Smoked Salmon Dip with Bagel Chips image

This dip is what bagels dream about. With a kick of horseradish, this smoked salmon dip packs all the flavors of your favorite New York deli in to one bite.

Yield Makes 1 1/3 cups

Number Of Ingredients 9

1/4 cup mayonnaise
4 ounces cream cheese
1 tablespoon capers, rinsed and drained
1 tablespoon red onion, diced small
1 to 2 teaspoons fresh lemon juice
1/2 teaspoon prepared horseradish
2 ounces plus 2 more ounces thinly sliced smoked salmon, coarsely chopped
1 tablespoon chopped fresh parsley
Bagel chips, for serving

Steps:

  • In a food processor, combine mayonnaise, cream cheese, capers, red onion, lemon juice, horseradish, and 2 ounces smoked salmon. Process until smooth, about 20 seconds. Transfer to a small bowl and stir in remaining 2 ounces smoked salmon. Top with fresh parsley and serve with bagel chips.

1 fillet of salmon, 2 1/2 to 3 pounds, pin bones removed
3 tablespoons Dijon mustard
1/2 cup everything bagel spice mix

Steps:

  • Soak a large cedar plank (big enough to fit the entire salmon fillet) in water for at least 30 minutes.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to heat to 350 degrees F.
  • While your grill is coming up to temperature, prepare the salmon. Place the salmon skin-side down on the cedar plank. Brush the flesh side of the salmon with the mustard, then liberally season with the everything spice.
  • Place on the indirect heat side of the grill, close the lid, and cook until the salmon reaches an internal temperature of 125 degrees F, 20 to 22 minutes. Cook the salmon longer if you like it more done. Cut into slices and serve.
  • Oven method: Bake on a rimmed baking sheet at 350 degrees F until the salmon reaches an internal temperature of 125 degrees F, 20 to 22 minutes.

1 large egg
3 teaspoons everything bagel seasoning, divided
1 teaspoon coconut flour
¼ teaspoon baking powder
½ cup shredded mozzarella cheese
4 tablespoons smoked salmon cream cheese spread (such as Philadelphia®)
1 teaspoon capers, drained
3 thin red onion slices

Steps:

  • Preheat a waffle maker according to manufacturer's instructions.
  • Whisk egg, 2 teaspoons bagel seasoning, coconut flour, and baking powder together in a small bowl. Stir in mozzarella cheese.
  • Pour 1/2 of the batter onto the waffle maker and spread it out from the center with a spoon. Close the waffle maker and cook until the chaffle reaches your desired doneness and waffle maker stops steaming, 3 to 4 minutes.
  • Remove chaffle from waffle maker, place on a rack, and repeat process with remaining batter. Cool for several minutes to let them crisp up.
  • Spread each chaffle with 1/2 of the salmon cream cheese and garnish with remaining 1 teaspoon bagel seasoning, capers, and red onion. Cut out a circle in the center of the chaffle with a sharp knife or use a 1 1/2-inch round cookie cutter to make the chaffles look more authentic and fun.

1 (4 ounce) package smoked salmon
1 (8 ounce) container smoked salmon cream cheese spread
2 tablespoons sour cream
1 1/4 cups sour cream
1 tablespoon lemon juice
1 (8 ounce) package cream cheese, room temperature
1/2 cup chopped scallion
1/2 cup chopped fresh dill
1/4 cup chopped fresh flat-leaf parsley
1 (1/2 ounce) envelope vegetable dip, seasoning mix
1/4 cup finely chopped radish
2 tablespoons drained capers, chopped
1 tablespoon grated lemon zest

Steps:

  • Chop half of the smoked salmon and reserve. In a food processor, combine the remaining half of the smoked salmon with the salmon cream cheese spread, 2 T. sour cream and lemon juice; pulse until smooth. Transfer to a bowl, stir in the reserved chopped smoked salmon and set aside.
  • In a separate bowl, combine cream cheese and 3/4 cup sour cream. In a clean food processor, combine 3/4 cup of the cream cheese and sour cream mixture with the scallions, dill and parsley; process until smooth. Set aside.
  • Stir the seasoning mix, radishes, capers, lemon zest and remaining 1/2 cup sour cream into the remaining cream cheese-sour cream mixture.
  • To prepare layered dip, spoon half of the radish mixture over the bottom of a 1-quart straight-sided glass dish. Top with the salmon mixture, remaining radish mixture, then scallion mixture. Cover and refrigerate until ready to serve. Serve with bagel chips and raw vegetables.

hot water, for soaking
8 rice paper wrappers
8 bibb lettuces
8 oz smoked salmon, sliced
1 ½ cups english cucumber, cut into 2 in (5 cm)
⅓ cup red onion, thinly sliced
1 avocado, thinly sliced
1 tomato, thinly sliced
McCormick® Everything Bagel All Purpose Seasoning

Steps:

  • In a small bowl, mix together the cream cheese, lemon zest and juice, salt, and McCormick® Freeze-Dried Chives until smooth.
  • Pour 1 inch of hot water into a large, shallow dish. Dip a rice paper sheet in the hot water for 5-8 seconds, until slightly softened. Transfer to a flat surface and spread a thin layer of the cream cheese mixture over the center, leaving a 2-inch border around the edges. Place a Bibb lettuce leaf in the center of the rice paper and top with 1 ounce of smoked salmon slices, 2 tomato slices 3-5 cucumber sticks, 2-3 red onion slices, 1-2 avocado slices, and a sprinkle of McCormick® Everything Bagel All Purpose Seasoning. Fold the sides of the rice paper wrapper inward over the filling, then roll to seal. Place the roll, seam-side down, on a serving platter and cover with a damp towel to prevent it from drying out while you repeat with the remaining ingredients.
