EGGY CHEESE CRUMPETS

Steps:
- Heat the grill. Beat the eggs and milk together in a wide dish. Submerge the crumpets in the egg mixture, turning them once, then set aside for a few minutes.
- Arrange the tomatoes cut-side up on a baking tray and grill for a few minutes, then cover the tray with foil to keep the tomatoes warm.
- Heat the oil in a frying pan and cook the crumpets for a few minutes on each side until the egg has set - you may have to do this in batches. Transfer them to a baking tray as you go. Once all the crumpets are cooked, top with the cheese and grill for 1-2 mins until the cheese is bubbling and golden. Serve with the tomatoes and avocado slices.

EGGY CHEESY CONFUSION CASSEROLE
This is an eggy, cheesy breakfast casserole with an identity crisis. Is it Italian, Greek, Tex-Mex? Who cares. It tastes great. It has the standard ingredients of eggs, cheese, and hash brown potatoes seen in most breakfast casseroles. However, it is a fusion of different spices from cuisines around the world which are added to the traditional American breakfast casserole. It can be made ahead, refrigerated overnight, and then put in the oven the next morning. Add bacon, sausage, or ham for a hearty breakfast dish.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 2-quart baking dish with cooking spray.
- Spread potatoes into the prepared baking dish; sprinkle with 1/2 teaspoon black pepper.
- Mix eggs, Italian cheese blend, onion, pico de gallo, 1/2 teaspoon black pepper, Greek seasoning, and cayenne pepper together in a bowl; pour over potatoes.
- Bake casserole in the preheated oven until lightly browned and eggs are set, about 40 minutes.

My local grocery store quit selling crumpets, so I decided to try my hand at making my own! These are a nice alternative to English muffins. To serve, toast the crumpets whole and spread with butter, honey, jelly, or your favorite topping.

Steps:
- Dissolve yeast and sugar in 1 cup of warm water. Let stand until foamy, about 10 minutes.
- Meanwhile, mix flour, milk powder, and salt together in a large bowl. Make a well in the middle. Add the yeast mixture and remaining 1 3/4 cups warm water. Mix well with a wooden spoon until dough is the consistency of cake or waffle batter. Cover with plastic wrap and let stand in a warm spot until bubbly, about 1 hour.
- Combine 2 tablespoons water and baking soda in a small bowl. Mix into the batter. Let stand for 15 minutes.
- Heat a cast iron griddle or nonstick pan over medium heat. Lightly grease the griddle and inside of the crumpet rings with cooking spray. Arrange the rings on the griddle.
- Fill crumpet rings 2/3 of the way with batter. Cook until tops are covered in bubbles and starting to look dry, 5 to 8 minutes. Carefully lift up crumpet rings, flip the crumpets, and cook until second side is lightly browned, 1 to 2 minutes. Turn heat down if crumpet is overly dark or still raw in the middle.

CRUMPETS WITH CHEESE & BACON
Nice way to enjoy English crumpets. If you're from a country where they're not widely available do yourself a favour and make some from scratch, there are plenty of recipes on RecipeZaar for them. This recipe really works a lot better using natural cheese rather than processed cheese.

Steps:
- Lightly cook bacon in a non-stick frying pan and set aside.
- Sprinkle cheese evenly over each crumpet followed by pepper and paprika if you are using them.
- Tear up bacon and place over the top, discarding fat and the rind etc.
- Grill for around 5-10 minutes until the cheese has melted into the crumpet.
