EKADASI SWEET POTATOES



Ekadasi Sweet Potatoes image

These sweet potatoes take forever and a day to cook, but they are worth it. I am sorry that I do not have any real measurements. I created this recipie myself so I just have approximate measurements.

1 lb sweet potato, cut into 1/4 inch discs
blackstrap molasses
honey
multicolored salt & pepper
oil (olive oil is the healthiest choice)

Steps:

  • Place a layer of the sweet potatoes in a pie pan, and pour a generous amount of honey, molassas, and some salt and pepper.
  • Keep doing this until you fill the pan to the top.
  • Cover in foil, shiny side down and bake for 40-60 minutes turning with tongs every 10 minuts or so.
  • Remove the foil and bake another 15-20 minutes.
  • Serve with something savory.

Another great vegetable to grill. You can season it really however you wish but I have suggestions below. Quantity and measurements are optional and to taste (added for submission).

1 sweet potato (as many as you like)
1 teaspoon butter
1/16 teaspoon paprika or 1 tablespoon brown sugar

Steps:

  • Preheat the grill to a medium temperature. If using a charcoal grill, wait to coals are about white.
  • Place the sweet potatoes on the highest rack.
  • Turn a quarter turn every 10 minutes.
  • Check for tenderness after 40 minutes. (If there are still hard spots, continue to turn every 5 minutes until done).
  • Serve with butter and a little paprika or with butter and brown sugar.
