Nova Lox Everything Breakfast Bagel image

I don't have the finances to always grab my favorite breakfast treats so this is my rendition of a local offering from a nearby bagel joint.

8 everything bagel thins
1 (8 ounce) container whipped cream cheese
1 medium tomato, sliced
1 (4 ounce) jar capers

Steps:

  • Split bagel thins and toast the bagel thins until lightly golden.
  • Smear 2 tablespoons whipped cream cheese on each bagel. Top each bagel with a tomato slice, 1 ounce flaked smoked salmon, and capers. Serve immediately.

Everything But The Bagel Lox Frittata image

This protein-packed frittata has everything you love about a bagel and lox, but in a bagel-less, easy to make egg casserole. With smoked salmon, cream cheese, and all the toppings, it's equally delicious for brunch or dinner! (gluten-free, low-carb)

4-6 oz lox (smoked salmon), cut into 1-inch pieces
1/2 cup chopped scallions (about 4)
3-4 oz plain whipped cream cheese
2 tsp everything bagel seasoning
6 large eggs
1 cup milk
1 tsp dijon mustard
1/4 tsp freshly cracked black pepper
For topping: capers, diced red onion, sliced tomato, fresh herbs, scallions, everything bagel seasoning

Steps:

  • Heat oven to 350°F. Grease a 9" or 10" baking dish.
  • Spread scallions and lox evenly over the bottom of the dish. Drop cream cheese by the teaspoon into the dish. Sprinkle with everything bagel seasoning.
  • In a large bowl, whisk the eggs, milk, dijon and pepper. Pour over lox in the baking dish.
  • Bake 25-30 minutes, or until eggs are just set. Remove from oven and cool slightly before serving.

Number Of Ingredients 12

Nonstick cooking spray, for the baking dish
5 everything bagels, cut into 1-inch hunks (stale bagels work great here!)
8 ounces whipped cream cheese
3 cups whole milk
10 large eggs, lightly beaten
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
1/2 red onion, finely diced
1/4 cup chopped fresh chives
8 ounces sliced smoked salmon
2 tablespoons capers

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray. Spread the bagel chunks in the dish in an even layer, then dollop the cream cheese around the baking dish, on top of and in between the bagel chunks.
  • In a large bowl, whisk together the milk, eggs, garlic powder, salt, pepper, half the red onion and half the chives until combined. Pour the mixture over the bagels in the baking dish. Cover the baking dish with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F. Set the baking dish out at room temperature while the oven heats.
  • Bake, still covered in foil, until mostly set, about 1 hour. Remove the foil and bake until the top is lightly browned, 10 to 15 minutes more. Let cool slightly for 10 to 15 minutes. Garnish the top with ribbons of smoked salmon, capers and the remaining red onion and chives. Serve immediately.

  • Whisk the eggs, cream, salt, pepper and dill together and pour into the melted butter. Cook until the edges start to set, about 2-3 minutes.
  • Chop the lox and drop all over the eggs. Break the cream cheese into small pieces and scatter over the eggs. Place the onion slices over the top and then sprinkle with the bagel seasoning. Bake for 20 minutes or until the edges are starting to brown and the eggs are set in the center. Let cool for 5 minutes before cutting.
