1 pound mild bulk Italian sausage
1 tablespoon olive oil
1 medium onion, chopped
1 medium green pepper, chopped
1 large acorn squash or 6 cups butternut squash, seeded, peeled and cubed (1/2 in.)
1 large unpeeled apple, cubed (1/2 in.)
2 to 3 teaspoons curry powder
1 teaspoon salt
3 cups cooked small pasta shells
1/4 cup water

Steps:

  • In a stockpot, cook and crumble sausage over medium heat until no longer pink, 5-6 minutes; remove., In same pan, heat oil; cook and stir onion and pepper 3 minutes. Add squash; cook 5 minutes. Stir in apple, curry powder and salt until vegetables are crisp-tender, 3-4 minutes., Return sausage to pan; add pasta and water. Heat through.

1/2 kabocha squash (1 pound), seeds removed, cut into 3/4-inch wedges
7 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
1/2 head green cabbage (1 pound), cut lengthwise through core into 4 wedges
4 sweet Italian sausages (1 pound total), each pierced with a fork in a few places
1 medium red onion (8 ounces), thinly sliced into rings
Leaves from 2 sage sprigs
1 tablespoon apple-cider vinegar
1 teaspoon Dijon mustard

Steps:

  • Preheat oven to 475 degrees, with a rimmed baking sheet on center rack. Toss squash with 1 tablespoon oil; season with salt and pepper. Add 2 tablespoons oil to baking sheet, then cabbage, squash, and sausages in a single layer. Drizzle cabbage with more oil; season generously with salt and pepper. Roast 15 minutes.
  • Toss onion and sage with 1 tablespoon oil; season with salt and pepper. Flip sausages and vegetables; add onion mixture to sheet. Continue to roast until vegetables are tender and sausages are cooked, 20 minutes.
  • Stir together vinegar, mustard, remaining 3 tablespoons oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Serve sausages and vegetables with a drizzle of vinaigrette.

This simple squash and sausage stew represents my idea of the perfect summer supper. It's very comforting, relatively fast, wonderfully flavorful, and helps solve a problem that's existed since neighbors started planting gardens: what to do with all that squash! Serve it with a big slice of crusty bread for dipping into the broth.

2 teaspoons olive oil
1 pound andouille sausage, sliced
1 large onion, diced
3 cloves garlic, minced
3 cups chicken broth, or as needed
1 cup crushed tomatoes, such as San Marzano
½ cup diced jalapeno chile pepper
2 pounds assorted summer squash, such as zucchini or yellow crookneck - trimmed and cut into chunks
1 ½ pounds Yukon Gold potatoes, peeled and quartered
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
¼ cup chopped Italian parsley
2 teaspoons freshly shredded Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat; cook sausage slices until they begin to brown, 3 to 4 minutes. Add onion, reduce heat to medium, and cook until onion becomes translucent, about 5 minutes. Stir in garlic and cook until fragrant, 30 seconds to 1 minute. Add chicken broth, crushed tomatoes, and jalapeno pepper; stir to combine.
  • Bring mixture to a simmer; gently stir squash and potatoes into mixture. Reduce heat to medium-low. Season with salt, black pepper, and cayenne pepper.
  • Simmer stew, uncovered, until potatoes and squash are tender, 30 to 35 minutes. Stir in Italian parsley. Adjust levels of salt, black pepper, and cayenne pepper if needed. Serve in bowls; sprinkle with Parmesan cheese.

  • First boil the sausages and remove the skins.
  • Slice them up into chunks.
  • Place them in a saucepan with sufficient water to cover,.
  • Add onion, vegies and bring to the boil.
  • In a small cup put flour, curry powder and enough cold water to make a paste.
  • Remove saucepan from the heat and stir in thickening and replace on element.
  • Bring saucepan back to a simmer and cook until vegies are done.

Curried sausages are quite popular comfort food in Australia, this is my recipe that I have made commercially for many years and have had lots of compliments for.

8 links sausages (beef, chicken, lamb or pork sausages)
1 tablespoon oil
2 onions
2 garlic cloves
1 tablespoon grated fresh ginger
2 carrots, quartered, then cut into 1/2 in chunks
2 potatoes, diced
1 tablespoon curry powder
2 tablespoons tomato paste
2 tablespoons fruit chutney
1/2 cup applesauce
1 cup chicken stock
1 (400 ml) can coconut milk
1 cup frozen peas (optional)
salt and pepper
fresh coriander (to garnish)

Steps:

  • Cover the sausages with cold water; bring to the boil and simmer about 5 minutes.
  • Drain, cool, remove skins and cut each into 4 or 5 pieces.
  • Heat the oil in a large saucepan and fry the onion, garlic and ginger, carrots and potatoes, stirring until the onions are soft. Add the curry powder and cook a minute or two.
  • Add the tomato paste, chutney, apple sauce, stock and coconut milk. Stir well, then return the sausage chunks to the saucepan.
  • Bring too the boil then cover and simmer about 45 minutes. Remove the lid and allow to cook about 15 minutes more to reduce the sauce a bit. If you can't be bothered, mix two tablespoon cornflour (corn starch) with 2 tablespoons water and stir this through to thicken.
  • 1 cup of peas can be added in the last 15 minutes as well.
  • Season with salt and pepper and serve garnished with copped fresh coriander.

1 pound ground beef
1/2 cup chopped onion

1/2 cup hot water
1/2 cup cooked rice
2 tablespoons chopped fresh parsley
1 tablespoon orange juice concentrate
1 teaspoon brown sugar
1 teaspoon curry powder
1/2 teaspoon ground ginger
1/4 teaspoon salt

Steps:

  • Invert squash in a greased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 35-45 minutes or until almost tender., Meanwhile, in a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink and onion is tender; drain., Dissolve bouillon in water; add to skillet. Stir in remaining ingredients; mix well. Turn squash cut side up in pan and fill with meat mixture. , Fill pan with hot water to a depth of 1/4 in.; cover loosely with foil. Bake at 350° for 20-30 minutes or until heated through.
