Moroccan Cold Beet Salad With Vinaigrette image

Fresh beets are naturally sweet, very healthy, and a colorful addition to the table. Enjoy them in this easy salad with a lemon vinaigrette.

2 pounds red beetroots
2 tablespoons fresh parsley (chopped)
2 1/2 tablespoons lemon juice
2 tablespoons vegetable oil
Optional: salt (to taste)
Optional: pepper (to taste)
Optional: red onion (minced or slivered, to taste)

Steps:

  • Gather the ingredients.
  • Rinse the beetroots. Place in a pot or pressure cooker and cover with cold water. Boil or pressure cook the beets until tender. Test by piercing the beet with a sharp knife; if it can be inserted into the center, the beet is cooked. This can take up to an hour and a half when boiling, and up to 40 minutes when pressure cooking-how long depends on how large the beets are. If the beets you're cooking are different sizes, simply check the cooking at intervals and remove the beets one by one as they're done, drain the beets, rinse under cold running water and slide the skins off while the beets are still warm.
  • Allow the beets to cool.
  • Cut the beets into 1/4-inch to 1/2-inch slices of uniform thickness, and then cut each slice into uniformly sized cubes.
  • Transfer the cubed beets to a large bowl and combine with the remaining ingredients, seasoning to taste with salt and pepper. Cover tightly and refrigerate at least an hour or overnight.
  • Prior to serving, taste the salad and adjust the seasoning if desired. The salad may be garnished with freshly slivered onion or a little more parsley.

A beetroot salad to brighten up any barbeque! It can be made ahead too and dressed at the last minute. Serve alongside the Biker burger for a real feast.

Number Of Ingredients 12

2 medium beetroot
dash olive oil, for drizzling
20g/1oz blanched almonds
½ tsp cumin seeds
1 red eating apple, cut into 2cm/1in cubes
1 green eating apple, cut into 2cm/1in cubes
½ small red onion, sliced
handful fresh herbs
salt and freshly ground black pepper
150g/5½oz plain yoghurt
1 lime, zest and juice
2 tsp honey

Steps:

  • Pre-heat the oven to 200C/180C Fan/Gas 6.
  • Line a baking tray with kitchen foil and place the beetroots in the middle. Season with salt and pepper and drizzle with oil. Wrap the foil up around the beetroots, seal and bake for 1 hour.
  • Place a small frying pan over a low heat and toast the nuts and cumin seeds for 2 minutes. Remove from the heat and allow to cool in the pan.
  • Peel and cut the beetroot into 2cm/1in cubes and place in a large, glass bowl. Stir in the apple, nuts, seeds and herbs.
  • To make the dressing, mix the ingredients together in a bowl. Just before serving, dress the salad and mix well.

I was looking for a way to use raw beets and found a recipe online. I changed it a bit to use ingredients that I grow and use. It's so yummy and is so nutritious because the nutrition isn't cooked out of the beets. Everyone that has tried it, likes it. It's better if let set for a few hours but doesn't have to be. Serve for a cold lunch with boiled eggs on a bed of lettuce.

200g bag baby spinach leaves
500g cooked beetroot
2 x 200g packs feta cheese, crumbled
bunch mint leaves, roughly chopped
bunch spring onions, finely sliced
2 long red chillies, halved, deseeded and finely sliced
5 tbsp rapeseed oil
5 tbsp honey
5 tbsp lemon juice
1 tbsp Dijon mustard

Steps:

  • Scatter the spinach leaves onto a large platter. Slice the beetroot into wedges and arrange on top of the spinach. Scatter over the feta, mint, spring onions and chillies.
  • To make the dressing, put the oil, honey, lemon juice and mustard in a glass jar with a lid. Season and shake well. When ready to serve, pour the dressing over the salad and toss lightly to combine.
