- Beat eggnog, whipped topping mix and nutmeg on high speed until soft peaks form. Combine remaining ingredients; fold into eggnog mixture. Refrigerate, covered, until chilled. Gently stir before serving.

Steps:
- In 2-quart saucepan, heat eggnog and half-and-half over medium-low heat, stirring occasionally, until hot.
- In medium bowl, beat egg yolks, cornstarch and rum extract with wire whisk. Stir a small amount of the hot eggnog mixture into egg mixture, then gradually stir egg mixture back into eggnog mixture in saucepan. Continue cooking over medium-low heat, stirring constantly, until mixture just begins to boil and thicken. Immediately remove from heat.
- Pour into 6 small serving dishes. Sprinkle with nutmeg. Refrigerate at least 8 hours until well chilled and set.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- Beat the butter, sugar, and eggs together in a mixing bowl. Stir in the flour, baking powder, and sat, alternating with the eggnog, just until the dry ingredients are moistened. Fold in the pecans, raisins, and cherries until evenly blended. Spoon the batter into the prepared pan.
- Bake in preheated oven until top is golden and springs back when lightly touched, about 70 minutes. Cool in pan 10 minutes, then turn out onto a wire rack to cool completely.

EGGNOG BREAD WITH FRUIT
I was looking for a way to use up the last of my Christmas Egg Nog. The original called for 1/2 c candied cherries, 1/2 c raisins, and 1/2 c nuts, but I used figs and apricots instead. I also used a little rum (just make sure rum, brandy, or extract, and nog together equals 1 cup). It is sort of like a pound cake--without the pound! Mix a little eggnog with some powdered sugar and drizzle over it for a more elegant presentation and flavor.

Steps:
- Combine flour, baking powder, and salt; set aside.
- Beat eggs, sugar, and butter in large mixing bowl.
- While continuing beating, add flour mixture alternately with egg nog into the mixing bowl, beginning and ending with flour mixture. Beat until moistened.
- Stir remaining ingredients into mixing bowl.
- Grease or spray a 8 1/2 x 4 1/2 x 3 inch loaf pan or 3 mini pans. Pour batter into prepared pan(s).
- Bake at 350 for 70 minutes (mini pans will take 40 to 45 minutes) or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove to wire rack and cool.

EGGNOG CREAM CHEESE DIP W/FRESH FRUIT WREATH
I know I'm late for the X-Mas season past & WAY early for the next, but I just found this recipe stuck inside a cookbook & want to make sure it doesn't disappear into oblivion again. It's on a 3-pg fold-out entitled "Holiday Recipes", shows the Braum's trademark name & a lovely pic of this recipe is featured on the cover pg - a truly stunning presentation! :-)

- Combine all ingredients in a mixing bowl & beat till smooth. (I love my immersion blender & it would be great for this)
- To Serve: Place dip in a serving bowl on a rd serving plate or platter & arrange fresh fruits around it to create a decorative, edible wreath.
- HINT: A note says to "Keep any cut fruit fresh by sprinkling w/lemon juice.", but I have found it more efficient to brush the cut surfaces of fresh fruit (such as apples or pears) using my pastry brush -- or -- put lemon juice in a sml plastic bag, add the fruit slices/wedges, shake to cover the cut surfaces w/juice & store in a container w/a snap-on lid till ready to serve.

- Heat oven to 400°F. In 2 1/2-quart saucepan, heat water and butter to rolling boil. Stir in flour. Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, all at once; continue beating until smooth.
- Drop dough by scant 1/4 cupfuls about 3 inches apart onto ungreased cookie sheet. Bake 35 to 40 minutes or until puffed and golden. Cool away from draft.
- Meanwhile, in large bowl, beat all Eggnog Cream ingredients except cream with electric mixer on low speed 1 to 2 minutes or until smooth. Add cream. Beat on high speed 1 to 2 minutes or until soft peaks form.
- Cut off tops of cooled puffs; pull out any soft dough. Fill puffs with Eggnog Cream; replace tops. Sprinkle with powdered sugar. Serve immediately. Store covered in refrigerator.

- Line an 8 or 9-inch square pan with foil and let it hang over the sides. Spray with non stick spray.
- In a saucepan combine sugar, butter and eggnog. Bring to a boil, stirring constantly. Continue boiling 8 to 10 minutes over medium heat or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching. Remove from heat.
- Using a wooden spoon, work quickly to stir in chopped white chocolate and nutmeg until chocolate is melted and smooth. Stir in marshmallow creme. Beat until well blended and then pour into prepared pan. Let stand at room temperature until cooled. Refrigerate if you'd like to speed up the process.
- When completely cool, cut into squares. Store in a covered container
