8 oz/224 g chicken breast
1/2 cup/75 g red grapes, quartered
2 tbsp/14 g toasted walnuts, roughly chopped
2 tbsp/8 g dill, roughly chopped
1/4 cup/25 g finely chopped scallion
1/2 cup/120 g low-fat Greek yogurt
1/4 tsp salt
Several grates of freshly ground black pepper
8 slices multigrain bread
2 cups/40 g arugula
1 cup/116 g thinly sliced radishes

Steps:

  • To cook the chicken, bring a saucepan of water to a boil over high heat. Add the chicken and simmer for 15 minutes, or until cooked through. Remove from water and cool completely. When cool, cut into 1/2-inch/1.3-centimeter dice. Place in a bowl with the grapes, walnuts, dill, scallions, yogurt, salt and black pepper. Stir to combine.
  • To assemble the sandwiches, place 4 slices of bread on a work surface. For each sandwich, top with 1/2 cup/10 grams arugula, 1/2 cup/70 grams chicken salad, 1/4 cup/29 grams sliced radishes and another piece of bread.
  • You can also try substituting shrimp for the chicken and hazelnuts for the walnuts!

1 1/2 pounds thin cut chicken breast meat (cutlets)
2 tablespoons vegetable oil
Grill seasoning (recommended: Grill Mates Montreal Steak Seasoning by McCormick) or coarse salt and pepper
3 rounded tablespoons chunky peanut butter
3 tablespoons dark soy sauce, Tamari, eyeball it
1/4 cup apple juice, eyeball it
2 teaspoons hot sauce, eyeball it
1 lime, juiced
1/4 seedless cucumber, thinly sliced lengthwise then cut into sticks
1 cup shredded carrots
2 cups shredded lettuce, iceberg or hearts of romaine
4 crusty rolls, Kaiser's or subs, split

Steps:

  • Heat a grill pan or large nonstick skillet to medium high to high heat. Coat chicken in oil and grill seasoning and cook 3 minutes on each side in 2 batches. Pile up meat and shred it with a sharp knife.
  • Place peanut butter in a medium, microwave safe bowl and soften in the microwave on high for 20 seconds. Whisk soy, apple juice, hot sauce and lime juice into peanut butter. Toss chicken with satay sauce. Combine shredded veggies. Place 1/4 of veggies on sandwich bottoms and top with 1/4 satay chicken mixture. Set the bun tops in place and serve or wrap for travel.

1-1/2 teaspoons all-purpose flour
1/2 cup fat-free milk
1/2 cup plain yogurt
1/4 cup reduced-fat mayonnaise
1/4 cup reduced-fat sour cream
1 tablespoon lemon juice
2 teaspoons grated onion
1/2 teaspoon salt
3 cups cubed cooked chicken breast
1 cup chopped celery
1 can (8 ounces) sliced water chestnuts, drained and coarsely chopped
1 cup seasoned salad croutons
1/4 cup slivered almonds, chopped and toasted
1 cup soft bread crumbs
1 tablespoon reduced-fat butter, melted
3/4 cup shredded reduced-fat cheddar cheese

Steps:

  • In a small saucepan, whisk flour and milk until smooth. Bring to a boil over medium heat;cook and stir for 2 minutes or until thickened. Remove from the heat. , In a large bowl, whisk the yogurt, mayonnaise, sour cream, lemon juice, onion and salt until smooth. Whisk in the milk mixture. Stir in the chicken, celery, water chestnuts, croutons and almonds., Spoon into a 2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 25 minutes. , Combine bread crumbs and butter; stir in cheese. Sprinkle over casserole. Bake, uncovered, 5-10 minutes longer or until heated through and cheese is melted.

10 ounces mixed field lettuce
3/4 cup gorgonzola
3/4 cup toasted walnuts
1/4 cup basil, chopped
1 full chicken breast, grilled
1 cup balsamic vinegar
2 cups canola oil
2 teaspoons salt
1 teaspoon pepper
2 tablespoons chopped fresh basil

Steps:

  • Place chopped lettuce in bowl. Add cheese, walnuts and basil and toss. Serve with chicken on top.
  • For dressing, add all ingredients to blender and blend. Refrigerate until ready to serve salad. Makes 3 cups, so there will be some to save.

3 pounds skinless, boneless chicken breasts
salt and ground black pepper to taste
1 cup olive oil
7 tablespoons white vinegar
6 tablespoons soy sauce
3 tablespoons minced fresh ginger
3 tablespoons light brown sugar
3 cloves garlic, minced
2 teaspoons crushed red pepper, or to taste
4 tablespoons sesame seeds
1 (16 ounce) package mixed salad greens
1 ¼ cups halved cherry tomatoes
¾ medium red onion, thinly sliced
3 mandarin oranges, peeled and segmented

Steps:

  • Heat oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the heat and set aside to cool.
  • While chicken is cooling, combine olive oil, vinegar, soy sauce, ginger, brown sugar, garlic, and red pepper in a Mason jar; close lid and shake vigorously until combined.
  • Chop cooled chicken and place in a bowl with dressing and sesame seeds; toss to combine.
  • Combine mixed greens, cherry tomatoes, and onion in a large bowl. Mix in dressed chicken and top with mandarin oranges.

Sammy's Charcoal Grill was a locally owned restaurant which was in business here from the early 1950's through the 1970's. Their steaks were outstanding. They were well known for their wedge lettuce salad which was covered with a generous serving of their special salad dressing. I have searched for their salad dressing recipe for years and finally found someone who had it. I'm putting it here for safe keeping so I won't lose it!

1 stalk celery
1 bell pepper
1/4 lb American cheese
2 hardboiled egg
1/8 cup granulated sugar
1 quart Miracle Whip
1 1/2 cups buttermilk
1 (14 ounce) bottle catsup
2 garlic cloves

Steps:

  • Chop celery, bell pepper and cheese.
  • Put in a blender with garlic & buttermilk and blend for 12-15 seconds.
  • Add eggs and blend for 3 more seconds.
  • Add Miracle Whip, catsup & sugar and blend until well mixed.
  • Refrigerate.
  • Serve over wedge of iceberg lettuce.
