Chocolate chip cookies with a little bit of everything.

2 ½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup white sugar
1 cup packed brown sugar
½ cup butter
2 eggs
2 teaspoons vanilla extract
½ cup semisweet chocolate chips
⅓ cup candy-coated chocolate pieces
⅓ cup peanut butter chips
2 teaspoons honey
1 pinch ground cinnamon
¼ cup chopped walnuts

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Sift together the flour, baking soda, salt and cinnamon, set aside.
  • In a medium bowl, cream together the butter, brown sugar and white sugar. Beat in the eggs, vanilla and honey. Stir in the dry ingredients, then fold in the chocolate chips, chocolate candies, peanut butter chips and nuts. Drop dough by teaspoons onto an unprepared cookie sheet.
  • Bake for 15 to 18 minutes in the preheated oven, until the cookies are golden around the edges. Remove from the baking sheet to cool on wire racks.

There are a few secrets to the best classic, chewy chocolate chip cookies. Number one: Don't use chips; instead, opt for a mix of milk or semisweet and dark chocolate chunks. The second is to let the dough rest overnight or longer for a more complex, toffee-like flavor. Lastly, use an ice cream scooper to get even-sized cookies every time. And that's it! With these little tweaks, the result is a cookie that's textured on the outside, and soft and gooey on the inside. Absolutely perfect!

½ cup granulated sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup unsalted butter, melted
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
4 oz milk or semi-sweet chocolate chunks
4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown.
  • Cool completely before serving.

⅓ cup butter, softened
1 cup brown sugar
⅓ cup shortening
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons unsweetened cocoa powder
3 tablespoons confectioners' sugar for dusting

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, shortening and brown sugar until smooth. Beat in the egg and vanilla. Combine the flour, baking soda, salt and cocoa; gradually stir into the creamed mixture. Drop by rounded spoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. When cookies are cool, dust with confectioners' sugar.

I invented these cookies because I wanted a healthier version of the good old chocolate chip cookies...They are brown (due to the flaxseed meal), crisp on the outside but softer on the inside...and very flavorful. They turned out really nice and everyone liked them. Enjoy!

1 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups flax seed meal
1/4 cup oats
1/4 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup butter (room temperature)
2 egg whites
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350°. Line a cookie sheet with parchment paper.
  • In a small bowl combine first 5 ingredients (dry ingredients).
  • In a larger bowl beat sugars and butter until fluffy, then add egg white and dry ingredients, beat well.
  • Stir in chocolate chips.
  • Shape into little balls (I used my hands, but you could also use tablespoons I guess) and place on baking sheets. Press down with the palm of your hand (they won't spread, so press them as flat as you like your cookies).
  • Bake for 15-20 minutes (I baked them for 18 and liked them that way).

I've tried many recipes for roll-out, cut-out cookies and this is IT! The cookies are tender and have a perfect taste. It doesn't make a gigantic amount either. For chocolate cookies, stir 3 oz melted unsweetened chocolate into the dough.

1 cup white sugar
1 cup butter
1 large egg
1 teaspoon vanilla
2 teaspoons baking powder
3 cups flour

Steps:

  • Cream butter and sugar.
  • Beat in egg and vanilla.
  • Mix baking powder and flour and add it to the dough one cup at a time, mixing after each addition.
  • If the dough is too stiff, add water one tsp at a time.
  • Do not chill the dough.
  • Divide dough into two balls.
  • Between sheets of waxed paper, roll out each ball into a 12" diameter circle, 1/8" thick.
  • Cut out cookies.
  • Bake on an ungreased ccokie sheet at 400° for 6-7 minutes (or longer if large cutters are used).
  • Frost & enjoy!
