POTATO SALAD WITH WARM BACON DRESSING
A quick and easy warm bacon dressing transforms potato salad into the ultimate flavorful side dish perfect for any size crowd.

Steps:
- Boil the potatoes in a large pot of water until they are fork-tender, about 15 minutes. Drain the potatoes then allow them to cool completely. Cut the potatoes into quarters then add them to a large bowl.
- Add the bacon to a large sauté pan set over medium heat. Cook the bacon until it is crispy and all of the fat has rendered off. Using a slotted spoon, transfer the bacon to a plate, leaving 3 tablespoons of the drippings in the pan.
- Add the diced onions to the pan and cook, stirring, until the onions are translucent. Stir in the apple cider vinegar, whole grain mustard, sugar, 1 teaspoon salt, 1/2 teaspoon pepper and 1/2 cup water. Simmer the mixture for 3 minutes until it has reduced to 1 cup.
- Pour the dressing over the potatoes, add the cooked bacon and toss to combine. Stir in the chives and serve warm.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
- In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

- Cook diced bacon until crisp. Remove with a slotted spoon and place on a paper towel-lined plate. Remove all but 2 tablespoons bacon grease from pan.
- Add vidalia onion to pan and cook until softened.
- In a medium bowl, whisk together sugar, cornstarch, and salt. Whisk in water and apple cider vinegar.
- Pour into pan and return bacon to pan. Add pepper. Cook and whisk until thickened some, about 2 minutes. (It will tend to thicken more as it cools.)

Steps:
- Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
- Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
- While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
- Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
- Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

- Place egg in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let egg stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

- Place the bacon grease in a saucepan over medium high heat.
- Add the onions and saute until the onions start to blacken. While the onions are caramelizing, in a mixing bowl place the water, honey, pepper sauce, and red wine vinegar.
- Using a wire whisk, mix the ingredients well.
- Add the cornstarch and whisk well. After the onions have caramelized, add the Dijon mustard to the onions and stir together with a rubber spatula.
- Add the water, vinegar, pepper sauce, honey and cornstarch to the mustard and onions and mix.
- Continue stirring until mix thickens and comes to a boil.
- Remove from heat and store in refrigerator until needed.
- To reheat use a double boiler.

- Fry bacon until crisp.
- Remove bacon from pan leaving fat.
- Set bacon aside.
- Add onion to bacon fat in pan and cook 5 minutes until onion is soft.
- Remove onion from pan leaving fat.
- Set onion aside with bacon.
- Pour bacon fat into measuring cup and add enough vegetable oil to equal 1/2 cup.
- Add fat/oil to cornstarch mixture and set aside.
- Combine vinegar, water, sugar, salt and pepper in small saucepan and heat to a boil.
- Add cornstarch mixture and cook until thickened about 1-2 minutes.
- Remove from heat and add bacon and onion.
- Serve while warm.
