1 cup all-purpose flour
1 1/2 cups white sugar, divided
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
6 tablespoons cold butter
1/4 cup boiling water
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon lemon juice
4 cups fresh blackberries, rinsed and drained

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a large bowl, mix the flour, 1/2 cup sugar, baking powder, cinnamon and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in 1/4 cup boiling water just until mixture is evenly moist.
  • In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining 1 cup sugar, lemon juice, and blackberries. Transfer to a large sauce pan, and bring to a boil, stirring frequently. After bringing to a boil, transfer mixture to a casserole dish and add dough mixture on top. Place uncovered cobbler into oven.
  • Bake 25 minutes in the preheated oven, until dough is golden brown.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup white sugar
⅓ cup softened butter
1 cup milk
2 cups fresh blackberries
1 cup white sugar
2 cups boiling water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk the flour, baking powder, and salt together in a mixing bowl.
  • Cream 1 cup of sugar with the softened butter until light and fluffy. Mix in the flour mixture alternately with the milk until no large lumps remain. Pour into a 9x13-inch baking dish. Arrange the berries over the batter, and sprinkle with the remaining 1 cup of sugar. Pour the boiling water over top.
  • Bake in the preheated oven until the batter has firmed and the berries are soft, about 50 minutes.

1/2 cup (1 stick) unsalted butter
4 cups fresh blackberries
1 cup sugar, plus more for sprinkling
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of fine sea salt
1 cup whole milk
1 teaspoon pure vanilla extract
Whipped cream, creme fraiche, or ice cream, for serving

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large cast-iron skillet or ovenproof baking dish, in the oven, 5 to 7 minutes.
  • Meanwhile, place blackberries in a large bowl. Using a potato masher, mash blackberries to release their juices. If blackberries are tart, sprinkle with sugar.
  • In another large bowl, whisk together flour, baking powder, and salt. Add 1 cup sugar, milk, and vanilla extract; mix until well combined. Remove skillet from oven and add melted butter to flour mixture; stir to combine. Pour mixture into skillet and pour blackberries and their juices into the center.
  • Transfer skillet to oven and bake until top is golden brown and a cake tester inserted into the batter comes out clean, about 1 hour. Serve hot, warm, or at room temperature with whipped cream, creme fraiche, or ice cream.
