CHICKEN SALAD CROISSANT SANDWICHES
Parmesan cheese and dill make this the most incredible chicken salad I've ever tasted. For the no-cook version, use canned chicken. These sandwiches are a simple entree to serve at parties, showers or picnics.-Jaclyn Bell, Logan, Utah

- In a small bowl, combine the first six ingredients. In another bowl, whisk mayonnaise, buttermilk, lemon juice and seasonings. Pour over chicken mixture; mix well. Spoon chicken salad onto croissant bottoms. Replace tops.

FANCY CHICKEN SALAD AND CROISSANT SANDWICHES
This is the only chicken salad I like! I have made these for many potlucks and people just rave over them. This recipe has a crisp, clean, and sweet taste. Not your regular old chicken salad!

Steps:
- Drain chicken and dump contents in bowl.
- I use a potato peeler and peal my apple. Sometimes I just scrape the whole apple and chop the scrapings. Or you could just finely chop the whole apple.
- I usually cut the grapes in half with a knife. or I take a grape between my thumb and index finger and smash it and it break into 2 pieces. I do this to over half the bag. That works 2!
- Add the mayo and stir all together.
- Cut croissants in half and spoon mixture on.
- This looks very pretty and elegant!

GUS'S KITCHEN SINK FRITTATA CROISSANT SANDWICH AKA CROISSATA

- Adjust an oven rack to the middle position and set the oven to broil on high.
- In an ovenproof 12-inch nonstick skillet set over medium heat, add the bacon and cook until just crisp, 4 to 5 minutes. Set aside. Add the sausage to the skillet and cook, breaking it up, until well browned, about 6 minutes. Add the sausage to the bacon, leaving behind the pork fat in the skillet.
- In a bowl, whisk the eggs and half-and-half together. Add the egg mixture to the skillet with the pork fat and cook over medium heat, stirring with a rubber spatula, scraping and tilting the skillet to slide the egg mixture around the skillet, until the bottom is set and the top is still wet and glistening, 2 to 3 minutes. Add the cooked meats and cheeses and season with salt and pepper. Use a spatula and press the ingredients into the eggs.
- Place the skillet in the oven and cook until lightly golden on top and puffed up, 2 to 4 minutes. Let the frittata rest for about 5 minutes before slicing. Slide the frittata on a cutting board and cut into wedges roughly the size of each croissant.
- Schmear the cut side of each croissant half with Giardiniera Chive Cream Cheese. Lay a couple of tomato slices right on there. Place a big wedge of frittata on each croissant. Close up and eat!
- Using a fork or small mesh sieve, drain the giardiniera from the jar and let most of its oil drip back into the jar. Place the drained giardiniera into a bowl with the softened cream cheese, chives and honey. Season with salt and pepper. Whisk vigorously until light and smooth. Season to taste.
GRILLED & SEASONED CHICKEN CROISSANT SANDWICHES
I tried a similar recipe at a fine restaurant and just thought I'd try to copy it. It turned out very much to my liking. My family loves it including Canary Girl who is my daughter who got me addicted to this website!!!

Steps:
- Grill breasts over medium coals till cooked through.
- Saute mushrooms in small amount of butter.
- Shortly before taking breasts off grill top with mushroom and swiss cheese long enough to melt cheese.
- Spread mayo and your favorite mustard on croissant and add chicken breasts topped with alfalfa sprouts.
- Awesome!
