COCONUT (HAUPIA) AND CHOCOLATE PIE
This pie is a chocolate coconut lover's dream, very rich and delicious.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bake crust for 15 minutes, or until golden brown. Set aside to cool.
- In a medium saucepan, whisk together milk, coconut milk and 1 cup sugar. In a separate bowl, dissolve the cornstarch in water. Bring coconut mixture to a boil. Reduce to simmer and slowly whisk in the cornstarch. Continue stirring mixture over low heat until thickened, about 3 minutes.
- In a glass bowl, microwave chocolate chips for 1 minute or until melted. Divide the coconut pudding evenly into two bowls. Mix chocolate into one portion. Spread on the bottom of the pie crust. Pour the remaining portion of pudding on top of the chocolate and spread smooth. Refrigerate for about an hour.
- Whip cream with 1/4 cup sugar until stiff peaks form. Layer the cream on pie; if desired garnish with chocolate shavings.

This pie brings back great memories of being stationed back in Hawaii. This was one of our favorite desserts. I'm so glad we don't have to be on the island to enjoy this great dessert.

- In a small sauce pan, melt chocolate chips for 1 minute or until melted. Reserve 1/2 of the coconut mixture. Mix remaining half with the melted chocolate and pour in bottom of pie crust; pour reserved half on top of chocolate layer. Cover and refrigerate for about an hour.
- Whip cream with 1/4 cup sugar until stiff peaks form. Layer the cream on pie; if desired garnish with chocolate shavings. Best if it refrigerates over night to completely firm.

- Pie Crusts: Prepare two pie crusts according to your favorite recipe, or buy pre-made crusts. Both must be baked before the filling is done. Chocolate Filling: Prepare one large box of chocolate pudding. Pour chocolate into the pie shells to fill them halfway. Refrigerate. Haupia Filling: Mix the corn starch with a large part of the milk in a saucepan before placing it on the heat to avoid lumps. Place the pan on medium heat and add all the rest of the ingredients. Whisk until it thickens. Pour haupia into the pie shells on top of the chocolate. Refrigerate. This pie is especially delicious with fresh whip cream on top :)

- Bake pie crust until golden brown according to recipe or if using a pre-made crust, bake accourding to package instructions. Remove from oven and allow crust to cool.
- In a liquid measuring cup or small bowl, combine 1/2 cup whole milk and 5 tablespoons cornstarch and mix until cornstarch is dissolved. Set aside. In a medium-sized saucepan over medium heat, whisk together coconut milk, 1 cup whole milk, and sugar. Bring to a simmer, whisking often.
- Stir cornstarch mixture before adding to coconut milk mixture. Add cornstarch mixture slowly while whisking constantly. Continue whisking until mixture becomes thick, like a thick pudding (this is "haupia"). It is very important that the mixture is thick before moving to the next steps. Place about half of the haupia mixture into a separate bowl and set aside. Add chocolate chips to the remaining mixture in the sauce pan and stir until chocolate chips are completely melted and well combined.
