Use to make a Rhubarb Elderflower Bellini.

Steps:
- Place rhubarb in the bowl of a food processor; process until smooth. Strain through a fine mesh sieve into a bowl, pressing down to remove as much juice as possible; you should have 1/2 cup plus 1 tablespoon juice. Discard solids. Stir in elderflower syrup.
ELDERBERRY SYRUP
This recipe is good for treating colds and the flu, and good on anything you would put syrup on, like waffles, pancakes, or ice cream. You may try blueberries, blackberries, or raspberries for different flavors.

Steps:
- Place elderberries, water, cinnamon stick, cloves, and ginger in a saucepan over medium heat. Bring to a boil, reduce heat to low, and simmer for 30 minutes. Use a potato masher to mash berries to release juice; strain the mixture through a fine sieve, retaining juice and discarding the pulp. Let juice cool.
- Stir in honey until thoroughly combined and transfer to a lidded jar. Keeps in refrigerator 2 to 3 months.

- Bring sugar and 2 cups water to a boil, stirring, until sugar is dissolved, about 3 minutes. Remove from heat; let cool completely.
- Meanwhile, in a bowl, combine lemon juice, zest, and elderflowers. Pour syrup over flower mixture; stir to combine. Cover and refrigerate 1 day. Strain cordial through a fine-mesh sieve; discard flowers. Cordial can be refrigerated in an airtight container up to 1 month.

- Add the lemon slices and elderflower blossoms to a large heat-safe pot or large jar with a lid that's at least 2 litres (8 cups) in size.
- In a separate pot, add the sugar, water and citric acid and let the mixture come just to a boil (make sure all the sugar has dissolved).
- Pour the sugar syrup slowly over the lemons and elderflower blossoms and stir well to combine.
- Let the mixture come to room temperature and cover with a lid (make sure the lid is airtight, so use plastic wrap if necessary).
