Steps:

  • Peel 4 medium beets and cut into 1/2-inch pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste on a baking sheet. Roast at 450 degrees F, stirring once or twice, until tender, 35 minutes. Transfer to a bowl; toss with 4 chopped scallions and 2 teaspoons lemon juice. Top with crumbled feta.

2 large fresh beets
½ cup tarragon vinegar
¼ cup lemon juice
½ cup feta cheese
½ cup chopped walnuts

Steps:

  • Bring a pot of water to a boil, and cook the beets 25 minutes, or until tender. Cool, peel, and slice 1/3 inch thick. Place slices in a bowl with the tarragon vinegar, and marinate 15 minutes.
  • Place a few beet slices on a microwave-safe dish, reserving vinegar. Sprinkle beets with some of the reserved vinegar, lemon juice, feta cheese, and walnuts. Top with more beet slices, and sprinkle again with vinegar, lemon juice, feta, and walnuts. Repeat, building the stacks as high as you like.
  • Place stacks in the microwave, and cook 40 to 60 seconds on Medium. Cool slightly before serving.

Yield Serves 6 to 8 as a first course

Number Of Ingredients 7

2 small red beets (about 1/2 pound with greens)
all-butter pastry dough
pie weights or raw rice for weighting shell
6 ounces feta
1 cup heavy cream
2 large eggs
Garnish: 1 large red beet for spiral shreds (see note, above)

Steps:

  • Preheat oven to 450°F.
  • Trim beets, leaving about 1 inch of stems attached (reserve greens for another use). Wrap beets tightly in foil and in a baking pan roast in middle of oven until tender, about 1 hour.
  • While beets are roasting, on a lightly floured surface with a floured rolling pin roll out dough into a 12-inch round (about 1/8 inch thick). Fit dough into a 9-inch tart pan with a removable fluted rim. Roll rolling pin over top of shell to trim dough flush with rim. Chill shell until firm, about 30 minutes. Unwrap beets carefully. When beets are cool enough to handle, slip off skins and stems. Beets may be roasted 1 day ahead and chilled, covered.
  • Reduce temperature to 375°F.
  • Line shell with foil and fill with pie weights or raw rice. On a baking sheet bake shell in middle of oven 30 minutes. Carefully remove weights or rice and foil and bake shell until just golden, about 10 minutes more. Cool shell in pan on a rack. Shell may be made 1 day ahead and kept in pan, covered, at room temperature.
  • Reduce temperature to 350°F.
  • Thinly slice beets and arrange in shell. Crumble feta into small pieces and in a bowl whisk together with cream and eggs. Season egg mixture with salt and pepper and pour over beets. Bake tart in middle of oven until filling is set, about 20 minutes, and cool in pan on rack.
  • If making garnish, peel beet and, using a spiral slicer (see note, this page), shred beet into spirals.
  • Serve tart garnished with spiral beet shreds.

  • Preheat the oven to 350°F (180°C). Take a large piece of parchment paper and scrunch it into a loose ball. Hold it under cold running water and then shake off the excess water. Open the paper and use it to line a heavy, large sauté pan with a lid.
  • Cut the beets in half and nestle them in the paper-lined sauté pan. (Wearing gloves is always a good idea when working with beets as their juice will stain everything they touch.) Drizzle with olive oil and vinegar and sprinkle with the crushed coriander seeds and red pepper flakes. Season with salt and pepper, to taste.
  • Take another large piece of wet parchment and place it over the beets. Cover the sauté pan with the lid, allowing the parchment paper to hang down over the side. Place the sauté pan in the oven and cook the beets until tender, 1 to 2 hours, depending on their size.
  • Remove the lid and the top piece of parchment. Scatter the feta over the beets, drizzle with a little more olive oil, and serve warm or cold.
