ENGLISH HARD CAKE
The first time you make this, you might wonder where you went wrong because it's hard and on the dry side...Trust me, it's supposed to be that way...This is not one of those moist 'tea' cakes... The 'trick' is that you have some strong hot tea with it...Don't make the mistake of having it with coffee, you lose the 'effect'...I prefer stong hot English Breakfast tea with no other flavor (no herbals, etc) Only then will you appreciate the magic of this seemingly ordinary 'tea' cake!

Steps:
- Preheat oven to 350°F; Combine well the flour, baking powder, salt and walnuts --.
- In a separate bowl cream together the butter and sugar until completely combined; Add Egg Beaters to the creamed butter/sugar beating well; Add vanilla and stir to mix completely --.
- Add dry mixture to this 'wet' mixture, combining well --The resulting mixture should be crumb-like --.
- Shape the mixture into balls and arrange in a circle in a greased 9" cake pan (perhaps 6 balls, 5 around and one in the middle).
- By arranging them in this fashion, you'll get an effect similar to scoring you see in scone recipes except this is achieved 'naturally' by the arrangement of the balls --.
- At this time you can sprinkle it with the optional cinnamon sugar (trust me, it's better WITH the cinnamon sugar!).
- Bake in preheated 350°F oven for approximately 50 minute (your time may vary).
- Allow me to repeat, this will be hard upon completion and dryish -- it isn't intended to be a moist 'tea' cake (so don't be alarmed).
- Serve warm or equally good at room temperature; don't forget to have it with strong hot tea (no herbals) for the FULL effect!
- Suggestions: substitute pecans for the walnuts.

- Preheat oven to 350 degrees F ( 175 degrees C). Grease and flour the bottom and sides of an 8 inch round cake pan with 1 tablespoon softened butter or margarine.
- Sift together flour, salt, and baking powder.
- Cream 1/2 cup butter or margarine and sugar together. Mix in caraway seeds and egg. Add flour mixture and milk, beating well. Pour batter into prepared cake pan.
- Bake for about 45 minutes, or until a knife inserted into the center comes out clean. Cool.

SIMPLE ENGLISH PANCAKES
This recipe was given to me at my bridal shower by family friends of my fiance. These pancakes are much thinner than American pancakes, almost like crepes. These pancakes are light and delicious and best of all, easy to make! Cook time includes an hour of refrigeration.

Steps:
- Sift flour into a bowl.
- Add salt and stir with a hand whisk.
- Add egg and slowly add milk while stirring.
- (batter will be more runnier than American pancakes).
- Refrigerate for an hour.
- Put a little oil in a medium sized frying pan and warm over medium heat, after coating bottom of frying pan, pour out extra oil.
- Pour 1/4 of a cup of batter in the pan and tilt so the batter covers the bottom of the pan.
- Flip pancakes after about 1 1/2 minutes.
- Repeat steps 4-6 until batter is gone.
- Serve with lemon and sugar, fruit, or Lyle's golden syrup.
ENGLISH TEA CAKES
These unique cookies are baked in muffin cups, giving them a perfectly round shape. I sometimes omit the pecans and decorate the cookies for holidays.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tube pan.
- Sift together the flour, baking soda and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. It should be noticeably lighter in color. Add eggs one at a time, beating well after each addition. Stir in vanilla, orange and almond extracts. Blend in the flour mixture, alternating with the sour cream, until fully incorporated. Pour batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 70 minutes. Allow cake to cool on rack before removing from pan to cool completely.
