FABULOUS BARBECUE CHICKEN KABOBS RECIPE - (4.4/5)

- Pour some water in a 9x13 pan and place 10-12 wooden skewers into it. Allow them to soak for an hour or so. Cut 3 to 4 chicken breasts, about 2 1/2 pounds, into 2-inch cubes. Place them in a medium-sized mixing bowl and sprinkle 2 teaspoons sea salt over the top. Toss the chicken to thoroughly coat. Cover with plastic wrap and refrigerate for 30 to 60 minutes. This will help to both flavor the chicken and keep it tender. Fire up your grill and heat it to 350°F. Slice 4 strips of raw bacon into 2-inch pieces. Place them into a small mixing bowl (or food processor). Use an immersion blender or food processor to turn the bacon into a thick paste. Sounds weird, I know...but it really gives the chicken a ton of flavor. It's bacon after all. King of flavor and delight. :) Into a small bowl place 2 teaspoons paprika, 3 teaspoons smoked paprika and 5 teaspoons sugar. Toss them together to combine. Pour the seasoning mixture into the bacon paste. Stir it well to combine. Take a paper towel and pat the chicken dry, then spoon the seasoning/paste mixture over the chicken. Toss the chicken thoroughly to combine. I just put both my hands into the bowl and mixed and mixed it all around, until the chicken was well coated. Make sure to wash your hands (super well!) when you are done. Thread the chicken pieces onto the skewers. Lay a large piece of tin foil on your grill and spray it with cooking spray. Set the chicken kabobs on the foil. Cook for about 8 minutes per side. When the chicken has cooked through brush each kabob with Sweet Baby Rays BBQ Sauce. Allow them to cook for 2 to 3 additional minutes so the sauce has a chance to heat through. Serve with additional BBQ Sauce.
FLAVORFUL GRILLED CHICKEN KABOBS
This originally stems from a Cook's Illustrated recipe. The homemade bbq sauce is replaced with bottled. I don't think the original recipe's sauce was anything special nor worthy of the effort to make. What is worth the effort is the bacon rub.

- Toss chicken and salt in large bowl; cover with plastic wrap and refrigerate for at least 30 minutes and up to 1 hour.
- Heat gas grill to medium high.
- While grill heats, pat chicken dry with paper towels. Combine sweet paprika, sugar, smoked paprika and pepper or chipotle powder in small bowl.
- Process bacon in food processor until a smooth paste forms, 30 to 45 seconds, scraping down bowl twice during processing. Add bacon paste and spice mixture to chicken; mixing with hands or rubber spatula until ingredients are thoroughly blended and chicken is completely coated.
- Thread meat onto skewers, rolling or folding meat as necessary to maintain 1-inch cubes.
- Place kebabs on grill, turning one-quarter turn every 2 to 2 1/2 minutes until well browned and slightly charred, about 8 minutes for breasts or 10 minutes for thighs. Brush top surface of kebabs with 1/4 cup sauce; flip and cook until sauce is brown in spots, about 1 minute. Brush second side with remaining 1/4 cup sauce; flip and continue to cook until brown in spots until cooked through, about 1 minute longer. Remove kebabs from grill and let rest for 5 minutes.
- Serve, passing reserved barbecue sauce separately.

- In a resealable plastic bag, combine the mustard and Worcestershire sauce and water, soy sauce and oil; remove 1/3 cup and set aside for basting. Cut chicken into 1-1/2-in. pieces; add to bag. - Heat gas or charcoal grill. In small microwavable bowl, mix barbecue sauce and marmalade. Remove 1/4 cup of the sauce mixture to small dish; set aside.
- On each of 4 (11-inch) metal skewers, thread chicken pieces, leaving 1/4-inch space between each piece. On 4 additional skewers, thread onion and bell pepper chunks, leaving 1/4-inch space between each piece. Brush chicken and vegetables with oil; sprinkle with seasoned salt.
- Place kabobs on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning kabobs 2 or 3 times and brushing chicken and vegetables with reserved 1/4 cup sauce mixture during last 5 to 8 minutes of grilling, until chicken is no longer pink in center.
