour over the cream and egg mixture. Bake in the centre of the oven for 40 mins or until cooked through and brown.
EGG AND BACON QUICHE (CRUSTLESS)
This probably has to be the easiest quiche ever! I'm not sure where the recipe came from, but mum would make it all the time and it's just so nice as it isn't too heavy. If desired, you could add 1 cup grated zucchini (excess moisture squeezed out) or a can of creamed corn to the mixture or add some tomato slices to the top of the quiche before baking.
