JAMIE OLIVER'S FANTASTIC FISH PIE (GLUTEN-FREE + LOW FODMAP)

Jamie Oliver's Fantastic Fish Pie (Gluten-Free + Low FODMAP) image

I adapted this recipe from Jamie Oliver's first cookbook, Happy Days with the Naked Chef. I made it dairy-free and healthy with loads more veggies and streamlined the steps to dirty fewer pans. I would have never thought to add hard boiled eggs if not for Jamie, but they are SO good. To make this low FODMAP simply omit the leeks.

Provided by Phoebe Lapine

Number Of Ingredients 13

2 pounds potatoes (peeled and cut into 2-inch cubes)
Sea salt
2 large eggs
Olive oil
1 leek (halved and thinly sliced (optional, see note))
1 large carrot (diced)
1 cup coconut cream (or the thicker half of a can of full fat coconut milk)
3 tablespoons fresh lemon juice (from 1 lemon)
2 teaspoons Dijon mustard
5 ounces baby spinach
1/4 cup frozen peas
1 pound haddock (cod or hake fillets (skin removed), cut into 1-inch pieces)
¼ cup finely chopped parsley (divided)

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the potatoes in a large pot of salted water and bring to a boil. Cook for 5 minutes, then carefully add the eggs. Boil for an additional 5-7 minutes, or until the potatoes are fork tender. Remove the eggs with a slotted spoon and set aside to cool.
  • Drain the potatoes in a colander, shaking out the excess moisture, then return to the pot. Mash the potatoes coarsely with a fork or potato masher. Add 2 tablespoons of olive oil and taste for seasoning. Don't worry if they look dry and crumbly, but feel free to add a splash of stock! Set aside.
  • When the hard boiled eggs are cool enough, remove the shell and cut them into quarters.
  • Meanwhile in a large (12 to 15 inch) oven-safe skillet or casserole dish, heat 2 tablespoons of olive oil over medium heat. Sauté the leeks and carrots until soft, about 5 minutes. Stir in the coconut cream and bring to a simmer. Off the heat, whisk in the lemon juice, Dijon and ½ teaspoon salt. Fold in the spinach until wilted. Then add the peas, fish, eggs and half the parsley. Arrange the fish mixture in an even layer and cover with the potatoes, smushing them out to fully cover the pie - the more rustic and uneven the top, the more crispy bits there will be. Drizzle the potatoes with a little more olive oil.
  • If your skillet is very full, place it on a baking sheet. Bake the fish pie uncovered in the oven for 20 minutes, or until the potatoes are golden brown and the sides are bubbling. Remove from the oven and allow to rest for 5 minutes before serving. Garnish with the remaining parsley and enjoy!

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 14

5 large potatoes, peeled and diced into 2 . 5cm/1 inch squares
salt & freshly ground black pepper
2 free range eggs
200 g fresh spinach
1 onion, finely chopped
1 carrot, halved and finely chopped
extra virgin olive oil
600 ml cream
200 g cheddar cheese
1 lemon, juice of
1 teaspoon English mustard
100 g flat leaf parsley, finely chopped
500 g haddock or 500 g cod fish fillets, skin removed pin boned and sliced into chunks
nutmeg (optional)

Steps:

  • Preheat the oven to 230°C/450°F/gas 8.
  • Put the potatoes into salted boiling water and bring back to the boil for 2 minutes.
  • Carefully add the eggs to the pan and cook for a further 8 minutes until hard boiled, by which time the potatoes should also be cooked.
  • At the same time steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze any excess moisture away.
  • Then drain the potatoes in the colander.
  • Remove the eggs, cool under cold water, then peel and quarter them. Place to one side.
  • In a separate pan slowly fry the onion and carrot in a little olive oil for about 5 minutes, than add the double cream and bring just to the boil. Remove from the heat and add the cheese, lemon juice, mustard and parsley.
  • Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce.
  • The cooked potatoes should be drained and mashed - add a bit of olive oil, salt, pepper and a touch of nutmeg if you like. Spread on top of the fish. Don't bother piping it to make it look pretty - it's a homely hearty thing.
  • Place in the oven for about 25-30 minutes until the potatoes are golden.

CHEF JOHN'S FISHERMAN'S PIE

Chef John's Fisherman's Pie image

My Fisherman's Pie gives you flaky cod mingled with spinach in a garlic and lemon-scented sauce underneath a browned crust of creamy, buttery potatoes on top. It really does taste fantastic.

Provided by Chef John

Categories     Seafood     Fish

Time 1h35m

Yield 6

Number Of Ingredients 19

3 russet potatoes, peeled and cut into chunks
3 tablespoons butter
1 pinch freshly grated nutmeg
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ cup milk
2 teaspoons olive oil
12 ounces baby spinach leaves
3 tablespoons butter
3 tablespoons all-purpose flour
2 cloves garlic, minced
2 cups cold milk, divided
2 teaspoons lemon zest
1 tablespoon butter
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 pounds boneless cod fillets
½ lemon, juiced
1 tablespoon chopped fresh chives for garnish

Steps:

  • Bring a large saucepan of salted water and to a boil; add russet potatoes to boiling water and cook until very tender, about 20 minutes. Drain well. Mash in 3 tablespoons butter until thoroughly combined. Season with nutmeg, salt, black pepper, and cayenne pepper to taste. Mash 1/2 cup milk into potato mixture until smooth.
  • Drizzle olive oil in a large Dutch oven over medium-high heat, add spinach, and season with a big pinch of salt. Cook, stirring occasionally, until spinach has wilted, about 1 minute. Transfer to a bowl lined with paper towels to wick away excess moisture.
  • Heat 3 tablespoons butter and flour in a saucepan over medium heat; whisk mixture to a smooth paste. Cook, stirring constantly, until mixture has a nutty smell and is slightly browned, about 2 minutes. Add chopped garlic; whisk until fragrant, 10 to 20 seconds.
  • Whisk 1 cup cold milk into flour mixture; cook until thickened. Whisk in remaining 1 cup milk and lemon zest. Bring white sauce to a gentle simmer, whisking constantly; season with salt. Turn heat to very low and keep sauce warm.
  • Preheat oven to 375 degrees F (190 degrees C). Grease an 8x12-inch casserole dish with 1 tablespoon butter.
  • Season buttered pan with salt, black pepper, and cayenne pepper. Lay boneless cod fillets into the pan in a single layer. Season tops of fillets with more salt, black pepper, and cayenne pepper. Spread spinach evenly over fish and drizzle with lemon juice. Spoon white sauce over spinach; give casserole dish several taps and shakes to eliminate bubbles.
  • Drop mashed potatoes by heaping spoonfuls over the casserole and spread smoothly to cover. Place dish onto a rimmed baking sheet to catch spills.
  • Bake in the preheated oven until bubbling, about 40 minutes. Turn on oven's broiler and broil until potato crust has a golden brown top, about 2 minutes. Fish should flake easily. Let stand 10 minutes before serving. Garnish with a sprinkle of chives.
