BLTs are a favorite at my house, so I created this recipe to combine those flavors into a warm, cozy casserole. It was such a hit, I served it to my church ladies group at a brunch I hosted. -Priscilla Detrick, Catoosa, Oklahoma

1/4 cup mayonnaise
5 slices bread, toasted
4 slices process American cheese
12 bacon strips, cooked and crumbled
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup 2% milk
4 large eggs
1 medium tomato, halved and sliced
1/2 cup shredded cheddar cheese
2 green onions, thinly sliced
Shredded lettuce

Steps:

  • Preheat oven to 325°. Spread mayonnaise on 1 side of each slice of toast and cut into small pieces. Arrange toast, mayonnaise side up, in a greased 8-in. square baking dish. Top with cheese slices and bacon., In a small saucepan, melt butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, 2 minutes. Pour over bacon., In a large skillet, fry eggs over medium heat until they reach desired doneness; place over bacon. Top with tomato slices; sprinkle with cheddar cheese and onions. Bake, uncovered, 10 minutes. Cut in squares; serve with lettuce.

3 egg yolks
lemon, juiced
5 dashes hot pepper sauce
½ cup unsalted butter, melted
Salt and ground black pepper to taste
1 cup balsamic vinegar
1 tablespoon honey
1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
1 egg, beaten
¼ cup panko bread crumbs
1 tablespoon fresh parsley, minced
1 tablespoon olive oil
6 eggs
1 tablespoon white vinegar
1 cup baby arugula, or more as needed

Steps:

  • Place egg yolks, lemon juice, and hot sauce in a blender. Blend until eggs are a pale yellow, about 30 seconds to 1 minute. While the motor is running, add the butter in a slow steady stream until it is all incorporated. Season with salt and pepper to taste.
  • Combine the balsamic vinegar and honey in a small pan. Bring to a boil over high heat; reduce heat to medium and let simmer until reduced by about half, 20 to 30 minutes, stirring occasionally. Remove from heat.
  • Combine corned beef hash, beaten egg, breadcrumbs, and parsley in a mixing bowl.
  • Heat the olive oil in a large skillet over medium-high heat. Measure corned beef mixture into 6 patties using a 1/4-cup measuring cup. Place them in skillet; Reduce heat to medium. Fry until just starting to brown, about 3 minutes per side. Remove from heat.
  • Fill a large saucepan with 2 to 3 inches of water and bring to a boil. Reduce the heat to medium-low, pour in vinegar, and keep the water at a gentle simmer. Crack an egg into a small bowl then gently slip egg into the simmering water, holding the bowl just above the surface of water. Repeat with the remaining eggs. Cook eggs until the whites are firm and the yolks have thickened but are not hard, 2 1/2 to 3 minutes. Remove the eggs from the water with a slotted spoon, dab on a kitchen towel to remove excess water, and place onto a warm plate.
  • To plate, place one hash cake on a plate, top with a handful of arugula. Place a poached egg over the arugula and drizzle with hollandaise and glaze. Season with salt and pepper.

This hearty casserole is great for brunch or a main meal. Serve with a fruit or green salad for a simple yet delicious meal.

1 ¼ cups diced pancetta
1 medium onion, diced
1 red pepper, seeded and diced
8 eggs
2 teaspoons Italian seasoning
½ teaspoon salt
½ teaspoon ground mustard
¼ teaspoon black pepper
2 ½ cups milk
8 cups day old Italian bread cubes (3/4-inch/2cm)
2 cups shredded Italian blend cheeses
1 cup low-fat or regular ricotta cheese

Steps:

  • Grease a 9 x 13 (3 L) baking dish.
  • In large non-stick skillet, cook pancetta over medium heat until browned, about 4 minutes. Remove with a slotted spoon and drain. Add onion and red pepper to the drippings in same skillet and cook for about 3 to 5 minutes or until softened. Remove from heat.
  • Meanwhile, in large bowl, beat eggs well with seasonings. Stir in milk.
  • Spread 1/2 of the bread cubes in baking dish. Layer with 1/2 each onion mixture, pancetta and shredded cheese. Top evenly with spoonfuls of ricotta cheese. Top with remaining bread cubes, onion mixture and pancetta. Pour egg mixture evenly over top; press bread cubes down lightly. Sprinkle with remaining shredded cheese.
  • Cover and refrigerate overnight.
  • When ready to serve, preheat oven to 350 degrees F (175 degrees C).
  • Bake uncovered in the preheated oven for 50 to 55 minutes or until center is set and top is golden brown. Let stand 10 minutes before cutting into square to serve.

1 cup packed fresh flat-leaf parsley leaves
1/2 cup loosely packed fresh basil leaves
1/4 cup EVOO
1/4 cup grated Parmigiano-Reggiano
3 tablespoons pine nuts
2 cloves garlic, grated
1 Fresno or Italian cherry chile pepper
Kosher salt and freshly ground pepper
1 large red bell pepper
2 pounds hot Italian sausages
EVOO, for drizzling
Kosher salt
12 ounces haricots verts
4 ounces bacon or pancetta, chopped
1 red onion, quartered and thinly sliced
Freshly ground pepper
4 thick slabs Italian peasant bread or semolina bread
Softened butter
4 large organic eggs

Steps:

  • For the pesto: Toast the pine nuts in a pan or in the oven, then let cool. Combine the parsley, basil, EVOO, cheese, pine nuts, garlic and chile pepper in a food processor and pulse until smooth. Season with salt and pepper.
  • Char the bell pepper under a broiler or over a gas flame, turning occasionally. Place the pepper in a bowl, cover with plastic wrap and let cool. Peel off the charred skin, remove the seeds and slice.
  • Place the sausages in a pan with 1/2-inch of water and drizzle a little EVOO over the top. Bring to a boil over high heat, then cover with a lid and reduce the heat to medium-high. Cook until the water has evaporated, then continue to cook until the casings crisp up in the oil.
  • Meanwhile, in a second skillet over high heat, bring 2 inches of water to a boil. Salt the water and add the haricots verts. Boil for 2 to 3 minutes, then drain. Return the skillet to the heat and add a drizzle of EVOO over medium-high heat. Add the bacon and cook until browned and crisp. Add the onions and cook until tender-crisp, 3 to 4 minutes more. Add the haricots verts and toss to combine. Season with salt and pepper.
  • Heat a griddle over medium-high heat. Spread the bread with a thin layer of butter on one side. Toast each piece, buttered-side down, then flip and toast the other side. Remove the bread and slather the grilled buttered tops with some of the pesto.
  • Rub the griddle with a bit of butter and cook the eggs over easy.
  • Arrange a few slices of roasted pepper on each piece of pesto toast and top with an egg. Serve with the sausages and haricots verts.

1 ½ cups caster sugar
1 ¼ cups cocoa powder
1 ⅓ cups butter
5 eggs
1 ½ teaspoons baking powder
1 teaspoon vanilla extract
1 ⅛ cups milk chocolate
9 creme eggs
1 bundt cake tin

Steps:

  • Add the flour, caster sugar, cocoa powder, butter, eggs, baking powder and vanilla extract to a large bowl and whisk until smooth and thoroughly mixed.
  • Transfer mixture to the bundt cake tin, smooth out then place 6 creme eggs upright around the circle. Make sure they don't touch the bottom but are sunken in.
  • Cover the creme eggs with the cake mix, then bake for 35 minutes at 180°C (350°F). Cool for 20 minutes.
  • Remove cake from tin carefully, then pour melted chocolate over the top, covering completely.
  • Cut 3-4 creme eggs in half and decorate over the top - the messier the better!
  • Enjoy!

½ teaspoon dried parsley
¼ teaspoon garlic powder
1 teaspoon dijon mustard
1 large egg yolk
3 tablespoons mayonnaise
2 teaspoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon kosher salt
1 pinch black pepper
1 pinch cayenne pepper, plus more for garnish, optional
2 cans crab meat, drained and picked for shells
¾ cup panko breadcrumbs
½ cup all purpose flour, for dusting
¼ cup canola oil
4 large eggs
1 tablespoon white wine vinegar
1 large egg yolk
2 teaspoons lemon juice
¼ teaspoon kosher salt
1 stick unsalted butter, melted

Steps:

  • Make the crab cakes: In a large bowl, whisk together the shallot, parsley, garlic powder, Dijon mustard, egg yolk, mayonnaise, lemon juice, and lemon zest. salt, pepper and cayenne, if using. Add the crabmeat and fold to combine. Add the panko and mix until just combined. Cover the bowl with plastic wrap and let sit in the fridge for 1 hour.
  • Shape the crab mixture into 4 equal patties. Dust the cakes with the flour and shake off any excess.
  • Heat a large skillet over medium heat. Add the canola oil, then fry the crab cakes until golden and crisp, 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
  • Poach the eggs: Bring a large pot of water to a simmer over medium heat. Add the vinegar.
  • Crack 1 egg into a small bowl. With a spoon, stir the water in a clockwise direction to create a whirlpool. Carefully drop the egg into the center of the whirlpool. Cover the pot and cook for 3-5 minutes, or until egg white is set and yolk is still runny. Remove the egg from the pot with a slotted spoon and transfer to a container of cold water to stop the cooking process. Repeat with the remaining eggs.
  • Make the hollandaise: Add the egg yolk, lemon juice, and salt to a tall glass or container. Use an immersion blender to pulse a few times to blend together. With the machine running, slowly drizzle in the melted butter. Continue to blend until the mixture thickens and lightens in color.
  • Top each crab cake with a poached egg and drizzle with the hollandaise sauce. Garnish with cayenne, if desired.
  • Enjoy!
