ELVIS BANANA BREAD

Steps:
- Preheat oven to 350º.
- Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, baking soda and salt. Set aside.
- In another large bowl, mix together butter, sugar, egg and egg yolk, peanut butter, sour cream and vanilla. Add mashed bananas and stir until combined.
- Gradually add dry ingredients to wet ingredients until just combined. Fold in chocolate chips, peanut butter chips, and most of the bacon (reserve some for topping) and transfer to prepared loaf pan.
- Bake until a toothpick comes out clean, about 1 hour. Let cool 10 minutes in pan, then turn out onto a cooling rack to cool completely.
- Make glaze: Whisk together melted peanut butter, powdered sugar and salt. Drizzle over cooled banana bread and sprinkle with remaining bacon bits.

Steps:
- Preheat oven to 350°. In a large bowl, whisk the first six ingredients. In another bowl, whisk bananas, eggs, peanut butter, applesauce, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Transfer to three 5-3/4x3x2-in. loaf pans coated with cooking spray. Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to a wire rack to cool. Freeze option: Securely wrap cooled loaves and freeze. To use, thaw at room temperature or, if desired, microwave each loaf on high for 60-75 seconds or until heated through.

ELVIS BANANA BREAD
The King would give this Hunka Burnin' Love Banana Bread his stamp of approval! Elvis Banana Bread has crunchy peanut butter, mini chocolate chips, and is topped with candied bacon!

Steps:
- Preheat the oven to 350°F. Butter two 8½ X 4½ bread pans.
- Cream the butter and peanut butter. Add the sugar and mix until combined. Slowly beat in eggs and vanilla. Then add the bananas.
- In another bowl whisk together the flour, baking soda, baking powder, and salt. Add the dry mixture to the wet and mix until just combined.
- Stir in the mini chocolate chips. Divide the batter evenly between the two prepared pans and bake for 45 - 50 mins (see note).
- While the bread bakes, place a wire rack on a baking sheet. Mix the brown sugar and cinnamon together in a shallow dish and sort of dredge the bacon strips through the mixture. Lay the bacon strips flat across the wire rack, careful to tuck in any excess so it's dripping on the baking sheet and not in the oven.
- During the last 15 minutes of baking, loosely tent the bread to keep it from getting too dark on top. Place the pan with the bacon in the oven on the rack below the bread.
- You'll want to watch the bacon closely -- bake time can range from 7 to 15 minutes depending on the thickness of your bacon. It will be crisp and golden when it's ready; not too dark.
- Let the bread and the bacon cool just a bit before turning out of the pans. Make your glaze by stirring together the powdered sugar and milk, adding the milk just a little at a time to reach a good consistency. Spoon it over the cooling loaves (it's best to do this while they are still warm). Crumble the bacon over each loaf.
- Let them cool almost completely before slicing to serve.
THE ELVIS
Steps:
- Spread the butter on 1 side of each slice of bread. On the other side of half of the slices spread peanut butter. Place banana slices on top of peanut butter. Drizzle honey over bananas. Place 3 bacon slices on top of the banana, then place the remaining buttered bread slices on top, butter-side-out.
- Place sandwiches on a preheated grill pan or griddle. Flip them over when they become golden brown and crispy. When the sandwiches are browned on both sides, remove to plates. Slice in half and serve immediately.
THE ELVIS PRESLEY
Steps:
- For the peanut puree: Place the peanuts in 1/4 cup of peanut oil in a small saute pan and heat for 3 minutes at low heat. Transfer to a blender and puree until smooth.
- For the bread: Mix eggs, vanilla and heavy cream together in a bowl. Dip banana bread into the mixture. Melt butter in a nonstick pan and cook banana bread for 2 minutes on each side or until golden brown. Place bread on a paper towel and reserve.
- For the bananas: Cut bananas into quarters and dip into the same egg mixture as above, then roll the bananas in the bread crumbs until well covered. In a nonstick pan, heat 1/4 cup of peanut oil until nearly smoking and fry bananas until golden brown, remove from oil and place on a paper towel as well.
- For assembly: Spread both sides of banana bread with peanut puree and layer with the fried bananas. Drizzle with 1 teaspoon of honey. Close the sandwich and slice.
ELVIS SANDWICH
This sandwich may sound unappealing, but it's actually very tasty, especially on cold winter days! Legend has it that this was a favorite of The King.

- Spread the peanut butter on one side of one slice of bread. Top with sliced banana, then slices of cooked bacon. Cover with the other slice of bread. Spread butter on the outside of the sandwich.
- Heat a skillet over medium heat. Fry the sandwich on each side until golden brown and peanut butter is melted, about 4 minutes total.

ELVIS BREAD
Peanut Butter and Bananas are two of my favorites. I get All Shook Up and Can't Help Falling in Love with this combination, especially when they're baked together, warm from the oven and the Fools Rush In for a slice or two of my yummy Elvis Loaf.

Steps:
- Pre heat oven to 350 degrees. Prepare 9 x 5 x 3 loaf pan with cooking spray and flour. Set aside. In medium size bowl combine mashed bananas and peanut butter. I use a potato masher for the bananas and a whisk to combine the rest of the wet ingredients. Add the eggs, canola oil and vanilla. Combine and set aside while you assemble the dry ingredients.
- In large bowl add flour, ground oats, sugar, baking powder, baking soda, and salt. Whisk to incorporate. Fold wet ingredients into the dry ingredients using a rubber spatula or wooden spoon. You don't need to drag out your hand or stand mixer for this. Add chopped peanuts(if using)and gently fold in.
- The secret to moist banana bread is to not over mix the batter, and that's the result you'll acheive by doing it by hand. Pour mixure into prepared pan and bake 55 minutes. Place on wire rack to cool about 15 minutes. Carefully remove the bread from the pan and let cool another 1/2 hour. Slice and serve plain or with additional peanut butter, cream cheese or butter. Some say it's better the next day toasted with a smidge of butter.
