FIBER-FILLED BANANA MUFFINS
There don't seem to be any recipes here using this delicious cereal so here's another wonderful recipe using Weetabix. From www.weetabix.ca

Steps:
- Preheat oven to 375 degrees.
- In a large mixing bowl combine oil, brown sugar, honey and eggs. Set aside.
- Chop 1 ½ bananas ijnto 1 1/4" cubes. Slice remaining banana into 12 pieces.
- Mix together bran, Weetabix, flour, soda and salt.
- Add to egg mixture with buttermilk and chopped banana stirring only until all ingredients are evenly moistened.
- Grease muffin cups or line with jumbo style baking cups. Fill with muffin mixture and garnish with a slice of banana.
- Bake at 375 F for 20-25 minutes or until done. Remove from tin and cool at least 15 minutes before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
- Mash bananas in a bowl until no lumps remain. Add brown sugar, egg whites, egg, and canola oil; mix thoroughly. Stir flour, oats, baking soda, salt, and baking powder into the batter until just combined.
- Fill muffin cup 2/3-full with batter.
- Bake in the preheated oven until tops spring back when lightly pressed, 20 to 25 minutes.

FIBER ONE BANANA NUT MUFFINS
These are an adult healthy banana nut muffin, definitely not a kid friendly muffin. These are very dense. I found the original recipe on cooks.com but have changed it some to suit our tastes. We keep these in the freezer and then take a couple out and put them in the microwave for about 30 seconds to defrost. Sometimes for a little more sweetness I add some dried cranberries too!

Steps:
- Heat oven to 425F degrees.
- In large mixing bowl place 1 cup Fiber One cereal and 1/2 cup milk. Mix in 2 to 3 pureed bananas and let stand 5 minutes.
- After 5 minutes add all ingredients except for flour. Mix well.
- Add flour and mix to even consistency.
- Bake in greased muffin tins for 20 to 25 minutes until tops are lightly browned.
- When done, loosen from muffin tin and let cool.
