Steps:
- In the bowl of a standing mixer fitted with a dough hook, proof the yeast by combining it with the warm water and sugar. Stir gently to dissolve. Let stand 3 minutes until foam appears. Turn mixer on low and slowly add the flour to the bowl. Dissolve salt in 2 tablespoons of water and add it to the mixture. Pour in 1/4 cup olive oil. When the dough starts to come together, increase the speed to medium. Stop the machine periodically to scrape the dough off the hook. Mix until the dough is smooth and elastic, about 10 minutes, adding flour as necessary.
- Turn the dough out onto a work surface and fold over itself a few times. Form the dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin. Cover with plastic wrap or damp towel and let rise over a gas pilot light on the stovetop or other warm place until doubled in size, about 45 minutes.
- Coat a sheet pan with a little olive oil and corn meal. Once the dough is doubled and domed, turn it out onto the counter. Roll and stretch the dough out to an oblong shape about 1/2-inch thick. Lay the flattened dough on the pan and cover with plastic wrap. Let rest for 15 minutes.
- In the meantime, coat a small saute pan with olive oil, add the onion, and cook over low heat for 15 minutes until the onions caramelize. Preheat oven to 400 degrees F. Uncover the dough and dimple with your fingertips. Brush the surface with more olive oil and then add caramelized onions, garlic, olives, cheese, salt, pepper, and rosemary. Bake on the bottom rack for 15 to 20 minutes.

- In a large skillet, brown steak in oil over medium heat. Place steak and drippings in a 3-qt. slow cooker. Stir in the lemon juice, garlic, cumin, salt, chili powder and red pepper flakes. , Cover and cook on high until meat is almost tender, 2 hours. Add red pepper and onion; cover and cook until meat and vegetables are tender, 1 hour. , Warm tortillas according to package directions; spoon beef and vegetables down the center. Top as desired.

FABULOUS FAJITA PIZZA
Steps:
- 1. Preheat oven to 425°F. Cut bell peppers into 1/2 inch thick strips, onions into 1/2 inch thick wedges, and chicken crosswise into strips.
- 2. Roll out pizza dough on lightly floured surface and roll it out into a cirle. Heat skillet on high heat. Add 1/2 tsp. oil and chicken; stir-fry 2-3 minutes or until chicken is no longer pink. Remove from skillet. Add remaining oil and the veggies and seasoning. Press garlic over them. Stir-fry 1-2 minutes or until veggies are crisp-tender. Remove the skillet from heat and stir in the chicken and salsa. Sprinkle half of the cheese over the dough. Arrange chicken and veggie mix over the cheese. Sprinkle the rest of the cheese on top.
- 3. Bake 18-22 minutes on center rack or until the crust is golden brown. Let stand 10 minutes.

My kids hate onions and peppers, but they LOVE these fajitas. Pita breads, where available, can be substituted for tortillas.

Steps:
- Cut peppers and onion into thin slices. Do not dice, leave slices long and thin.
- Saute peppers and onion in a small amount of oil until tender. Add mushrooms and chicken. Continue to cook on low heat until heated through. Stir in dry salad dressing mix and blend thoroughly.
- Warm tortillas and roll mixture inside. If desired top with shredded cheddar cheese, diced tomato and shredded lettuce.

- Move oven rack to lowest position. Heat oven to 450°F. Spray 12-inch pizza pan with cooking spray.
- Heat 10-inch skillet over medium-high heat. Add oil; rotate skillet to coat bottom and side. Cook chicken in oil 3 minutes, stirring frequently. Stir in bell pepper and onion. Cook 3 to 4 minutes, stirring frequently, until vegetables are crisp-tender and chicken is no longer pink in center; remove from heat. Stir in salsa; set aside.
- Stir Bisquick mix and very hot water in small bowl until soft dough forms; beat vigorously 20 strokes. Press dough in pizza pan, using fingers dipped in Bisquick mix; pinch edge to form 1/2-inch rim. Sprinkle 3/4 cup of the cheese over crust. Top with chicken mixture. Sprinkle with remaining 3/4 cup cheese.
- Bake 12 to 15 minutes or until crust is brown and cheese is melted and bubbly.

- Preheat oven to 400°F.
- Unroll pizza crusts and arrange them side by side in a baking sheet.
- Roll dough with pastry roller.
- Bake for 15-18 minutes or until light golden brown.
- Slice peppers and onion.
- Coarsely chop cooked chicken.
- Heat skillet over medium heat. Add oil and garlic. Stir fry 30 seconds. Add peppers, onion and southwest seasoning; stir fry 1-2 minutes or until vegetables are tender.

- In a skillet over medium heat, brown the steak in oil. Place steak and drippings in a slow cooker.

- Preheat the oven to 425 degrees F (220 degrees C). Lightly grease 2 large baking sheets.
- Heat vegetable oil in a large skillet over medium heat. Add onion, yellow pepper, and green pepper to the skillet; cook until onion is translucent, about 5 minutes. Add chicken and cook, stirring occasionally, until slightly browned, 7 to 10 minutes. Stir in garlic and cook for 1 minute more.
- Mix chili powder, onion powder, garlic powder, oregano, paprika, salt, pepper, flour, coriander, and cumin together until combined. Add to chicken in the skillet and cook for 1 to 2 minutes. Pour in water, stir, and cook until mixture thickens, about 5 minutes.
