A really simple casserole that my family loves. It tastes like lasagna but is half the work. It makes alot, so I usually divide it into 3 dishes and freeze two. A real kid-pleaser.

1 lb ground beef, uncooked
1/4 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 (16 ounce) package pasta shells, cooked
6 cups mozzarella cheese
24 ounces cottage cheese
2 eggs
1/3 cup parmesan cheese
2 tablespoons parsley
3 (28 ounce) jars spaghetti sauce

Steps:

  • Assembly instructions:.
  • In a skillet, cook beef and onion until meat is no longer pink and onion is tender; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside.
  • In a large bowl, combine pasta, 3 cups of mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper; stir gently. Pour into a greased 13x9x2-inch baking dish or shallow 3 quart baking dish.
  • Top with beef mixture and spaghetti sauce (dish will be VERY full).
  • Freeze. Cover tightly with foil. Seal additional cheese in package attached to pans.
  • To serve:.
  • Thaw all day in refrigerator.
  • Baking Instructions:.
  • Cover with new layer of foil and bake at 350ºF for 45 minutes. Sprinkle with remaining mozzarella.
  • Bake, uncovered, 15 minutes longer or until the cheese is melted ad bubbly. Let stand 10 minutes before serving.
  • Serves 6 to 8 in a 13x9x2-inch pan OR.
  • Serves 4 in each 8x8-inch pan.

12 whole wheat lasagna noodles
1 pound lean ground beef
2 cloves garlic, chopped
½ teaspoon garlic powder
1 teaspoon dried oregano, or to taste
salt and ground black pepper to taste
1 (16 ounce) package cottage cheese
2 eggs
½ cup shredded Parmesan cheese
1 ½ (25 ounce) jars tomato-basil pasta sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, add the lasagna noodles a few at a time, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Remove the noodles to a plate.
  • Place the ground beef into a skillet over medium heat, add the garlic, garlic powder, oregano, salt, and black pepper to the skillet. Cook the meat, chopping it into small chunks as it cooks, until no longer pink, about 10 minutes. Drain excess grease.
  • In a bowl, mix the cottage cheese, eggs, and Parmesan cheese until thoroughly combined.
  • Place 4 noodles side by side into the bottom of a 9x13-inch baking pan; top with a layer of the tomato-basil sauce, a layer of ground beef mixture, and a layer of the cottage cheese mixture. Repeat layers twice more, ending with a layer of sauce; sprinkle top with the mozzarella cheese. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the casserole is bubbling and the cheese has melted, about 30 minutes. Remove foil and bake until cheese has begun to brown, about 10 more minutes. Allow to stand at least 10 minutes before serving.

1 (15 ounce) can crushed tomatoes
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
¼ cup water
3 tablespoons chopped fresh parsley, divided
1 tablespoon white sugar
¾ teaspoon dried basil
1 teaspoon salt, divided
½ teaspoon Italian seasoning
¼ teaspoon fennel seeds
⅛ teaspoon ground black pepper
12 lasagna noodles
1 egg, lightly beaten
1 (15 ounce) container ricotta cheese
12 ounces mozzarella cheese, sliced
6 ounces grated Parmesan cheese
cooking spray

Steps:

  • Heat oil in a Dutch oven over medium heat. Add onion and garlic; cook, stirring, until tender, 3 to 5 minutes. Stir in plant-based sausage, meat substitute crumbles, crushed tomatoes, tomato sauce, tomato paste, water, 1 tablespoon parsley, sugar, basil, 1/2 teaspoon salt, Italian seasoning, fennel seeds, and pepper. Bring to a boil; reduce heat and simmer, covered, stirring occasionally, until thickened, about 1 1/2 hours.
  • Bring a large pot of lightly salted water to a boil. Add lasagna noodles; cook 8 to 10 minutes. Drain and rinse noodles with cold water.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Meanwhile, stir together egg, ricotta, remaining 2 tablespoons parsley, and 1/2 teaspoon salt in a bowl.
  • To assemble lasagna, spread 1/3 of the sauce in a 9x13-inch baking dish. Arrange 6 noodles lengthwise over sauce. Spread with 1/2 of the ricotta mixture. Top with 1/3 of the mozzarella slices. Ridiculously easy lasagna, from Real Simple magazine. It would be easy to vary -- different sauces, add extra veggies, etc. I actually used refrigerated ravioli, and forgot to use foil. It puffed up beautifully, and didn't overbrown. Delicious!

1 (18 ounce) bag frozen large cheese ravioli, unthawed
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 (8 ounce) bag shredded mozzarella cheese
1/2 cup grated parmesan cheese (2 ounces)

Steps:

  • Heat oven to 350°F.
  • Spoon 1/3 of the sauce into a 9-by-13-inch baking dish.
  • Place 12 ravioli on top.
  • Cover with the spinach and half the mozzarella.
  • Add another layer of ravioli and the remaining sauce, mozzarella, and the Parmesan.
  • Cover with foil and bake for 25 minutes.

Which is the better comfort food: lasagna or cake? You don't have to choose! For this lasagna look-alike, we layered pound cake, pureed berries and sweetened ricotta in a baking dish, then we topped the whole thing with melted white chocolate to look like mozzarella. And we popped it under the broiler to give it that just-baked look. When you cut into it, it's messy and delicious - just like the real thing!

2 16-ounce frozen pound cakes, slightly thawed
3 cups frozen mixed raspberries, strawberries and cherries, slightly thawed
1/4 cup confectioners' sugar
4 to 5 drops liquid yellow food coloring
1/4 cup heavy cream
3/4 cup ricotta cheese
1 4-ounce bar white chocolate, chopped
Chopped fresh mint, for topping

Steps:

  • Turn the pound cakes on their sides and thinly slice with a long serrated knife. You should get 4 or 5 lasagna noodle-size pieces from each cake.
  • Make the sauce: Combine the berries and 2 tablespoons confectioners' sugar in a bowl and puree with an immersion blender until mostly smooth. Stir in the yellow food coloring.
  • Whisk the heavy cream with the remaining 2 tablespoons confectioners' sugar in a bowl until soft peaks form. Fold in the ricotta.
  • Arrange a layer of cake in a 9-by-13-inch baking dish, trimming the pieces to fit. Spread one-third of the berry mixture on top.
  • Dollop some of the ricotta mixture on top.
  • Gently spread the ricotta mixture, then continue to cover the whole cake (you should use about half of the mixture).
  • Top with another layer of pound cake, then a layer each of berry sauce and ricotta and a final layer of pound cake. Spread with the remaining berry sauce.
  • Microwave the white chocolate in a microwave-safe bowl in 20-second intervals, stirring, until melted. Spoon over the cake and gently spread.
  • Broil until the white chocolate is golden in spots, or lightly brown the top with a kitchen torch. Top with mint.

Transfer to a greased shallow 3-qt. or 13x9-in. baking dish. Top with beef mixture and spaghetti sauce (dish will be full). , Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, until bubbly and cheese is melted, 15 minutes longer. Let stand for 10 minutes before serving. Freeze option: Sprinkle casserole with remaining mozzarella cheese. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

2 cans sliced mushrooms
1 big bag wide egg noodles
2 cans Hunts Italian Sausage Spaghetti Sauce
2 bag s Kraft Shredded Mozzarella Cheese

Steps:

  • Brown hamburger and mushrooms. Cook and drain noodles.
  • Spray 9x13 pan and put half of hamburger in bottom. Put half of noodles on top of hambuger, 1 can of spaghetti sauce and spread it around top with mozzarella cheese. Put rest of hamburger on top of the cheese, then put rest of noodles on top of that and put second can of spaghetti sauce and spread it around. Then put the second bag of cheese on top and spread it around good.
  • Put in oven at 350°F for 20 minutes then enjoy with your favorite bread.
