My teacher told me that everyone she knew cooked _Espesado_ on Mondays, a ritual that is universally accepted. In the clean and complete Central Market of Chiclayo, a number of the small eating shops were dispensing this to diners who knew what they wanted and expected it on Mondays.

Steps:
- 1. To make the mush: Process all the ingredients together in a food processor into a fine paste or mush. Set aside.
- 2. To prepare the meat: bring the water to a boil in a large pan. Add the beef, salt, yuca, and fava beans (if used) and simmer, covered, over low heat until the meat is tender, about 45 minutes.
- 3. Add the mush, mix well, and cook for 15 to 20 minutes. (This results in a thick and substantial dish, perhaps even too thick, in which case 1/2 to 1 cup water may be added.) Mix well and adjust the salt to taste.
- Serve warm, with a side dish of Ceviche.
- • This recipe is from the region of Chiclayo in northern Peru. The use of corn, squash, and beans reflects some of the country's earliest food exchanges, when those ingredients were brought down from Central America and became important staples.
- • Zapallo is the Peruvian name for calabaza, a large, round, pumpkinlike squash. Wedges of calabaza are sold at Latin and Caribbean markets, but butternut is equally good here.

- Chickpea and spinach stew. I’ll start with one of my favorite Semana Santa recipes (and one of my go-to easy tapas recipes all around), espinacas con garbanzos (chickpeas and spinach).
- Torrijas. Probably the most famous Semana Santa recipe, torrijas are a sweet treat prepared throughout Spain for Holy Week. Every region has their version– from the torrijas de leche (milk soaked torrijas) that are spiced with cinnamon and popular in Madrid, to the anis soaked version in nearby Chinchon and the honey-soaked ones that I love from Andalusia.
- Bacalao croquettes. Salt cod (bacalao) is a very popular Semana Santa food throughout Spain. In the Catholic tradition, eating meat is prohibited on holy days and salt cod has historically been a way to prepare a delicious meat-free meal.
- Pestiños. In Andalusia, pestiños are another Semana Santa recipe you’ll find in bakeries at this time of year. Traditional pestiños are pieces of fried dough, soaked in spiced honey and aniseed.
- Buñelos de Viento. Homemade donuts are delicious no matter where you are in the world, and Spain is no exception! Buñelos de Viento are a delightful Semana Santa recipe that everyone adores.
- Bacalao and potato stew. Another classic salt cod recipe is a simple dish of cod and potato stew. It might not sound impressive, but it’s one of those meals that fills your stomach and your soul!
- Tortas de la Abuela. My mother-in-law doesn’t bake often, but when it comes to Semana Santa sweets she has us covered! She not only makes delicious torrijas and pestiños, but also usually adds these simple and delicious tortas de la Abuela (fried dough with honey) to the mix.

- Warm the milk; it should not be more than 110F or 43C. Add the yeast and stir until dissolved. Let stand 10 minutes; it should form abundant bubbles. If you do not see bubbles, repeat the process and make sure that the yeast is alive.
- With a fork, mix the butter with the 40 grams of flour and spread over parchment paper, give it a square shape of about 6″ per side. Refrigerate for at least 15 minutes.
- In a bowl, place the flour, sugar, honey, vanilla extract, lemon, salt, and one egg. Using the paddle attachment mix everything while adding the milk with the yeast. Work to form a sticky dough, about 5 minutes. Change to the kneading hook and knead for 10 minutes in low speed.
- Place the dough on a floured board. Stretch the dough into a square of about 12″ per side, place the square of butter in the center and fold the dough so that it covers the square of butter. Pinch to seal the edges of the dough. Roll without exposing the butter into a rectangle. Fold in 3 as a letter, the left side first. Place in a floured tin and refrigerate for 1 hour.
