- Bake plain frozen fries and toss with salt, chili powder, lime zest and grated Cotija cheese, then transfer to a serving dish and top with mayonnaise thinned with a little water, chopped cilantro and more cheese. Serve with lime wedges.
FRENCH FRIES

- Peel the potatoes, and cut them lengthwise into strips 1/4-inch thick. In a bowl cover the potatoes with cold water and let them soak, chilled, overnight.
- In a deep fryer or heavy saucepan preheat the oil to 325 F-. Drain the potatoes and pat them dry. Sprinkle the potatoes with cornstarch shaking off the excess. Add the potatoes to the oil and fry them for 3 to 5 minutes, or until they are soft and just beginning to brown. With a spider or slotted spoon transfer the potatoes to a tray lined with paper towels to drain.
- Just before serving heat the oil in the deep fryer to 395 degrees. Add the potatoes and cook for 1 minute, or until golden. Transfer to paper towels to drain, sprinkle with salt and serve.

- Prepare the potatoes and oil: In a 3-quart saucepan with a deep-fry thermometer attached, heat oil to 350 degrees F. Cut potatoes into long sticks -- about 2 inches by 1/2 inch. Lay potatoes in a single layer on paper towel. Let stand for 10 minutes until dry.
- Cook potatoes: Toss potatoes with sugar. Fry half of the potatoes in the hot oil until they begin to crisp and turn light blond -- about 2 minutes. Use a slotted spoon to remove; drain on paper towel. Repeat for the second batch and let potatoes stand for 5 minutes.
- Finish the potatoes: Raise oil temperature to 375 degrees F. Refry potatoes, in 3 batches, until golden brown -- 4 to 6 minutes. Use a slotted spoon to remove, drain on a paper towel, and sprinkle with salt.

Straight out of the freezer and better than fast food fries without the guilt of deep-frying. Feel free to use your preferred frozen French fry cut but keep in mind that steak-cut or crinkle will take a couple minutes longer.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place frozen French fries in a large bowl. Add olive oil and toss to coat. Season with salt and toss to coat again.
- Spread out French fries in the basket of the air fryer, making sure to not overcrowd, and cook for 10 minutes. Turn fries over using a spatula and continue cooking until desired crispness, 2 to 4 minutes more.
