Heidi Klum's Sauerkraut Soup

3 medium onions
Vegetable oil
for drizzling
1 pound ground beef
Salt and pepper
2 cups chopped mushrooms (small white ones)
1 2-pound bag sauerkraut
1 28-ounce can peeled tomatoes
1 cup vegetable broth
1 bottle shish kebab sauce
2 cups water
1/2 cup heavy cream

Steps:

  • Cut onions in small cubes and brown in pan with a drizzle of oil
  • Add ground beef, salt and pepper, and brown meat
  • Cut mushroom in small pieces and add to meat and onions
  • Add sauerkraut, tomatoes, vegetable broth and shish kebab sauce, and simmer for 15 minutes, adding water when needed (you may need more than 2 cups)
  • Right before serving, stir in heavy cream

5 large white onions, chopped fine
2 tablespoons olive oil
3 (14 -16 ounce) cans sauerkraut
2 (6 -8 ounce) cans sliced mushrooms
5 whole sweet gherkins, chopped rough
1 (12 ounce) bottle Heinz Chili Sauce (or regular ketchup)
2 quarts vegetable broth, made from 4 vegetable bouillon cubes
salt and pepper
heavy cream

Steps:

  • Sauté ground beef and pork and onions with olive oil in a soup pot until brown.
  • Add sauerkraut and mushrooms (with their liquids) and pickles; stir together with the meat.
  • Add entire bottle of sauce or ketchup and the vegetable broth.
  • Simmer for 45 minutes, stirring occasionally.
  • Add salt and pepper to taste.
  • Add heavy cream and cook for 1 more minute, then serve.

Even the people in my family who claim to "hate" sauerkraut love this soup. It is my adaptation from a recipe I had that I KNEW the family would NOT like. This is so good on a cold winter day served with warm crusty bread and a nice German Beer. This can be low(er) carb too by using a LC thickener.

3 tablespoons butter
1 lb smoked sausage (Kielbasa)
1/2 teaspoon onion powder (can use 1 chopped onion if your family likes onion)
1/3 cup flour
1/2 teaspoon thyme
1 tablespoon parsley
1/2 teaspoon black pepper
2 cups chicken broth
1 cup milk
1 cup half-and-half
8 ounces sauerkraut, with juice
4 ounces Velveeta cheese, cubed

Steps:

  • Melt butter in a large dutch oven.
  • Chop the sausage coarsely by hand or in a food processor (leave the casing on).
  • Transfer the sausage to pan with melted butter, and season with onion powder (or add onion).
  • Saute over medium heat until the sausage is lightly browned, about 10 minutes.
  • On a small plate combine the flour, thyme, parsley and pepper. Add to the sausage and brown all together until the mixture bubbles up, about 5 minutes.
  • Add the chicken broth, milk and the half-and-half, and cook stirring until the mixture again bubbles up, about 5 minutes.
  • Add the sauerkraut and it juice and bring to a boil; the mixture will continue to thicken.
  • Reduce heat and add Velveeta, stirring until melted.

This is a very special Slovak Christmas soup made with sausage, ham and sauerkraut. I have made it for many foreigners and they were always amazed.

1 (32 ounce) package sauerkraut, chopped
2 ½ quarts chicken broth
6 black peppercorns
4 bay leaves
salt to taste
2 cups dried forest mushroom blend
¾ pound Hungarian style dry paprika sausage
¾ pound smoked ham
¾ cup chopped pitted prunes
2 tablespoons vegetable oil
1 large onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons sweet Hungarian paprika
1 cup water
1 cup sour cream

Steps:

  • Place the sauerkraut, chicken broth, peppercorns, bay leaves, salt and mushrooms into a large pot, and bring to a boil. Add the sausage and whole piece of ham. Let it simmer over medium heat for 1 1/2 hours. Add the prunes after the first hour.
  • Remove the meat from the soup, and set aside. Remove bay leaves, and discard.
  • Heat the oil in a large skillet over medium heat. Add the onion, and fry until clear. Sprinkle the flour and paprika over the onion; cook and stir for a minute. Gradually stir in the water with a fork so that no lumps form. Bring to a boil, and allow to thicken. Pour into the soup pot. Cube the sausage and ham, and stir into the soup. Bring to a boil, and cook for another 10 minutes.
  • To serve, ladle into bowls, and top with a dollop of sour cream.

1 pound smoked Polish sausage, cut into 1/2- inch pieces
5 medium potatoes, peeled and cubed
2 medium onions, chopped
2 carrots, cut into 1/4-inch slices
3 cans (14-1/2 ounces each) chicken broth
1 can (32 ounces) sauerkraut, rinsed and drained
1 can (6 ounces) tomato paste

Steps:

  • In a large saucepan or Dutch oven, combine sausage, potatoes, onions, carrots and chicken broth; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until potatoes are tender. , Add sauerkraut and tomato paste; mix well. Return to a boil. Reduce heat; cover and simmer 30 minutes longer. If a thinner soup is desired, add additional water or chicken broth.
