Stuffed Pizza with Variations: Spinach and Fontina, Escarole, Anchovy, Pine Nut and Raisin, Prosciutto Cotto and Scamorza image

2 cups/500 ml lukewarm water
1 cube or 2 tablespoons/30 ml fresh yeast
4 cups/1 L all-purpose flour
2 tablespoons/30 ml extra-virgin olive oil
1 teaspoon/5 ml salt
1 recipe Pizza Dough
3 tablespoons/45 ml extra-virgin olive oil
2 cloves garlic, peeled and crushed
1 bunch fresh spinach, washed, dried and trimmed
Salt
2 ounces/75 g fontina cheese, sliced
1 recipe Pizza Dough
4 tablespoons/60 ml extra-virgin olive oil
3 anchovies, plus extra anchovies, for topping, optional
2 cloves garlic, crushed
1 cup/250 ml olives
1/2 cup/125 ml pine nuts
1/2 cup/125 ml raisins
1 bunch escarole, washed, dried and trimmed
1 recipe Pizza Dough
4 ounces/100 g prosciutto cotto, sliced
2 ounces/75 g smoked scamorza cheese, thinly sliced
5 to 7 sun-dried tomatoes, chopped
Extra-virgin olive oil, for brushing
Salt

Steps:

  • Add the water to a bowl. Then add the yeast a little at a time and break up the cube of yeast with your hands. Let the yeast fully dissolve in the warm water and let stand for 2 minutes.
  • Add the flour on a smooth work surface and create a well in the center of the flour. Slowly add the yeast-water mixture, olive oil, and salt until the flour has absorbed the liquid. Knead the dough until the mixture becomes an even dough consistency. If necessary, add a little more flour to absorb any excess liquid.
  • Divide the dough into 4 equal portions to make individual-size pizzas. Place on a lightly-floured surface or pan and cover with a cloth. Let rest for about an hour at room temperature or until the dough has doubled in size. Yield: 4 servings
  • For the spinach and fontina pizza: Preheat the oven to 400 degrees F. Stretch out the pizza dough and roll out on a lightly-floured surface. In a frying pan heat the olive oil and brown the garlic. Add the spinach and saute until just wilted. Add salt, to taste and let cool.
  • Add the sauteed spinach to 1/2 the dough and top with slices of fontina cheese. Fold the dough over. Pinch the opposite ends of the dough together to seal. Lightly brush the dough with olive oil and sprinkle with salt. Bake for approximately 15 minutes.
  • For the escarole, anchovy, pine nut and raisin pizza: Preheat the oven to 400 degrees F. Stretch out the pizza dough and roll out on a lightly-floured surface. In a frying pan add the olive oil, anchovies, and brown the garlic. Add the olives, pine nuts, raisins and fry together for another minute. Add the escarole and cook until wilted.
  • Add the sauteed escarole onto one-half of the dough. Additional anchovies may be added. Fold over. Pinch the opposite ends together. Lightly brush the dough with olive oil and sprinkle with salt. Bake for approximately 15 minutes.
  • For the prosciutto cotto and scamorza pizza: Preheat the oven to 400 degrees F. Stretch out the pizza dough and roll out on a lightly-floured surface. Place the prosciutto cotto, scamorza, and sun-dried tomatoes on1/2 the dough. Fold over. Pinch the opposite ends together to seal. Lightly brush the dough with olive oil and sprinkle with salt. Bake for approximately 15 minutes.

3/4 cup warm water (110 degrees)
1 package active dry yeast
2 cups all-purpose flour, plus more for rolling out dough
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
2 teaspoons yellow cornmeal or semolina
2 tablespoons currants
2 tablespoons golden raisins
1 small red onion, cut into thin wedges
1 head escarole, roughly chopped
1 tablespoon balsamic vinegar
1 cup coarsely grated Gruyere cheese
Freshly grated nutmeg, for sprinkling
2 tablespoons finely grated Parmesan cheese
2 tablespoons sliced almonds
Olive-oil cooking spray

Steps:

  • Place warm water in a large bowl; sprinkle with yeast. Let yeast dissolve, about 2 minutes. Add flour, oil, and salt; combine.
  • Turn out dough onto a clean work surface, and knead until smooth and elastic, about 4 minutes. Coat a large bowl with cooking spray. Place dough in bowl; cover with plastic wrap. Set bowl in a warm place; let dough rise until doubled in size, about 30 minutes.
  • Place a pizza stone in oven; heat to 400 degrees. Dust a pizza peel or a baking sheet with 1 teaspoon cornmeal. On a lightly floured work surface, roll out one half of dough into a 12-inch circle. Transfer dough to peel, cover with plastic wrap, and let rest 15 minutes. Roll out second piece of dough; transfer to a baking sheet lined with parchment paper and dusted with remaining teaspoon cornmeal. Cover with plastic, and let dough rest 15 minutes.
  • Place currants and raisins in a small bowl. Cover with 1/4 cup warm water; set aside. Coat a wide 6-quart saucepan with cooking spray; set over medium-high heat. When hot, add onion; cook until translucent, about 2 minutes. Add escarole and vinegar; cook until escarole has wilted, 2 to 3 minutes. Drain currants and raisins; add to escarole mixture. Remove pan from heat; set aside.
  • Remove plastic from the dough on peel. Sprinkle half of Gruyere over the dough, leaving a 1-inch border. Sprinkle nutmeg over cheese, and cover with half of escarole mixture. Top with 1 tablespoon grated Parmesan and 1 tablespoon sliced almonds. Transfer pizza to stone in oven; cook until crust is golden and crisp, 15 to 20 minutes. Transfer to a wire rack to cool slightly.
  • Slide remaining dough onto peel; repeat step 5. Cut each pizza into 4 wedges; serve.

Another one of my Grandmother's Traditional Italian Recipes. This is a little time consuming in the prep. phase, but it's more than worth it in the end. There is nothing like this when you taste it. This is by far one of my favorites, and my brother's favorite, and my husband's favorite, and so on, & so on... :-) We always have it on Easter and Christmas. You can make your own pizza dough for this recipe or buy the dough already made... I sometimes buy it from our local pizzeria when I'm pressed for time. This can be served hot, warm or cold.

4 lbs pizza dough
8 heads escarole
6 garlic cloves, sliced
1/4 cup extra virgin olive oil
14 ounces sliced olives (DRAINED)
1 (2 ounce) can anchovies
1/4 cup butter, melted
salt
1 -2 teaspoon sugar (optional)
red pepper flakes (optional)

Steps:

  • Cut bottom off escarole. Then cut in half. Clean escarole in sink of water as many times until water is clean and no dirt. Boil in pot of salted water until tender - approximately 20 minutes. If bitter add 1-2 teaspoons sugar. Drain very well. Squeeze out all excess water with hands or in paper towel or dish towel.
  • Next sauté escarole in frying pan with garlic and olive oil. Cold garlic 1st in cold oil or else escarole becomes crisp. Add red pepper flakes if you like it hot.
  • Add drained, sliced olives and salt as desired. Keep in mind anchovies will be salty. When done, drain excess oil out of escarole via colander.
  • Place dough in oiled then buttered pan (I use brush). Make sure dough comes up sides of pan. Put escarole mixture inside dough. Add anchovies on top in layered pieces. Stir lightly through. Put on top layer of dough for crust. Pinch seems together tightly of top and bottom dough layers. Brush with oil on top and melted butter. Make fork holes for ventilation.
  • Bake 400ºF for 15 minutes. Then reduce to 350ºF for 30 minutes or until golden brown.
  • Brush melted butter on top crust when removed from oven.

1 cup breadcrumbs
1/2 cup black olives
1/4 cup red wine
4 anchovy fillets, chopped
1/2 cup olive oil
1/4 cup parmesan cheese
1 tablespoon capers
2 tablespoons pine nuts, coarsely chopped
3 tablespoons golden raisins, moistened in red wine and chopped
2 tablespoons parsley, finely chopped
salt and pepper
2 heads escarole
2 garlic cloves, smashed
1/2 cup chicken broth

Steps:

  • In a large bowl, combine the bread crumbs, olives, anchovies, 1/4 cup wine, 1/4 cup olive oil, cheese, pine nuts, raisins, parsley, and capers.
  • Add salt and pepper to taste.
  • Discard any damaged outer leaves from the escarole, wash thoroughly between the leaves and shake dry.
  • Take out the center leaves to make room for the stuffing, then stuff the escarole and tie closed with kitchen string.
  • In a large, deep skillet, heat the remaining 1/4 cup olive oil over medium-high heat.
  • Lower the heat, add the garlic and escarole and fry, turning with tongs, until softened, about 10 minutes.
  • Transfer the escarole to a plate.
  • Pour the remaining 1/4 cup wine and the chicken broth over the escarole.
  • Cover and let rest for 10 minutes.
  • Remove the string and slice the escarole open to serve.

The escarole does not need to be cooked ahead of time...it cooks right on the pizza. Also, I think with this pizza, the less sauce the better.

1/4 ounce package yeast
1 1/2 cups warm water
3 cups flour
2 tablespoons olive oil
Coarse salt
1 1/2 pounds escarole
2 tablespoons olive oil
3 cloves garlic
10 black olives, pitted and sliced
1 2-ounce can flat anchovies, chopped
1/2 cup pine nuts
1/2 cup raisins
1 tablespoon capers, rinsed and drained
Freshly ground pepper

Steps:

  • Make the pizza dough. Dissolve the yeast in one cup lukewarm water and let it stand for five minutes, or until it has begun to ferment. If the mixture does not ferment, throw it away and use another package of yeast.
  • If using a food processor, fit the bowl with a steel blade and put in the flour, olive oil, salt, yeast mixture and remaining water into the bowl. Process until the dough forms a ball -about 20 seconds. Place the dough on a smooth surface and knead for a couple of minutes, adding more flour if the dough is too sticky.
  • If using the hand method, combine the flour and salt and place the mixture on a smooth working surface. Make a well in the center and add the yeast mixture, olive oil and remaining water. Gradually work the flour into the liquid, using a wooded spoon. When the dough is too stiff to work with the spoon, knead until it is smooth and shiny, about eight to 10 minutes. Add more flour if the dough gets too sticky.
  • Put the dough in a large floured mixing bowl. Cover with a damp cloth or plastic wrap and let it rise for two hours in a warm place (the back of the stove, for example) until doubled in size.
  • Punch down the dough, sprinkle it with flour and knead for a minute. Flour a 12-inch pizza pan and roll out the dough with a rolling pin directly onto the pan. Brush with olive oil. Let rise for an hour.
  • Meanwhile, make the escarole topping. Wash the leaves and simmer them in boiling water for five minutes. Drain, squeeze out the water and chop the leaves coarsely. Set aside.
  • Heat the olive oil in a frying pan and gently saute the garlic, olives, anchovies and pine nuts until the garlic begins to turn golden. Add the escarole and cook uncovered stirring frequently for 10 minutes over moderate heat. Stir in the raisins and capers and season with pepper.
  • Meanwhile, preheat oven to 400 degrees.
  • Bake the pizza for 10 minutes. Remove the pizza from the oven and spread with the escarole mixture. Season with pepper. Return to the oven and bake a further 15 minutes.

2 tablespoons extra-virgin olive oil
2 tablespoons best-quality salt-cured anchovies
3 tablespoons chopped black olives such as Gaeta or Nicoise
1 tablespoon small capers, well rinsed
1/4 to 1/2 teaspoon red pepper flakes (to taste)
1 bunch fresh escarole, sliced 3/4-inch crosswise and washed, with water still clinging to the leaves (about 8 cups)
1/3 cup freshly grated Parmesan cheese
1 Pizza Dough for Personal Pizzas, divided into 6 pieces
1/3 cup yellow cornmeal

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the anchovies and cook, stirring, until they dissolve into a paste, 30 to 60 seconds. Stir in the olives, capers and red pepper flakes and cook, stirring, until the flavors are well combined, 2 to 3 minutes.
  • Reduce the heat to medium and add the escarole to the pan, little by little as the leaves will quickly wilt and make room for more. Cook over medium heat, stirring often, until tender, 5 to 8 minutes.
  • To prepare the pizza, by lightly brushing the entire pie with olive oil. Leaving a ½-inch border of dough around the edge of the pie, spread a thin layer of the escarole and grated Parmesan cheese over the dough and bake.

TUSCAN GRILLED PIZZA WITH ESCAROLE

Cookbook author Joanne Weir is known for her flavor-packed Mediterranean-inspired food. Her book From Tapas to Meze shows the breadth of her Mediterranean influences. Here, Joanne shares a favorite pizza recipe that we adapted for grilling using a Tuscan grill that fits into the fireplace of her home in San Francisco. The bitter escarole on this pizza is balanced by the sweet pine nuts, creamy cheeses, and the salty olives. The dough for a grilled pizza needs a bit more structure from gluten to keep it from oozing through the grates of the grill, which is why this one is kneaded for a longer time than other pizza doughs.

Yield makes two 10- to 11-inch pizzas

Number Of Ingredients 17

2 cloves garlic, minced
4 tablespoons extra-virgin olive oil, plus more for brushing
3/4 cup shredded mozzarella cheese
3/4 cup shredded Italian fontina cheese
1/4 cup pine nuts
Leaves from 1 head escarole, cut into 1-inch-wide strips
2 teaspoons balsamic vinegar
Pinch of red pepper flakes
Salt and freshly ground black pepper
Joanne Weir's Pizza Dough (recipe follows)
1/2 cup pitted niçoise olives, coarsely chopped
2 teaspoons active dry yeast
3/4 cup plus 2 tablespoons warm water (105° to 115°F)
2 cups unbleached bread flour
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
(makes enough dough for two 10- to 11-inch pizzas)

Steps:

  • Prepare a hot fire (475° to 500°F) in a wood-fired grill.
  • Combine the garlic and 2 tablespoons of the olive oil in a small bowl and let stand for 30 minutes. Combine the mozzarella and fontina in a bowl.
  • Heat a large skillet on the grill, add the pine nuts, and toast, stirring occasionally, until golden, 1 to 2 minutes. Remove from the pan and set aside.
  • Heat the remaining 2 tablespoons olive oil in the same pan over medium heat. Add the escarole and cook, stirring occasionally until it wilts, 1 to 2 minutes. Add the vinegar and red pepper flakes. Season to taste with salt and pepper. Set aside
  • Divide the dough into 2 round pieces and form each into a ball. Do not work the dough too much. Roll one ball into a 10- to 11-inch round. Transfer to a lightly oiled baking sheet and brush the top of the dough with olive oil. Repeat with the second ball of dough.
  • Take the dough and all of the toppings to the grill. Place one pizza round, oiled side down, on the grill. Cover the grill and cook for 5 minutes. Turn the pizza over and brush the marked side to within 1/2 inch of the edge with the garlic-infused oil. Move the pizza off direct heat. Sprinkle half of the combined cheeses on top of the oil. Top with half of the escarole, pine nuts, and olives, spreading evenly. Close the lid and bake until golden and crisp, about 7 minutes. Repeat with the remaining ingredients to make a second pizza.
  • In a bowl, combine the yeast, 1/4 cup of the warm water, and 1/4 cup of the flour in a small bowl. Let stand for 30 minutes. Add the remaining 1 3/4 cups flour, 1/2 cup plus 2 tablespoons warm water, the olive oil, and salt. Mix the dough thoroughly. Turn out onto a floured board and knead until smooth, elastic and a bit tacky to the touch, 7 to 8 minutes. Place in an oiled bowl and turn to cover with oil. Cover with a damp towel or plastic wrap and let rise in a warm place until doubled in volume, 1 to 1 1/2 hours. Or, let the dough rise in the refrigerator overnight. The next day, bring the dough to room temperature.
