6oz raspberries
1/4 cup water
2 tablespoons sugar
1/4 cup balsamic vinegar (raspberry if you can find it)
1/2 cup olive oil
2 tablespoons raspberry syrup

Steps:

  • This whole idea came about because these beautiful raspberries were on sale at work for $2 off per container. So, of course, I bought three with no plan whatsoever. Aren't they gorgeous?
  • I try not to use words like gorgeous because it makes my husband make fun of me, but seriously... look at them!
  • I dumped a freshly washed 6oz container into a saucepan,
  • and added 1/4 cup water and 2 Tbs. sugar.
  • Stir together over medium heat, and bring to a bubble.
  • As you stir, break up the berries, so that you're left with a bubbly mush. Let it keep bubbling away for a few more minutes.
  • The whole process should take about 10 minutes from the time you turn on the heat. You'll be left with a delicious smelling ruby porridge.
  • Ok so technically I guess it's not really a syrup as most people think of it, but for our purposes that's what I'm calling it. Add 2 Tbs. of the raspberry syrup to a bowl.
  • If you can find raspberry balsamic definitely use that here.
  • Any balsamic will do the trick however, so add 1/4 cup of whatever is handy.
  • Pour in 1/2 cup good quality olive oil.
  • Set about the whisking.
  • It's just a matter of a few minutes and some vigorous whisking before you're left with a thick, sweet, and tangy dressing.
  • Now you're ready to spruce up any meat or salad.
  • It's so easy and so good!

  • Using a wooden spoon, push raspberries through a handheld wire strainer to puree.
  • In a medium bowl, whisk together 2 tablespoons raspberry puree, lemon juice, vinegar, and sugar.
  • In a slow but steady stream, whisk in olive oil until emulsified. Season with salt and pepper. Vinaigrette can be made 1 day in advance and stored in an airtight container in the refrigerator.

4 tablespoons extra virgin olive oil
1 tablespoon water
1 tablespoon fresh lime juice

½ teaspoon salt

  • Puree the raspberries in a blender. Strain the seeds out using a fine mesh strainer.
  • Return the puree to the blender and add the oil, vinegar, lime juice, mustard, honey, salt and pepper.
  • Blend on low until well combined.
  • Transfer the vinaigrette to a container and refrigerate for at least 20 minutes.
  • Store the raspberry lime vinaigrette in a airtight container in the fridge for up to 4 days.

An easy way to make use of the summer's best produce, my homemade raspberry vinaigrette dressing is oh so easy to make. With just three base ingredients, this raspberry vinaigrette recipe is gluten-free, vegan and has no added sugar - just plenty of goodness.

2 cups raspberries
1/4 cup wine vinegar (red or white)
2 Tbsp olive oil (extra virgin)
1/2 tsp salt
1/4 tsp black pepper
sweetener (optional - honey, agave, maple, erythritol, or sugar)

Steps:

  • Rinse the raspberries and place them in a small saucepan. Roughly mash the raspberries with a potato masher or fork.If you think that the raspberries are not sweet enough, you can then add 1-2 tsp of sweetener.
  • Heat them on low heat for about 5 minutes. This will help to intensify the flavors. Stir the mixture occasionally.
  • Once reduced, sieve the mixture with a fine mesh strainer. This helps to get rid of the raspberry seeds and excess thick fruity pulp. If you don't mind your dressing with a bit of "body", feel free to skip this step.
  • Allow the raspberry mixture to cool before mixing with the remainder of the vinaigrette ingredients - olive oil, vinegar, salt, and pepper. Whisk well. Taste the dressing and adjust the sweetness/acid, as needed. I like to allow the dressing an hour or two to infuse. However, it is ready to use immediately.
