1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
10 ounces diced tomatoes and green chilies
1 medium onion, chopped
1 1/2 teaspoons chili powder
1/4 teaspoon pepper
corn tortilla, cut in thin strips
3 cups cooked chicken, cubed
2 cups cheddar cheese, shredded
sliced tomatoes (optional)

Steps:

  • Combine soups, undrained tomatoes and next 3 ingredients, set aside.
  • Sprinkle 1/3 of the tortilla strips over bottom of ungreased 3qt baking dish.
  • Layer 1/2 of the chicken, spoon 1/2 of the soup mixture on top.
  • Sprinkle 1/2 the cheese and another 1/3 of the tortilla strips over soup.
  • Layer with remaining chicken, soup and tortillas.
  • Bake covered at 350 for 45 minutes until bubbly and center is hot.
  • Uncover, sprinkle with remaining cheese. Bake 3-4 minutes longer until cheese is melted.
  • Top with sliced tomatoes. Let stand 10 minutes before serving.

4 boneless skinless chicken breast halves
1/2 cup ranch salad dressing
1 1/4 cups crushed nacho cheese flavored tortilla chips (or more as needed)

Steps:

  • Preheat oven to 350º.
  • Brease a large cookie sheet.
  • Pound chicken breasts between 2 sheets of waxed paper to about 1/4 inch thick.
  • Dip chicken into salad dressing to coat.
  • Then dip into crushed chips, making sure chicken is well-coated.
  • Place on cookie sheet.
  • Bake 30 minutes.

1 small onion, chopped
1 small green pepper, chopped
1 lb. ground chicken
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
1-1/2 cups water
1 cup instant brown rice, uncooked
1 cup TACO BELL® Refried Beans
6 flour tortillas (10 inch), warmed
1 cup KRAFT Mexican Style Finely Shredded Cheddar Pepper Jack Cheese
6 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
1 cup shredded lettuce
1 tomato, chopped

Steps:

  • Heat oil in large skillet on medium heat. Add onions and peppers; cook 5 min. or until crisp-tender. Add chicken; cook 5 min. or until done, stirring frequently. Add seasoning mix and water; bring to boil. Stir in rice; cover. Cook on medium-low heat 5 min. Let stand 5 min.
  • Spoon beans down centers of tortillas; top with chicken mixture and cheese. Fold in opposite sides of each tortilla, then roll up burrito-style.
  • Serve topped with sour cream, lettuce and tomatoes.
