EGG FRIED RICE
Egg Fried Rice is an easy Chinese fried rice recipe that you can make at home. Egg Fried Rice is also a vegetarian dish and quick and easy to make at home!

- Use a fork to fluff up the rice and break it apart. If you're using freshly cooked rice, let it stand on the counter uncovered until it stops steaming before fluffing it. If you decide to refrigerate the rice overnight in advance of preparing this recipe, it will clump up; you can then use your hands to break up the cold rice clumps into individual grains.
- Beat 3 eggs in one bowl. Beat the other 2 eggs in another bowl, along with 2 tablespoons water, the paprika, and the turmeric. Set these two bowls aside.
- Heat a wok over medium high heat, and add 2 tablespoons oil. Add the 3 beaten eggs (without the spices), and scramble them. Remove them from the wok and set aside.
- Heat wok over high heat, and add the last tablespoon oil. Add the diced onion and bell pepper. Stir-fry for 1-2 minutes. Next, add the rice and stir-fry for 2 minutes, using a scooping motion to heat the rice uniformly. Use your wok spatula to flatten out and break up any rice clumps. Next, pour the uncooked egg and spice mixture over the rice, and stir-fry for about 1 minute, until all of the rice grains are coated in egg.
- Add the peas and stir fry continuously for another minute. Next spread the salt, sugar, and black pepper over the rice and mix. You should now see some steam coming off the rice, which means it is heated through.
- If the rice looks a little dry, feel free to sprinkle in some water or chicken stock. Adding some liquid directly to any remaining clumps of rice will also help to break them up. Mix in the scrambled eggs and scallions and serve!

Steps:
- In a bowl, combine the rice, water, soy sauce, sesame oil, and bacon. Stir, then microwave, covered, for about 6-8 minutes until the rice is fully cooked.
- Mix the frozen peas and carrots into the rice.
- In a microwaveable mug, beat the eggs with the salt.
- Microwave the eggs and the rice again for about 1-2 minutes, until the eggs are fully cooked.
- Break up the egg into small bits, then mix it in with the rice.
- Garnish with scallions, then serve!

FRIED RICE IN A MUG

- Place the rice into a large mug. Lay vegetables on top. Cover the mug with cling film. Using a knife, puncture one or two small holes through the film. This step is important! You don't want to scald yourself. Microwave on high for 1 minute 15 seconds.
- In the meantime, beat the egg and mix in the seasonings. Pour the egg mixture into the mug, and stir with the vegetables and rice.
- Cover the mug with cling film again, and microwave for 1 minute 15 seconds to 1 minute 30 seconds. Take the mug out of the microwave, and give everything a good stir. Let the fried rice stand for a minute to finish cooking. Use a fork to fluff up the rice and serve.

FRIED RICE WITH EGG
It's simple to change this dish by adding two cups of cooked diced shrimp or chicken instead of egg, says Wilson. - At least 1 day before you plan to make the fried rice, place the rinsed rice in a heavy, medium-sized saucepan. Add 2 cups of cold water and salt, to taste. Bring to a boil over high heat. Cover, and cook at a gentle boil until the water has cooked down to the level of the rice. With a spoon (not a fork), stir the rice well. Cover, and reduce the heat to low. Continue to cook for about 15 minutes, or until the rice is tender. Fluff with a fork. Cool to room temperature before covering and refrigerating for 24 hours.
- Break up any clumps of the cold rice with your fingers and set aside. In a small bowl, stir together the oyster sauce and soy sauce and set aside.
- Coat a large, nonstick skillet with nonstick vegetable spray and set over medium-high heat. When the skillet is hot, add the eggs, swirling them around to make sure they coat the whole bottom of the pan. Cook, without stirring, and adjusting the heat as necessary, until the eggs are firm and cooked through but not yet starting to brown, lifting the skillet and tilting it so that the eggs cook evenly. Slide the eggs onto a plate and when they have cooled, cut into small pieces and set aside.
- Return the skillet to the burner and heat the oil over high heat. When it is hot, add the peas and scallions, and cook, stirring constantly, until the scallions are limp, about 1 minute. Stir in the rice, sauce mixture, eggs and roast pork until well mixed. Continue to cook, stirring, until the rice is heated through, 1 to 2 minutes. Plate and drizzle with sesame oil, to taste.

- Place a cup of rice in a mug. You want to make sure to use a fairly large mug so that you have room to lay some vegetables on top. Top with half of the vegetables, or enough to fill the mug to the top. Cover with microwave-safe plastic wrap. Puncture a few holes in the plastic wrap with a chopstick or a fork. This helps with ventilation.
- Turn the power setting of your microwave to 8/10 and set timer to 1 minute. You want to microwave the rice on high, but not at the highest setting.
- While rice is cooking, whisk 1 egg, 1 tablespoon tamari, 1/2 teaspoon sesame oil (if using), 1/2 teaspoon granulated garlic, 1/4 teaspoon five-spice powder, and a small pinch of salt together. Take the mug out of the microwave, remove plastic wrap, and pour in egg mixture. Use a fork or spoon to give everything a few stirs. Cover rice with plastic wrap again, and microwave rice at an 8/10 power setting for 1 minute 15 to 1 minute 30 seconds. Mine was closer to 1 minute 30 seconds. Let rice stand for a minute before eating.
- Using a fork or a spoon, fluff up the rice by stirring the contents several times. The egg and rice probably started caking up at the bottom of the mug, so you want to loosen it all up. This is a VERY important step, so don’t skip it!
