These Swiss cookies, sometimes spelled Brazeli or Bratzeli, are made with a specialty iron much like a waffle iron, but the results are thinner. You can also use a pizzelle iron.

7 c. all-purpose flour
1 tbsp. ground cinnamon
1/4 tsp. Coarse salt
1 c. unsalted butter
1 1/2 c. sugar
1 tbsp. pure vanilla extract
1 tbsp. pure lemon extract
Finely grated zest of 1 lemon (optional)
2 large eggs
1 c. heavy cream
Vegetable oil cooking spray

Steps:

  • Whisk together 3 cups flour, the cinnamon, and salt in a medium bowl; set aside. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy. Add extracts, and zest if using; mix until combined. Add eggs; mix until combined.
  • Whisk cream in a medium bowl until just slightly thickened. Fold into butter mixture.
  • Reduce mixer speed to low. Add flour mixture, and mix until just combined. Add remaining flour, 1 cup at a time, mixing until incorporated after each addition, until dough is just soft enough to handle but still slightly sticky. Roll tablespoons of dough into balls.
  • Coat a bratseli or pizzelle iron with cooking spray, and heat. Place 1 ball of dough in each grid, and press handle down tightly. Cook bratseli until golden (some machines have a green light that will illuminate when done), 1 to 1 1/2 minutes. Trim edges, if needed. Let cool completely on wire racks. Cookies can be stored between layers of parchment in airtight containers at room temperature up to 2 weeks.

Steps:

  • In a medium bowl, cream the butter and sugar. Stir in the flour and vanilla. Roll dough into two logs about 10 inches long. Roll dough logs in finely chopped nuts so that the whole surface is coated. Wrap in plastic and refrigerate for up to two hours.

1/2 cup butter, softened
3/4 cup sugar
1 large egg
3/4 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
ROYAL ICING:
3-3/4 cups confectioners' sugar
1/3 cup warm water
4 teaspoons meringue powder
Red, green, yellow, turquoise and purple paste food coloring

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Shape dough into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with floured 2-1/2-in. cookie cutters. Place 1 in. apart on ungreased baking sheets., Bake 8-10 minutes or until golden brown. Remove from pans to wire racks to cool completely., For icing, in a bowl, combine confectioners' sugar, water and meringue powder; beat on low speed just until blended. Beat on high 4-5 minutes or until soft peaks form., Divide and tint icing with colors of your choice. Keep unused icing covered at all times with a damp cloth. If necessary, beat again on high speed to restore texture., Working quickly with one color at a time, pipe outlines on some of the cookies; fill centers with thinned icing of the same color. Let stand until set. , If desired, add designs or writing to cookies. Let stand at room temperature for several hours or until icing is completely firm. Store in airtight containers.

1-3/4 cups flour
1/2 tsp. baking powder
3/4 cup butter or margarine, softened
1/2 cup granulated sugar
1 egg
1 tsp. vanilla
2 cups powdered sugar
2 Tbsp. milk
3 Tbsp. sprinkles

Steps:

  • Heat oven to 400°F.
  • Reserve 1 Tbsp. dry gelatin mix. Combine remaining dry gelatin mix with flour and baking powder. Beat butter in large bowl with mixer until creamy. Add granulated sugar; beat until light and fluffy. Blend in egg and vanilla. Gradually add flour mixture, beating well after each addition.
  • Shape dough into 30 (1-inch) balls. Place, 2 inches apart, on baking sheets. Flatten with bottom of clean glass.
  • Bake 8 to 10 min. or until edges are lightly browned. Cool on baking sheets 1 min. Remove to wire racks; cool completely.
  • Whisk powdered sugar, reserved gelatin mix and milk until blended; spread onto cookies. Top with sprinkles.
