LOW-CARB SALISBURY STEAK

The steaks are full of flavor and are good on their own! Then you add the mushroom gravy and it's beyond delicious.

2 pounds ground beef
1 onion, diced
2 eggs
1 tablespoon Worcestershire sauce
1 tablespoon dried parsley flakes
2 teaspoons salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground black pepper
7 tablespoons butter
2 cups sliced button mushrooms, or more to taste
1 tablespoon all-purpose flour
1 cup beef broth
1 teaspoon Worcestershire sauce
½ cup sour cream
salt and ground black pepper to taste

Steps:

  • Mix ground beef, onion, eggs, 1 tablespoon Worcestershire sauce, parsley, 2 teaspoons salt, garlic powder, onion powder, and 1/2 teaspoon pepper together in a bowl. Split steak mixture into 6 portions and form into patties.
  • Heat a large skillet over medium-high heat. Cook patties, 3 at a time, until slightly browned on one side, about 5 minutes. Flip and cook until other side is browned, about 5 minutes more. Repeat with remaining patties, pouring off any excess liquid. Place Salisbury steaks on a plate and cover with aluminum foil to maintain heat.
  • Melt butter in the same skillet over medium heat. Add mushrooms and cook until golden brown, about 5 minutes. Transfer mushrooms to a bowl, reserving butter in the skillet.
  • Stir flour into the butter until dissolved. Pour in beef broth slowly, stirring until thickened, about 7 minutes. Add 1 teaspoon Worcestershire sauce; cook, stirring frequently, until gravy starts to thicken slightly, about 5 minutes. Add sour cream and season with salt and pepper. Cook, stirring until all sour cream is melted and gravy is light brown, about 2 minutes.
  • Stir mushrooms back into the gravy. Remove from heat and let cool until thickened, about 2 minutes. Ladle gravy and mushrooms over steak patties.

1/4 cup milk
1/4 cup dry breadcrumbs
1 (1 1/4 ounce) envelope brown gravy mix, divided
1 teaspoon dried onion flakes
1/2 lb lean ground beef
1/2 cup water
1 tablespoon prepared mustard

Steps:

  • In a bowl, whisk the egg and milk.
  • Add bread crumbs, 1 tablespoon gravy mix and onion.
  • Crumble beef over mixture and mix well.
  • Shape into two patties, about 3/4 inches thick.
  • Broil 3-4 inches from the heat for 6-7 minutes on each side or until meat is no longer pink and a meat thermometer reads 160°.
  • Place the remaining gravy mix in a small saucepan; stir in the water and mustard. Bring to a boil; cook and stir until thickened. Serve over patties.

2 lbs ground beef
1 cup spinach, finely diced
1 egg
1 teaspoon garlic, crushed
1 teaspoon sea salt
1 tablespoon dried thyme

Steps:

  • In a large mixing bowl place the ground beef, spinach, egg, crushed garlic, sea salt and thyme and using your hands mix well.
  • In a large skillet, heat the butter over medium high heat.
  • While the butter is melting, form the hamburger mixture into thin oval patties (makes 7).
  • Place the patties into the hot melted butter; make sure it sizzles, you want the pan to be nice and hot!
  • Cook for 2 minutes on each side, the meat should be nice and browned on both sides.
  • You'll have to cook these in batches so add more butter or coconut oil if necessary.
  • Once all the steaks are done, place in the oven to keep warm and now it's time for the gravy!
  • In the same pan that you just cooked your steaks in, melt the butter over medium heat.
  • Saute the onions, bell pepper, and mushrooms in the butter until tender, about 7-8 minutes.
  • Add the beef broth and deglaze the pan (scrap all the bits off the bottom of the pan that might still be there from cooking the steaks).
  • Bring to a boil and add the coconut milk and pepper.
  • Mix well, bring back to a boil.
  • At this point you'll want to turn the heat down until the gravy is just simmering.
  • Now you'll want to reduce the gravy by stirring frequently for about 10 minutes until the sauce starts to thicken.
  • Serve the steaks with the gravy ladled over the top and garnished with diced flat leaf Italian Parsley.
