FESTIVE FRUIT GELATIN MOLD



Festive Fruit Gelatin Mold image

Number Of Ingredients 6

Three 3-ounce boxes pineapple gelatin
Two 12-ounce cans seltzer, chilled
One 15-ounce can mandarin oranges in light syrup, drained
3 cups blackberries
1 cup blueberries
1 1/4 cups mixed berries, for serving

Steps:

  • Prepare the gelatin mix according to the package instructions, using the seltzer in place of the cold water. Allow to cool for 30 minutes.
  • Meanwhile, place a mandarin followed by a blackberry in the grooves of a 2.1-quart fluted bundt pan. Repeat to form a circle. Pour in just enough of the gelatin to cover the fruit (about 1 1/2 cups). Chill until set, about 1 1/2 hours, leaving the remainder of the gelatin mix on the counter.
  • Sprinkle the blueberries in an even layer over the firm gelatin. Cover with the remaining mandarin oranges. Top with the remaining blackberries. Pour the remaining gelatin mixture over the fruit. Chill until firm, at least 8 hours and up to overnight.
  • When ready to serve, place the gelatin mold in a bowl of warm water for 2 minutes to loosen. Invert onto a circular serving platter. Fill the center of the mold with fresh berries to serve.

This recipe is delicious and versatile. I often substitute a tablespoon of minced fresh basil for the dried, and two to three ears of sweet corn (about a cup cut fresh from the cob) for the Mexicorn. -Lucile Throgmorton, Clovis, New Mexico

1 package (16 ounces) frozen chopped broccoli, thawed
1 can (7 ounces) Mexicorn, drained
1/4 cup butter, cubed
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper

Steps:

  • In a large cast-iron or other heavy skillet, combine the broccoli, corn and butter; cook over medium heat until butter is melted. Stir in the basil, salt, garlic powder and pepper. Cover and cook until vegetables are tender, 8-10 minutes, stirring occasionally.

1 can mexicorn whole kernel corn
1 teaspoon basil
10 ounces frozen chopped broccoli, thawed
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder

Steps:

  • Melt the butter in a skillet.
  • Combine all remaining ingredients in the skillet.
  • Cook just until broccoli is crisp tender.

Festive Hot Broccoli Dip image

I found this recipe on the back of a box of Wheat Thin Crackers. I've made it both with the pimentos and I've also subbed out the pimientos and used a pretty red pepper (if they are on sale). The original recipe calls for Miracle Whip Salad Dressing but I've used a low-fat mayonaisse and it tastes just as nice - actually not as sweet. So feel free to adjust to your preference on that. I like to add a bit of garlic to this dip too to give it a bit more zing so I've included that as optional. I love serving this with baked bagel chips or wheat crackers - but use what you prefer! Hope you enjoy.

1 cup Miracle Whip (I've also used a low-fat mayonnaise)
10 ounces frozen chopped broccoli, thawed and well drained
1 (2 ounce) jar diced pimentos, drained (can substitute with red peppers diced fine)
1 teaspoon fresh garlic, minced
1/2 cup parmesan cheese
1 cup lowfat mozzarella cheese, shredded (1/2 cup divided in recipe)

Steps:

  • Mix together dressing, broccoli, pimientos, (garlic if using), parmesean cheese and 1/2 cup mozzarella cheese.
  • Spread into a 1 quart baking dish or a 9-inch pie plate.
  • Bake in a preheated oven set at 350 degrees for 20-25 minutes or until heated through. Sprinkle with remaining 1/2 cup mozzarella cheese and bake an additional 5 minutes or until cheese is melted.
  • Serve with your favorite crackers or bagel chips.

8 ounces fettuccine pasta, cooked al dente
2 1/2 cups frozen broccoli florets, thawed
1/2 cup chopped red bell pepper
1 (8 ounce) package reduced-fat cream cheese, softened
1 cup grated parmesan cheese, divided
2 eggs
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 8 x 8-inch baking dish.
  • In a medium bowl combine the fettucine, broccoli, and chopped red bell peppers; spoon into the buttered dish.
  • In the same bowl, beat the cream cheese, 3/4 cup grated Parmesan, eggs, garlic, salt, and pepper with an electric mixer on medium speed until combined; stir in the cream.
  • Pour cream cheese mixture over fettucine mixture and top with remaining Parmesan cheese.
  • Bake for 30 minutes until hot and bubbly.

8 cups small broccoli spears*
1 (14 1/2-ounce) can Italian-style stewed tomatoes
1 cup Complete® All-Bran® Wheat Bran Flakes cereal (crushed to 1/2 cup)
1/4 teaspoon pepper
3/4 cup shredded provolone cheese (3-oz)
2 cups Kellogg's® seasoned stuffing mix
1/4 cup reduced-sodium chicken broth or water
2 tablespoons butter or margarine, melted

Steps:

  • 1. In Dutch oven cook broccoli in enough boiling salted water to cover about 30 seconds or until bright green. Drain. In 12 x 8 x 2-inch baking dish coated with cooking spray arrange broccoli.2. Cut up any large pieces of tomato. In small bowl stir together undrained tomatoes, KELLOGG'S COMPLETE WHEAT BRAN FLAKES cereal and pepper. Spoon over broccoli. Sprinkle with provolone cheese.3. In small bowl toss together KELLOGG'S STUFFING MIX, broth and butter. Sprinkle over cheese. Bake at 350°F about 20 minutes or until vegetables are tender.*NOTE: One (16-oz) bag frozen broccoli florets may be substituted for the fresh broccoli. Completely thaw and thoroughly drain the frozen broccoli. Do not precook in the boiling salted water. Arrange in baking dish. Continue as directed above.
