MAMA'S LASAGNA

1 tablespoon olive oil, plus extra for pan
1 pound ground beef or turkey
1 medium onion, chopped
1 clove garlic, minced
One 14.5-ounce can stewed tomatoes, chopped
One 8-ounce jar tomato sauce
One 6-ounce can tomato paste
One 8-ounce box no-boil lasagna noodles
2 large eggs
2 cups cottage cheese
1/2 cup grated Parmesan
2 teaspoons freshly chopped parsley leaves
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon seasoning salt
One 8-ounce bag shredded mozzarella
One 8-ounce bag shredded Cheddar

Steps:

  • Preheat oven to 375 degrees F. Lightly oil the bottom of a 13 by 9 by 2-inch baking dish.
  • In a large saute pan, over medium-high heat, add 1 tablespoon oil and saute meat, onion, and garlic until meat is browned, breaking up meat with a wooden spoon. Drain pan of fat and add stewed tomatoes, tomato sauce, and tomato paste. Cover and simmer for 15 minutes, stirring occasionally.
  • In a large bowl, whisk together eggs, then mix in cottage cheese, 1/2 cup Parmesan, parsley, salt, pepper, and seasoning salt.
  • Spread a little of the meat sauce in the bottom of the prepared pan. Lay half the noodles in the bottom of the baking dish, overlapping by 1/2-inch. Spread half the egg and cottage cheese mixture evenly on top. Sprinkle half the mozzarella and Cheddar evenly over the cottage cheese mixture. Pour half the meat sauce on top. Repeat layering in same order. Sprinkle remaining 1/4 cup Parmesan on top. Bake in center of oven 30 to 35 minutes until sauce is bubbling around the edges. Let stand 10 minutes before serving.

1 (1-pound) box lasagna noodles
8 ounces sliced mozzarella cheese
1 cup shredded mozzarella cheese
SAUCE
8 ounces ground beef
8 ounces sweet Italian sausages removed from casing
1 (24-ounce) jar spaghetti or marinara sauce
1 cup chopped mushrooms
3/4 cup minced onion
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon salt
1 teaspoon black pepper
FILLING
1 (15-ounce) container ricotta cheese
1/2 cup grated Parmesan cheese

Steps:

  • 1. Brown the ground beef and sausage in a large pot over medium heat. As the meat browns, break it into small pieces with a wooden spoon. Drain off the excess fat. 2. Add the remaining sauce ingredients to the pot and stir until thoroughly mixed. 3. Bring the sauce to a boil, then reduce the heat to low and simmer covered for 30 minutes. Stir occasionally as it cooks. 4. While the sauce simmers, place the ricotta and Parmesan in a bowl and stir until well blended. 5. Partially cook the noodles for 8 or 9 minutes, or until slightly firmer than al dente. Drain, run under cold water to stop the cooking process, and drain again. 6. Spoon a third of the sauce on the bottom of a 13x9 inch baking pan and follow with a layer of noodles. (If the noodles are wet, pat them dry with paper towels before placing them in the pan.) 7. Top the layer of noodles with half the filling. 8. Cover the filling with half the mozzarella slices. 9. Repeat the layering, ending with a layer of noodles. Top with the remaining sauce and the shredded mozzarella. Bake in a preheated 325°F oven for 45 minutes. 10. After removing the lasagna from the oven, let it sit about 10 minutes. This will help it set, making it easier to cut into squares and serve.

1/4 cup olive oil
1 lb lean ground beef
1/2 cup chopped onion
2 garlic cloves, crushed
2 (28 ounce) cans italian style plum tomatoes, drained with juices
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon salt, to taste
1/4 teaspoon pepper
15 plain lasagna noodles or 15 spinach lasagna noodles
1 (15 ounce) container cottage cheese
1/2 cup grated parmesan cheese
1 egg, beaten
1 lb mozzarella cheese, shredded

Steps:

  • Heat the olive oil in a large wide saucepan; add the ground beef, onion and garlic.
  • Sauté, stirring, over medium meat until the meat is browned.
  • Add the tomatoes, tomato paste and sauce, basil and oregano.
  • Cook, stirring occasionally, over medium-low heat until sauce is cooked down and thickened, 1-1/2 to 2 hours.
  • There should be about 4 cups of sauce.
  • Season with salt and pepper.
  • Cook the lasagna noodles in plenty of boiling salted water until al dente, about 12 minutes; drain.
  • Place noodles in a bowl of cool water until ready to use.
  • Beat the cottage cheese, Parmesan and egg together; set aside.
  • Heat oven to 350°F.
  • Add about 1/2 cup of sauce to bottom of a 9x13-inch baking dish.
  • Lift the noodles from the water individually and blot dry on paper towels.
  • Arrange a slightly overlapping layer of 5 noodles on the bottom of the dish.
  • Cover the noodles with half the ricotta mix; add about 1/3 of the sauce and 1/3 of the mozzarella.
  • Arrange a second layer of 5 noodles.
  • Add the remaining ricotta, half of the remaining sauce and half of the remaining mozzarella.
  • Top with the remaining 5 noodles, the remaining sauce and the last of the mozzarella.
  • Bake until the cheese is melted and the mixture is bubbly, about 50 minutes.
  • Let stand at least 15 minutes before serving.

1 lb lean ground meat
1 garlic clove, minced
1 tablespoon dried basil
1 1/2 teaspoons salt
1 (1 lb) can tomatoes
2 (6 ounce) cans tomato paste
10 ounces lasagna noodles
3 cups ricotta cheese
1 cup grated parmesan cheese
2 tablespoons parsley flakes
2 beaten eggs
2 teaspoons salt
1/2 teaspoon pepper
1 lb mozzarella cheese, grated
1 tablespoon olive oil

Steps:

  • Brown meat.
  • Add next 5 ingredients. Simmer uncovered 30 minutes.
  • Cook noodles according to package directions.
  • Drain and spread noodles out to cool on wax paper.
  • Combine remaining ingredients, except Mozzarella and oil.
  • Spread olive oil on bottom of 13 x 9 baking pan.
  • Place half noodles in bottom, overlapping slightly.
  • Spread 1/2 Ricotta on noodles, using fingers.
  • Sprinkle scant half of Mozzarella over all.
  • Spread 1/2 meat sauce over all.
  • Repeat layers, saving a little Mozzarella for the top.
  • Bake 30 minutes at 375°F.
  • Let stand 10 minutes, then cut.
  • May assemble early, refrigerate; then allow 15 minutes longer in oven.

1/4 cup olive oil
8 oz. ground beef
1 tsp. salt
1/2 tsp. white pepper
5 tbsp. red wine
1 tbsp. tomato paste
6 tbsp. whipping cream
pinch dried oregano
1-1/4 lb. lasagne
1/4 cup butter
pinch ground nutmeg
1/4 cup grated Parmesan cheese

Steps:

  • Peel and dice onion. Heat oil in pan and fry meat and onions for 5 minutes, until brown. Add salt, pepper, wine, and tomato paste and cook until thick. Stir in cream and oregano. Cook lasagne in boiling water until just tender. Drain and rinse under cold water. Dry with paper towel. Arrange lasagne and meat sauce in layers in greased oven proof dish, ending with a layer of lasagne. Dot with butter and sprinkle with nutmeg and grated cheese. Bake at 350 degrees for 10 minutes.
