My dad's favorite cookie.

Ingredients

¾ cup shortening
¼ cup butter
1 teaspoon salt
½ cup confectioners' sugar
2 tablespoons vanilla extract
2 cups all-purpose flour
1 cup chopped pecans
20 candied cherries

Steps:

Blend together shortening, butter, salt, sugar, and vanilla. Add flour and pecans and mix into soft dough. Measure out level tablespoonfuls of dough and roll in palms of hands to form round balls.
Place on greased baking sheets. Press a little indentation in center of each ball with a thimble and put a half of candied cherry on top of each.
Bake in a 325 degree F (165 degrees C) oven for 25 minutes.

I am the third generation in my family to have this recipe. It boasts of cheesy, carroty, savory goodness! A must-have side dish at all of my family's turkey dinner celebrations! Although I'm sure it would pair nicely with a roast or a chicken as well.

Ingredients

3 pounds carrots, peeled and chopped
5 tablespoons cornflake crumbs
6 eggs
2 cups milk
3 cups shredded sharp Cheddar cheese
½ cup melted butter
½ cup finely chopped onion
1 teaspoon salt
¼ teaspoon black pepper
1 pinch cayenne pepper
⅛ teaspoon ground nutmeg
1 ½ cups cornflake crumbs

Steps:

Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the carrots, recover, and steam until very tender, about 15 minutes. Drain water, remove steamer basket, and return carrots to pan; mash with an electric mixer until smooth.
Preheat oven to 350 degrees F (175 degrees C). Generously grease a 12 cup ring mold or Bundt® pan; sprinkle mold with 5 tablespoons corn flake crumbs.
Crack the eggs into a large bowl and beat at high speed until light yellow, about 1 minute. Stir in the cooked carrots, milk, Cheddar cheese, butter, onion, salt, pepper, cayenne pepper, nutmeg, and the remaining 1 1/2 cup corn flake crumbs; mix well. Spoon into prepared mold.
Bake in preheated oven until puffed and lightly browned, abut 1 hour. Remove from oven; let stand 30 minutes before inverting onto serving platter.

Cheese is a wonderful and versatile party food. This cheese ball is loosely based on a recipe my mother always made to take to Christmas parties. It's quite different from her actual dish, but equally tasty and very easy to bring together. Time includes the first refrigeration.

Ingredients

4 ounces neufchatel cheese, softened and cubed
4 ounces sharp cheddar cheese, grated
2 ounces blue cheese, softened and cubed
1/4 cup mayonnaise, preferably whole egg and unsweetened
1/4 teaspoon ground cumin
1/8 teaspoon chile powder
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
2 tablespoons stuffed green olives, finely chopped
2 tablespoons onions, finely chopped
1 tablespoon sweet pickle relish
1/2 cup sunflower seeds, toasted
1/2 cup flat leaf parsley, finely chopped

Steps:

Put the three cheeses in a food processor, and buzz until blended.
Add the remaining ingredients -- except for the sunflower seeds and parsley -- and buzz to blend well.
Put the cheese mixture in the fridge for two hours so it firms up.
While cheese mixture chills, toast sunflower seeds until they are golden, then remove from pan and allow them to cool. Then stir together seeds and parsley. Set aside.
Remove cheese mixture from fridge and shape into a ball or log (you may need to wear latex gloves to do this).
Spread sunflower seeds and parsley on a sheet of waxed paper, and roll cheese ball/log in this combination.
Serve with crackers, crudités and or small toasts.
