- Cook fettuccine according to package directions. Meanwhile in a large skillet, saute the mushrooms, zucchini and onion in butter until crisp-tender. , Stir in flour until blended. Gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Add the salmon, peas, tomato, parsley and seasonings; heat through. Drain fettuccine; serve with salmon mixture.

FETTUCCINE WITH ASPARAGUS AND SMOKED SALMON
Fresh pasta, asparagus and smoked salmon are tossed with shallot cream sauce in this elegant weeknight dinner that can be prepared in well under an hour.

Steps:
- Snap off the ends of the asparagus where they break naturally and peel the stalks. Cut the asparagus on a slant to pieces about an inch long.
- Steam the asparagus until they are just barely tender and still bright green, about three minutes. Rinse under cold water, drain well on paper towels and set aside.
- Bring a large pot of salted water to a boil for the pasta.
- While the water is coming to a boil, melt the butter in a large heavy skillet. Add the shallots and saute until soft but not brown. Stir in the cream and simmer about five minutes, until the cream has thickened somewhat.
- Cut the salmon into slivers, add it to the cream and remove the skillet from the heat. Season with pepper and lemon juice. Add the asparagus.
- When the pot of water is boiling, add the fettuccine, stir it once or twice, then cook two to three minutes after the water has returned to a boil. Drain well.
- Briefly reheat the sauce. Transfer the fettuccine to a warm serving bowl, pour the sauce over it and toss. Sprinkle with dill and serve.

- Sauté garlic in margarine for 1 minute--do not let it brown.
- Add flour and incorporate completely.
- Add skim milk a little at a time and mix until flour has dissolved.
- Cook on medium heat stirring continuously for 8 minutes.
- Add cream cheese and mix until incorporated.
- Cook for 2 minutes.
- Add parmesan cheese and salmon.
- Cook fettuccine according to directions and drain.

- Bring a large pot of water to a boil for the pasta.
- Heat the oil in a heavy skillet, add the radicchio and cook over medium heat until the radicchio wilts, about 5 minutes. Season it lightly with salt and pepper, stir in the vinegar and the cream and just bring to a simmer. Add the salmon and remove from the heat.
- When the water is boiling add a generous pinch of salt, then cook the fettuccine about 2 minutes. Drain it well.
- Add the pasta to the skillet, return the skillet to the heat and cook, stirring gently, about 2 minutes, until the ingredients are well blended. Add the basil and serve at once.

- Melt butter in a saucepan or wok over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add salmon and tomato and season with salt and pepper.
- Increase heat to high and cook, stirring constantly, for 2 minutes. Pour in vodka, reduce heat, and simmer, until liquid is reduced by half, 3 to 5 minutes. Pour in cream and simmer until liquid reduced by half again, 3 to 5 minutes. Adjust seasoning with salt and pepper.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain, add to sauce and toss to coat.
- Serve sprinkled with caviar and freshly grated Parmesan cheese. Garnish with chopped parsley.
