EGYPTIAN BESSARA



Egyptian Bessara image

Rooted in Egyptian history, bessara is a refreshing, creamy dip - green from the color of fresh herbs and fava beans - layered with the flavors of fresh garlic, McCormick Gourmet™ Organic Ground Coriander and McCormick® Ground Cumin, and then topped with flavorful garnish of crispy onions and toasted almonds.

1 pound (16 oz) frozen fava beans (in pods)
6 tbsps plus 4 teaspoons olive oil divided
1 cup thinly sliced yellow onion
3 tbsps chopped fresh garlic
1 cup chopped green onion
1 1/2 tsps organic coriander ground
1 tsp McCormick® Cumin, Ground
1 cup chopped fresh cilantro
1 cup chopped fresh parsley
1/2 cup chopped fresh dill
3/4 cup water
1 tbsp fresh lemon juice
1 1/2 tsps salt
1/4 cup sliced almonds toasted

Steps:

  • Bring a large pot of lightly salted water to boil. Add fava beans; simmer 2 minutes. Drain well. Cool slightly. Remove beans from pods, discarding pods. Set aside.
  • Meanwhile, heat 2 tablespoons of the olive oil in medium skillet on medium heat. Add onion; cook and stir until golden brown and crispy. Keep warm until ready to serve.
  • Heat 4 tablespoons of the remaining olive oil in large clean skillet on high heat until shimmering. Add garlic, green onion, coriander and cumin; cook and stir until softened, about 2 minutes. Add fava beans; cook and stir just until heated through. Remove from heat. Cool completely.
  • Transfer fava bean mixture to blender container. Add cilantro, parsley, dill, water, lemon juice and salt. Cover. Blend on high speed until smooth. Transfer to serving bowl. Drizzle with remaining 4 teaspoons olive oil. Top with crispy onions and toasted almonds. Serve with toasted pita wedges. (Makes about 4 cups.)

This is one of my treasured recipes, it is wonderful on cold days. This recipe originates from somewhere in North Africa.

2 tablespoons vegetable oil
4 cloves garlic, crushed
6 cups water
⅓ cup olive oil
3 cups dry green split peas
3 sprigs fresh parsley
1 dried red chile pepper
2 teaspoons paprika
1 teaspoon cumin
1 pinch salt
1 pinch black pepper

Steps:

  • Fry garlic in the vegetable oil in a large pot over low heat until lightly browned. Pour in water and olive oil; stir in split peas, parsley, chili pepper, paprika, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, and simmer for about 55 minutes, stirring occasionally so that the peas do not stick to the bottom of the pot. When the peas are tender, mash them with a wooden spoon until smooth; stir in additional water to reach desired consistency.

Number Of Ingredients 10

1 pound skinless, split dried fava beans
Salt to taste
5 garlic cloves, chopped
1/4 to 1/2 cup olive oil
1/2 teaspoon paprika
1 1/2 to 2 teaspoons cumin
1/4 teaspoon turmeric
Pinch of cayenne pepper
Juice of 2 lemons
1 large bunch coriander chopped, about 1/2 cup

Steps:

  • Soak the beans in water for 2 hours, drain and put in a pot with 2 quarts of cold water. Bring to a boil, skim and simmer, covered, for 2 hours, until the beans are very soft. Add the salt and mash the beans by hand or, for a smoother texture, puree in a blender and return to the pot.
  • Fry the garlic in 2 tablespoons of the olive oil until golden, about 3 minutes. Add the paprika, cumin, turmeric and cayenne. Add to the soup and simmer for 30 minutes longer, adding water if the soup becomes too thick. Just before serving, stir in the lemon juice and the coriander. Garnish with a drizzle of olive oil, if desired.
