4 ears of corn
1/4 cup mayonnaise
1/2 cup cotija cheese
1 lime, quartered
Hot sauce (such as Valentina or Tapatio)
Chili powder (such as Tajin or ancho chile)
Wooden sticks (for taffy apple, corn dogs, etc)

Steps:

  • Bring a large pot of water to a boil. Shuck the corn, remove the silk and stalk. Add corn to water, cover and cook for 5 minutes, then remove.
  • When corn is cool enough to touch but still warm, insert wooden stick into core as a handle.
  • Brush corn with 1 tablespoon of mayonnaise, sprinkle with 2 tablespoons cheese and squeeze of lime wedge. Add hot sauce and chili powder to taste.
  • Repeat with remaining ears of corn and serve.

1/2 cup (110g) finely crumbled Cotija or feta cheese, plus more for serving
1/4 cup (60ml) mayonnaise
1/4 cup (60ml) sour cream or Mexican crema
1/4 cup finely chopped cilantro leaves and tender stems
1/2 teaspoon ancho or guajillo chile powder, plus more for serving
1 medium clove garlic, finely minced (about 1 teaspoon)
4 ears shucked corn (see note)
1 lime, cut into wedges

Steps:

  • Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate.
  • While coals heat, combine cheese, mayonnaise, sour cream or crema, cilantro, chile powder, and garlic in a large bowl. Stir until homogeneous and set aside.
  • When grill is hot, place corn directly over hot side of grill and cook, rotating occasionally, until cooked through and charred in spots on all sides, about 8 minutes total.
  • Transfer corn to bowl with cheese mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle with extra cheese and chili powder and serve immediately with lime wedges.

This recipe offers options for each. In both versions, you cook the corn in its husks to develop that smoky and sweet flavor that goes so well with creamy mayo, sour cream and salty Cotija cheese, making it one of the most delicious street foods you can find.

4 ears corn, husks and silks intact
1/4 cup Mexican crema or crème fraîche
1/4 cup mayonnaise
1 tablespoon lime juice, plus lime wedges, for serving
2 ounces Cotija or Parmesan, grated
Kosher salt

Steps:

  • Prepare a grill for medium-high heat.
  • Put the corn in their husks on the grill grate over direct heat. Cover the grill and cook, uncovering the grill and rotating the corn every 5 minutes or so, until the husks are evenly charred, about 15 minutes total.
  • Alternatively, you can grill the corn on the stovetop. Heat a large cast-iron pan or grill over medium-high heat until very hot and smoking, about 5 minutes. Working in batches depending on the size of your pan or grill, put the corn in their husks on the hot pan. Cover the pan with a lid; you can also use a large skillet to cover it. Cook, uncovering the pan and rotating the corn every 5 minutes or so, until the husks are evenly charred, about 20 minutes total.
  • Meanwhile, combine the crema, mayonnaise and lime juice in a medium bowl until smooth. Thin with 1 tablespoon of water if needed. Cover and chill the crema mixture until ready to serve.
  • Pull back the corn husks and silks, leaving the husks attached to the base of the cobs. Using a pastry brush or a butter knife, spread the crema mixture on the corn. Transfer the corn to a platter, sprinkle generously with the Cotija on all sides and season with salt. Serve with reserved lime wedges for squeezing over the corn.

1 tap kosher salt
1 tsp. fresh ground pepper

Pure-ground red Chile to taste, for garnish

Steps:

  • Over a medium hot grill, roast the corn until the husks are well charred, about 5 minutes. Turn occasionally so as not to burn the side contacting the direct heat. Set the roasted ears aside until cool enough to handle, then shuck them. Cut the kernels off the cobs. When ready to eat, mix the mayo, hot sauce, lime juice, slat, pepper, sugar and chicken stock in a sauté pan over medium heat. Add the corn kernels and warm through Pour into a bowl and garnish with the cheese, cilantro and ground Chile. Serve immediately with crispy tortillas.
