7 egg whites
1 teaspoon cinnamon
1 teaspoon vanilla powder
150 grams (2/3 cup) granulated sugar
150 grams (2/3 cup) granulated sugar to caramelize
50 ml (1/4 cup) water

Steps:

  • In a pudding mold (16 x 10 centimeters (6 1/3 x 4 inches)) place the sugar and the water. Leave to caramelize over low heat until obtain a brownish color. Turn off the heat and let cool slightly.
  • With an electric mixer beat the egg whites with the sugar until obtain a homogeneous mixture. Then, wrap the cinnamon and the vanilla powder with the help of a spoon.
  • Pour the mixture in the pudding mold and bring to preheated oven at 180°C (350ºF) about 20 minutes.
  • Remove from oven, let cool completely, unmold onto a plate and serve garnished with cinnamon.

3 tablespoons cornstarch
2 tablespoons all-purpose flour
1 cinnamon stick
¼ cup raisins
1 tablespoon vanilla extract
1 tablespoon butter
2 teaspoons ground cinnamon

Steps:

  • Blend milk, egg yolks, sugar, cornstarch, and flour together in a blender until smooth. Pour milk mixture into a large pot over medium heat; add cinnamon stick and stir with a large wooden spoon. Stir raisins, vanilla extract, and butter into milk mixture; whisk mixture until thickened and smooth, 10 to 15 minutes.
  • Ladle pudding into bowls and top with ground cinnamon.

  • In a saucepan, combine the sugar, corn starch and salt. Add milk and cook over medium heat, stirring constantly until mixture thickens. Add vanilla and continue to cook for 2 to 3 minutes.
  • Pour into individual molds rinsed with cold water; chill until firm and unmold.
