FATTET MAKDOUS - STUFFED AUBERGINE LAYERS
A levantine specialty featuring baby aubergines stuffed with spiced minced meat layered on a bed of toasted pita slathered in Tahini yoghurt.

Steps:
- Toast pine nuts in a pan. Set aside.
- Cut pitas in cubes. Fry in olive oil. Allow to cool.
- Mix yoghurt with tahini, garlic, lemon juice, salt and chopped parsley. Set aside.
- Melt butter in a pan over medium heat, add the meat and stir until dry. Add onion and season with salt, pepper and 7 spices. Cook until fragrant.
- Peel the aubergines about 1 cm width (leaving some strips of skin on). Make a slit along the side. Deep fry in oil until golden brown or bake until tender.
- In a cooking pan, add the tomato paste and chopped tomatoes. Season with salt, pepper and cumin. Carefully place the fried aubergines over the tomatoes, allow to cook for 15 minutes.

- First, make the red sauce. Heat a little oil in a pan, then add the cumin seeds and fry until they smell fragrant. Add the rest of the ingredients along with ½ tsp salt and 200ml water, and cook until the sauce thickens a little - it should be the consistency of single cream.
- Trim the tops off the baby aubergines, then peel strips of skin off in stripes and hollow out the core out with a small sharp knife or the end of a teaspoon. Soak the aubergines in salted cold water so they keep their colour, then drain well, squeeze lightly and pat dry.
- Fill a pan one-third full of oil and heat until a cube of bread browns in 30 seconds. Deep-fry the flatbread pieces until they are crisp and browned but not burnt, about 30-40 seconds. Drain well. Deep-fry the aubergine in batches for 4-5 mins until browned and tender, then drain on kitchen paper.
- Fry the minced lamb in a pan with a little olive oil until browned and cooked through, then add the pine nuts and season. Stuff the aubergines with the lamb mince mixture - you can either stuff the mince into the hole at either end, or split the aubergines and then add the stuffing (this way allows you to get more lamb in). Put the stuffed aubergines in a pan with 6 tbsp of the red sauce and cook for 5 mins.
- Put the Greek yogurt, tahini, lemon juice, garlic and some salt in a bowl, and mix well. If it feels a little thick, add some cold water. You can make this ahead and chill in the fridge until ready to serve.
- To serve, spoon the tahini yogurt into a large bowl. Top with a handful of the flatbread chips, the aubergines and all the red sauce. Finish with a sprinkle of cashew nuts, then serve the rest of the chips on the side.

- In a large skillet over medium-high heat, soften the onions and garlic with the seven-spice powder in the clarified butter. Add the meat and cook, breaking it up with a wooden spoon, until starting to brown. Add the pine nuts, cilantro and pomegranate molasses. Season with salt and pepper. Set aside.
- Using a vegetable peeler, remove most of the skin from the eggplants, leaving a few strips to hold the eggplants together as they cook. Slice the stem ends off of the eggplants. Cut the eggplants in half lengthwise. Using the tip of a knife, make a few incisions in the flesh of the eggplants. Using a small spoon, dig out the centre of each eggplant to make a space for the filling. Set aside the removed flesh for another use.
- Place the pita chips in a large serving dish. Cover with half of the yogurt sauce. Gently place the eggplants over the yogurt sauce. Cover with the tomato sauce and the remaining yogurt sauce. Garnish with the pistachios, pine nuts, pomegranate seeds and cilantro. Sprinkle with the Aleppo pepper.
