This recipe was created by Executive Chef Michael Callahan for the Yukon-Kuskokwim Delta Regional Hospital for our Alaska Native (Yupic Eskimo) Patients. We substitute Wild Caribou whenever available. Please feel free to share this recipe with credit given.

Number Of Ingredients 13

1 lb ground elk
3/4 lb ground pork
2 slices whole grain bread, crust removed, dried & cubed
1 egg
1 small onion, finely chopped
1 teaspoon kosher salt
1 tablespoon granulated garlic
1/4 teaspoon black pepper
4 tablespoons ketchup
2/3 cup whole milk
1/4 cup apple cider vinegar
1/2 cup dark brown sugar
1/2 cup ketchup

Steps:

  • Preheat oven to 350°F
  • Combine 1st ten ingredients, mix well and place into a loaf pan (lining the bottom of your loaf pan with bread slices will soak up excess fat.).
  • Combine the remaining ingredients and pour over the top of the meatloaf.
  • Bake for about 90 minutes or internal temperature reaches 165°.
  • Note: Game meats are notoriously low in fat. Using the ground pork will help make a moister meatloaf.

2 lbs ground elk
1 onion (diced)
4 cloves garlic
1 cup quick oatmeal
1 cup milk
2 teaspoons salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 Tablespoon mustard
2 Tablespoons Worchestershire sauce
1/4 cup ketchup
Sauce:
1 cup ketchup
2 Tablespoons apple cider vinegar (or white vinegar)
1/4 cup onion, diced
2 Tablespoons Worchestershire sauce
3 Tablespoons brown sugar

Steps:

  • Preheat oven to 350.
  • Place oatmeal, onion, garlic, milk, salt, pepper, cayenne, mustard, ketchup, worchestershire sauce, and ground elk in a large mixing bowl. Mix gently with hands or a spoon.
  • Form into a loaf and place in a greased pan. (I use a 9x13)
  • For the sauce: Mix 1 cup ketchup, 3 T brown sugar, 2 T vinegar, 2 T worchestershire, and 1/4 cup onion together. Spread over th e meatloaf and bake uncovered for 1 hour.

THE BROWNSTONE'S ELK MEATLOAF

Kamloops, BC is home to Brownstone, and their elk meatloaf wrapped in bacon is nothing like your usual meatloaf that you may be used to eating. Slowly cooked ground meats and vegetables come together in one delicious bite.

Number Of Ingredients 11

1 small carrot, shredded
1 small onion, chopped
1 tsp (5 mL) garlic, minced
¼ cup (59 mL) white wine
1 lb(s) (454 g) elk, ground
½ lb(s) (227 g) pork, ground
1 cup (225 mL) panko
2 eggs
3 Tbsp (45 mL) Worcestershire sauce
salt and pepper
12 strip bacon

Steps:

  • First, grind the carrot and onion to medium size. Add vegetable mix to a large frying pan and sauté on medium-high heat.
  • Next, add the garlic and sweat.
  • Deglaze the frying pan with white wine and cook down all excess liquid. Set aside for next step.
  • In a large bowl, combine the ground elk and ground pork.
  • Next, refrigerate ground mixed meat for roughly an hour, as well as a separate empty mixing bowl.
  • Then, add cooled meat and reserved vegetable mixture to the empty refrigerated bowl. Add the panko, eggs and Worcestershire. Move the cooled bowl to a table-top mixer and mix at medium speed.
  • Increase the speed to high and mix until the meat has become a cohesive mass.
  • To check desired seasoning, fry a small piece of the mixture and sample.
  • If necessary, add desired amounts of salt, pepper and/or Worcestershire.
  • Cut and lay flat two pieces of plastic wrap on a clean work surface. Then, place bacon in a long-shingled pattern.
  • Press the meatloaf mixture into a log and place on top of shingled bacon. Next, roll it all up.
  • Place the meatloaf-bacon log on a baking pan, seam side down (end of the bacon).
  • For approximately 1 hour, bake in an oven at 375ºF until the bacon is crispy and the meatloaf feels firm to the touch.
  • Once done, remove meatloaf from the oven and let rest for 20-30 minutes.

2 teaspoons plus 1/4 teaspoon freshly ground black pepper
4 slices bacon, cut in half
2 tablespoons white or red wine vinegar
1/2 cup canned tomatoes, chopped or crushed
2 tablespoons butter
1 large onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 teaspoons minced garlic, plus 1 teaspoon
1 teaspoon chopped thyme leaves
1 teaspoon chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 teaspoons Dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 tablespoons plus 1 teaspoon Worcestershire sauce
1/2 cup Heavy cream
2/3 cup Breadcrumbs
1 pound ground chuck
1/2 pound pork sausage (such as breakfast sausage)
1/2 pound ground veal
1 1/2 teaspoons salt

Steps:

  • In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
  • Preheat the oven to 350 degrees F.
  • When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.
  • In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
  • Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.

1 egg
1 cup sour cream
2 tablespoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
½ cup grated Parmesan cheese
1 ½ cups Italian-style dried bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the beef, egg, sour cream and Worcestershire sauce. Mix in soup mix, cheese, and bread crumbs. Form mixture into a loaf, and place in a 9x5 inch loaf pan. Cover with foil.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes. Remove foil and continue baking for another 10 to 15 minutes. Let stand 5 to 10 minutes before serving for easier slicing.

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
  • Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
  • Slice and serve.
  • Enjoy!
