1/2 loaf white Pullman or brioche bread
1/3 cup EVOO
4 anchovies or 2 teaspoons anchovy paste
1 tablespoon Worcestershire sauce
2 cloves garlic, finely chopped
Juice of 1/2 lemon
1 cup shredded pecorino cheese
Cracked black pepper
2 tablespoons EVOO
2 to 3 cloves garlic, finely chopped
1 medium onion, chopped
Salt and freshly ground pepper
2 heads escarole, coarsely chopped
A little freshly grated nutmeg
6 cups chicken stock
One 28-ounce can cannellini beans
Zest of 1 lemon

Steps:

  • Preheat the oven to 350 degrees F.
  • For the croutons: Place a wire rack over a baking sheet. Trim the crust from the bread and cut it into 1 1/2-inch cubes. Spread the bread cubes on the rack and toast in the oven until light golden, 12 to 15 minutes.
  • In a small pot, heat the EVOO with the anchovies over medium-low heat. When the anchovies melt into the oil, stir in the Worcestershire sauce, garlic and lemon juice, then remove from the heat. Place the croutons in a bowl, pour the dressing over them and toss to coat. Sprinkle with cheese and season liberally with pepper. Spread the croutons on the baking sheet and return to the oven until they are deep golden and the cheese has set, 7 to 10 minutes.
  • For the soup: Heat the EVOO in a soup pot over medium heat. Add the garlic and onions, and season with salt and pepper. Cook until softened, 5 to 6 minutes. Add the escarole and cook until wilted, then season with salt, pepper and nutmeg. Add the chicken stock, beans and lemon zest. Simmer at a low boil until the greens are tender and no longer bitter. Serve topped with the Caesar croutons.
  • Cooks' Note: If you are making the soup ahead of time, cool and store it in the refrigerator. Cool the croutons and store them in foil in a cool, dry place. Reheat the soup over medium heat and reheat the croutons in a foil pouch if you wish to serve them warm.

8 5x3-inch slices crusty round bread (each about 1/2 inch thick)
3 tablespoons olive oil
4 slices thick-cut bacon, diced
1 large onion, chopped
8 cups canned low-salt chicken broth
1/4 cup (packed) chopped fresh basil
2 teaspoons chopped fresh rosemary
1 large head escarole, leaves torn
1 2/3 cups grated Parmesan cheese

Steps:

  • Preheat oven to 375°F. Brush bread with oil. Arrange on baking sheet. Bake bread until golden, about 10 minutes.
  • Sauté bacon and onion in pot over medium heat until brown, about 20 minutes. Add broth, basil and rosemary, then escarole. Simmer until escarole is tender, about 25 minutes. Mix in 2/3 cup Parmesan. Season with salt and pepper.
  • Place croutons in bowls; ladle soup over. Pass remaining 1 cup Parmesan.

8 pounds escarole, chopped
1 pound ground beef
2 teaspoons garlic powder
2 teaspoons black pepper
2 tablespoons Locatelli cheese
1/4 cup bread crumbs
1 egg
3 chicken breasts, split into 6 pieces
3 stalks celery
4 carrots, peeled
1 dozen large eggs
4 to 5 ounces Locatelli cheese
Salt
Black pepper

Steps:

  • Preheat the oven to 350 degrees. Cut off the core of the escarole, wash it and then place it in a pot with a couple cups of water to steam it. While escarole is steaming, put the meat in a bowl and cover it lightly with a layer of garlic salt, layer of black pepper and 2 layers of cheese. Then, add a layer of breadcrumbs and 1 egg. Mix well. Roll the mixture into 1/2-inch meatballs. Place the meatballs on a baking sheet and bake for 15 minutes. Remove the cooked meatballs from the oven and place them in a brown paper bag with a paper towel. Shake the bag a few times to eliminate excess grease. Drain the steamed escarole and chop it. After chopping the escarole, drain it again.
  • Fill a 16 quart stock pot a little more than halfway with cold water. Add chicken, celery, carrots and salt and pepper to taste. Cook on medium heat for approximately 1 1/2 to 2 hours, skimming the top of the pot every 15 minutes or so. Be careful not to add too much salt to the soup until it is finished because the escarole, eggs and cheese have salt in them. After cooking, remove the chicken from the broth and let cool. Turn the stove up to high and bring the broth to a boil. Once the broth comes to a boil, add the escarole and the meatballs. Stir until completely mixed. Cut the chicken into bite sized pieces and add to the soup. Bring soup back to a boil. In a bowl, mix together the eggs and cheese with a wire whisk. Slowly stir the egg/cheese mixture into the boiling soup. Reseason if necessary. Cover the pot and remove from the heat. Let it sit for 15 minutes prior to serving.

1 cup chopped onion
12 cups chicken broth (preferably low-salt)
1/2 teaspoon dried orégano, crumbled
1/2 cup tiny pasta shapes, such as egg flakes or pastina
1 head (about 1 pound) of escarole, washed well and cut into 1/2-inch-wide strips
3 hard-boiled eggs, sliced thin lengthwise
about 1 cup coarsely grated Parmesan

Steps:

  • In a kettle cook the garlic in the oil over low heat, stirring, until it is pale golden, add the onion, and cook the mixture, stirring, until onion is softened. Add the broth and the orégano, bring the mixture to a boil, and add the pasta. Simmer the soup for 5 minutes, add the escarole and salt and pepper to taste, and simmer the soup for 5 minutes more. Ladle the soup into soup plates, top it with the egg slices, and sprinkle it with the Parmesan.

2 tablespoons unsalted butter
3 medium onions, sliced thin
3 medium granny smith apples, peeled, cored, and cut into 1/4-inch slices
1/2 teaspoon salt
6 cups hearty chicken broth
1 3/4 cups hearty beef broth
1/4 cup dry red wine
1 bay leaf
fresh ground black pepper
6 ounces sharp cheddar cheese, grated
6 slices bacon, cooked crisp, crumbled
1 tablespoon finely chopped fresh sage
1 French baguette, cut on the bias into twelve 3/4-inch-thick slices

Steps:

  • Heat the butter in a large stockpot or Dutch oven over medium-high heat.
  • Add the onions, apples, and 1/2 teaspoon salt and stir thoroughly to coat the onions and apples in the butter.
  • Cook, stirring frequently, until the onions and apples are deeply caramelized, and the bottom of the pot is coated with a dark brown crust, about 30 minutes.
  • Stir in the chicken broth, beef broth, wine, and bay leaf.
  • Bring to a boil and scrape the bottom of the pot with a wooden spoon to loosen the brown crust.
  • Simmer for 20 minutes to blend flavors.
  • Discard the bay leaf and season with additional salt and freshly ground black pepper.
  • Adjust the oven rack to the upper-middle position and heat the broiler.
  • Combine the cheese and bacon in a bowl and stir to distribute evenly.
  • Place oven-proof soup crocks on a rimmed baking sheet.
  • Stir the chopped sage into the simmering broth.
  • Fill each crock almost to the top with soup.
  • Top each crock with 2 baguette slices and sprinkle with some of the cheese-bacon mixture.
  • Place the baking sheet in the oven and broil until the cheese is bubbling and well browned, 2 to 4 minutes.
  • Watch the soup carefully, because once the cheese is well browned it will quickly burn.
  • Serve immediately.

Here, it's pan-fried with smoked paprika, then added to an escarole salad with a garlicky, lemony dressing. Slivered red onion adds pungency, while fresh parsley leaves brighten everything. If you can get the pomegranate seeds, do use them; they add a juicy sweetness that's perfect with the richness of the cheese. Serve it by itself as a first or salad course, or with roasted vegetables, fish or chicken to round it out.

1/2 shallot, or 1/4 small red onion, thinly sliced
Pomegranate seeds, for garnish (optional)

Steps:

  • Make the dressing: In a small bowl, whisk together garlic, lemon juice and salt. Let sit for 30 seconds for the salt to dissolve, then whisk in olive oil. Taste and add more salt if needed. Set aside.
  • Prepare the salad: Heat 1 tablespoon oil in a medium skillet over medium-high until it thins out, about 20 seconds. Add cheese and cook until golden on one side, 1 to 2 minutes, adding more oil if the pan dries out. Flip cheese and sprinkle with paprika. Let cook without moving until golden on the other side, about 1 minute longer. Transfer to a paper towel-lined plate.
  • Put escarole, parsley and shallot in a large salad bowl. Add the dressing and warm halloumi, and toss well, adding more oil, lemon juice and salt, to taste. Serve immediately, strewn with pomegranate seeds, if you like.

A friend made bacon croutons and brought them over with a blue cheese salad. I fell in love. I went online and cobbled this recipe together. You could do so many variations (add garlic powder etc.)

4 cups large cut day old bread
4 tablespoons bacon fat
1/4 teaspoon salt
1 lb bacon

Steps:

  • Brown some bacon - I do a pound so I can add to salad in addition to the croutons or use it with eggs etc -- don't think a pound of bacon will go to waste anywhere?.
  • Cut your bread - I use homemade bread that is a bit past it's prime. I cut the croutons fairly large - like the ones you buy at the grocery? You could use brioche or other bakery bread. Not sure how this would be on purchased sliced bread --
  • Heat your oven to 350.
  • Put the bread cubes into a big bowl. Drizzle 1 tbl of bacon grease over the croutons, gently stir. Repeat 4 times - this ought to distribute the grease fairly well. Sprinkle in the salt and then stir again.
  • Bake croutons in oven 350 degrees for 10 min - stir - bake 5 more minutes.
  • Keep for a day or two - serving with soup or salad -- in a sealed container.

2 quarts homemade or low-sodium store-bought chicken stock
1 pound dried white beans, soaked overnight, drained, and rinsed
3 large thyme sprigs
1/4 teaspoon cayenne pepper
Coarse salt and freshly ground pepper
1 head escarole, cut crosswise into strips

Steps:

  • Heat oil in a large, heavy saucepan over medium heat until hot but not smoking. Add bacon, and cook, stirring occasionally, until crisp, about 12 minutes. Using a slotted spoon, transfer to a plate.
  • Add onions and shallot to pan; cook, stirring occasionally, until onions are translucent and soft, about 8 minutes. Add garlic; cook 1 minute more.
  • Return bacon to pan. Stir in stock, beans, thyme, cayenne, and 1 teaspoon salt; season with pepper. Bring to a boil. Reduce heat; cover, and simmer 30 minutes. Uncover, and cook until beans are tender, about 1 1/2 hours more.
  • Stir in escarole. Cook 2 minutes. Season with salt and pepper.
