I used a recipe for Egg nog a few years back and couldn't find it again! So I scoured the internet and found something similar, based on my recollection. I adapted it to fit what I remember making before. I hope you enjoy it!

Steps:
- In large saucepan, over medium heat, heat 5 cups milk, Egg Beaters and sugar until thickened, stirring constantly.
- Remove from heat; stir in vanilla and rum extract.
- Cover; chill.
- Just before serving, stir in brandy if desired; thin to desired consistency with remaining skim milk.
- Sprinkle with nutmeg and cinnamon.

- Place all of the ingredients in a blender, and blend for 30-60 seconds, or until smooth. Chill for several hours.
- Shake or stir eggnog well to blend before serving. Serve in glasses or mugs with an additional sprinkle of nutmeg.
- NOTES: You can use 6 packets of Equal instead of the Splenda Granular. If you'd rather not use artificial sweeteners, then substitute the Splenda with 1/4 cup sugar, and use 1/2 cup regular instant vanilla pudding instead of the 3 Tbsps sugar-free pudding.

Steps:
- Mix milk, egg substitute and pudding together, adding a dash of spices.
- For extra decadance, I add French Vanilla whip cream!
- When drink is frothy, either pour into a cup, add another dash of nutmeg and enjoy,.
- or refrigerate until cold.
- I like to use an immersion blender to mix ("boat motor").
- I also like to add hot chocolate mix to my egg nog, so I'll bet that chocolate pudding would be yummy too.
- Be careful if heating for a hot drink - the eggs get a little curdled.
- "Cook time" is chill time.

- Note - if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract.
- Mix together first 3 ingredients in a large heavy saucepan. Set aside.
- Whisk egg yolks; add to SPLENDA® Granulated mixture whisking until blended. Gradually whisk in milk.
- Cook over low heat, whisking constantly until the temperature reaches 175°, approximately (5 to 8 minutes). Remove from heat and whisk in half and half; cool.
- Cover and chill 3 hours or up to 3 days. Stir in rum or vanilla just before serving.
- 15 servings. Prep time : 20 minutes, cooking time: 5-10 minutes.

- It looks and tastes like half and half, but it's made mostly of skim milk (and a little carrageenan for body) instead of half cream and half whole milk. - On low heat and in a heavy saucepan, combine together the egg yolks and sugar alternative. Heat this whisking continuously as we do not want to cook the eggs, just simply temper them. After one minute you can add half (two cups) of the milk. Use a thermometer to monitor the temperature and continue to whisk as needed. When the heat reaches 170 you can remove this from the heat (20-25 minutes). Please keep an eye on it as it tempers.
- Remove the tempered ingredients from the stove. Whisk for one minute and then add then remaining milk, vanilla extract, and nutmeg. Alcohol can be added as well. Cover and refrigerate for until chilled (1-3 hours depending on how chilled you want it to be)
