POTATO SALAD WITH WARM BACON DRESSING



Potato Salad with Warm Bacon Dressing image

A quick and easy warm bacon dressing transforms potato salad into the ultimate flavorful side dish perfect for any size crowd.

Number Of Ingredients 7

2 pounds small red potatoes, unpeeled
8 slices uncooked bacon, chopped
1 1/2 cups diced yellow onions
1/2 cup apple cider vinegar
1 1/2 Tablespoons whole grain mustard
1/4 cup sugar
2 Tablespoons chopped fresh chives

Steps:

  • Boil the potatoes in a large pot of water until they are fork-tender, about 15 minutes. Drain the potatoes then allow them to cool completely. Cut the potatoes into quarters then add them to a large bowl.
  • Add the bacon to a large sauté pan set over medium heat. Cook the bacon until it is crispy and all of the fat has rendered off. Using a slotted spoon, transfer the bacon to a plate, leaving 3 tablespoons of the drippings in the pan.
  • Add the diced onions to the pan and cook, stirring, until the onions are translucent. Stir in the apple cider vinegar, whole grain mustard, sugar, 1 teaspoon salt, 1/2 teaspoon pepper and 1/2 cup water. Simmer the mixture for 3 minutes until it has reduced to 1 cup.
  • Pour the dressing over the potatoes, add the cooked bacon and toss to combine. Stir in the chives and serve warm.

8 slices bacon
1 ½ cups white sugar
3 teaspoons cornstarch
½ teaspoon salt
¼ cup water
½ cup white vinegar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
  • In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

8 slices bacon, (diced)
1/4 cup finely diced Vidalia onion, (or other sweet onion)
3/4 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 cup water
1/2 cup apple cider vinegar
1/4 teaspoon black pepper

Steps:

  • Cook diced bacon until crisp. Remove with a slotted spoon and place on a paper towel-lined plate. Remove all but 2 tablespoons bacon grease from pan.
  • Add vidalia onion to pan and cook until softened.
  • In a medium bowl, whisk together sugar, cornstarch, and salt. Whisk in water and apple cider vinegar.
  • Pour into pan and return bacon to pan. Add pepper. Cook and whisk until thickened some, about 2 minutes. (It will tend to thicken more as it cools.)

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

½ cup sliced onion
¼ cup white wine vinegar
¼ cup water
4 teaspoons white sugar
½ teaspoon salt
8 cups leaf lettuce - rinsed, dried and torn into bite-size pieces
8 radishes, thinly sliced

Steps:

  • Place egg in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let egg stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve excess grease.
  • Add onions to skillet with reserved grease and cook until tender. Add bacon, vinegar, water, sugar and salt. Stir and bring to boil.
  • Place lettuce in a large bowl. Pour hot dressing over and toss well. Garnish with egg and radishes.

1 cup cider vinegar

1-1/2 cups sugar
1 jar (2 ounces) diced pimientos, drained
2 tablespoons Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain, reserving 2 tablespoons drippings in the skillet. Add onion and saute until tender; remove from the heat. 1/4 lb red onion, dice fine
2 cups water
1/2 cup honey
1/2 cup red wine vinegar
2 tablespoons Dijon mustard
1 1/2 tablespoons cornstarch
1 tablespoon Tabasco sauce (optional)

Steps:

  • Place the bacon grease in a saucepan over medium high heat.
  • Add the onions and saute until the onions start to blacken. While the onions are caramelizing, in a mixing bowl place the water, honey, pepper sauce, and red wine vinegar.
  • Using a wire whisk, mix the ingredients well.
  • Add the cornstarch and whisk well. After the onions have caramelized, add the Dijon mustard to the onions and stir together with a rubber spatula.
  • Add the water, vinegar, pepper sauce, honey and cornstarch to the mustard and onions and mix.
  • Continue stirring until mix thickens and comes to a boil.
  • Remove from heat and store in refrigerator until needed.
  • To reheat use a double boiler.

vegetable oil
2 teaspoons cornstarch, mixed with

  • Fry bacon until crisp.
  • Remove bacon from pan leaving fat.
  • Set bacon aside.
  • Add onion to bacon fat in pan and cook 5 minutes until onion is soft.
  • Remove onion from pan leaving fat.
  • Set onion aside with bacon.
  • Pour bacon fat into measuring cup and add enough vegetable oil to equal 1/2 cup.
  • Add fat/oil to cornstarch mixture and set aside.
  • Combine vinegar, water, sugar, salt and pepper in small saucepan and heat to a boil.
  • Add cornstarch mixture and cook until thickened about 1-2 minutes.
  • Remove from heat and add bacon and onion.
  • Serve while warm.
