This recipe was created by Executive Chef Michael Callahan for the Yukon-Kuskokwim Delta Regional Hospital for our Alaska Native (Yupic Eskimo) Patients. We substitute Wild Caribou whenever available. Please feel free to share this recipe with credit given.

Number Of Ingredients 13

1 lb ground elk
3/4 lb ground pork
2 slices whole grain bread, crust removed, dried & cubed
1 egg
1 small onion, finely chopped
1 teaspoon kosher salt
1 tablespoon granulated garlic
1/4 teaspoon black pepper
4 tablespoons ketchup
2/3 cup whole milk
1/4 cup apple cider vinegar
1/2 cup dark brown sugar
1/2 cup ketchup

Steps:

  • Preheat oven to 350°F
  • Combine 1st ten ingredients, mix well and place into a loaf pan (lining the bottom of your loaf pan with bread slices will soak up excess fat.).
  • Combine the remaining ingredients and pour over the top of the meatloaf.
  • Bake for about 90 minutes or internal temperature reaches 165°.
  • Note: Game meats are notoriously low in fat. Using the ground pork will help make a moister meatloaf.

Best Ever Meatloaf with Brown Gravy image

This is very tasty and old-fashioned. Serve with mashed potatoes and gravy. Divide into two recipes.

1 ½ pounds ground beef
¾ cup fresh bread crumbs
½ cup chili sauce
1 egg
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 cup fresh sliced mushrooms
2 tablespoons minced onion
1 tablespoon butter
1 cup beef broth
2 tablespoons water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan.
  • Place loaf pan on a rack in an oven-roasting pan. Bake for 1 hour, or until done. Cook until internal temperature measures 160 degrees F (70 degrees C); the meat should be well done, with no trace of pink. Remove from oven, and allow to rest for 10 minutes before serving.
  • While the meatloaf is resting, prepare the gravy. In a medium saucepan, melt butter or margarine over medium heat. Add mushrooms and onions; cook and stir until tender. Add beef broth; simmer for 5 minutes, stirring occasionally. Combine water and cornstarch in a small cup; stir into broth. Cook and stir for 1 minute, or until thickened.

Try something different with your meatloaf... Make elk meatloaf with olives, onions, horseradish and a little parmesan cheese served up with a side of mashed potatoes and gravy.

1 1/2 lbs ground elk
3 7/8 ounces black olives
1/2 cup parmesan cheese
1 cup Italian seasoned breadcrumbs
1/2 cup onion white
2 tablespoons horseradish cream
1 egg
1 teaspoon garlic powder
salt and pepper

Steps:

  • In a large bowl combine ground elk, olives, breadcrumbs, parmesan cheese, onion, horseradish and seasonings. Form into a loaf and place into a baking dish.
  • Cover with tinfoil and bake at 375 degrees for 40-45 minutes.
  • Remove foil and continue cooking for approximately 10-15 minutes or until your meat is thoroughly cooked.
  • Remove from over, let rest for 5 minutes and serve with your favorite mashed potatoes and brown gravy.
