- Cook pasta as directed on package.
- Meanwhile, heat oil in large skillet on medium-high heat. Add chicken. Cook and stir 6 min. Add peppers, dressing and chili powder; cook 3 min. or until chicken is done, stirring frequently. Stir in salsa and sour cream.
- Drain pasta. Toss with chicken mixture. Sprinkle with cheese.

- In a large resealable plastic bag, combine the soy sauce, Worcestershire sauce and garlic powder; add the chicken. Seal bag and turn to coat; set aside., In a large nonstick skillet coated with cooking spray, saute the mushrooms, onion and jalapeno in 2 teaspoons butter until tender. Remove and keep warm., Drain and discard marinade. In the same skillet, cook chicken in remaining butter over medium heat for 4-5 minutes on each side or until a thermometer reads 170°. Spoon vegetable mixture over each chicken breast; sprinkle with cheeses. Cover and cook for 1-2 minutes or until cheese is melted.

- Cook egg noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Stir in condensed soup, salsa, water and taco seasoning., Drain noodles; stir into skillet and heat through. Sprinkle with cheese. Remove from heat. Let stand, covered, 1-2 minutes or until cheese is melted. Freeze option: Freeze cooled noodle mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

- Season both sides of the chicken with salt and pepper. Set a 12-inch skillet over medium-high heat and add the oil. When it starts to shimmer, add the chicken and cook on one side until golden brown, about 4 minutes. Transfer the chicken to a plate, leaving the fat in the pan.
- Add the rice, onion and 1/2 teaspoon salt to the pan. Cook, stirring frequently, until the rice is toasted and the onions begin to soften, about 3 minutes. Add the garlic, oregano, chili powder and cayenne, cooking just until fragrant, about 15 seconds.
- Mix in the tomatoes, green pepper and chicken broth. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pan. Add the chicken back to the pan, browned side up, along with any accumulated juices. Cover the pan and reduce the heat to low. Cook until the chicken is cooked through, about 12 minutes, depending on size of the breasts.
- Transfer the chicken to a cutting board and gently give the rice a quick stir then replace the cover and continue cooking until the rice is tender and the liquid is absorbed, about 12 minutes. Meanwhile, cut the chicken into 1/2-inch slices.
- Turn off the heat under the pan then arrange the sliced chicken on top. Sprinkle with the cheese and green onions then cover the pan again and let stand for a few minutes until the cheese has melted.

- Cut chicken breasts into 1/2-inch strips.
- Spray a wide bottom sauce pot or 12-14 inch skillet with a nonstick spray and heat over a medium heat until hot. Add the chicken and red pepper, cook until chicken is browned and fully cooked.
- Remove from pan, set aside and keep warm.
- In same pan add the onion, cook for 30 seconds. Add the water, rice, chili powder, corn and salsa; simmer for 10 minutes or until rice is done.
- Serve chicken and peppers over the rice with chopped cilantro.

- Spray slow cooker with non-stick cooking spray.
- Place chicken breasts in the bottom of the slow cooker.
- Top with onion, corn, black beans, salsa, lime juice, taco seasoning, and dry ranch dressing mix. Add the cream cheese on top.
- Place the lid on the slow cooker and cook for 6-7 hours on low heat (or high heat for 3-4 hours, but I prefer the "low and slow" method).
- Shred the chicken using 2 forks (it should fall apart fairly easily; you can do this right in the slow cooker or remove the chicken and shred it on a cutting board if that is easier).
- Stir the shredded chicken and the shredded pepper jack cheese in with all the ingredients until the cheese is fully melted and smooth.
- Use this chicken for tacos, burritos, nachos, salads, enchiladas, quesadillas, etc. The possibilities are endless!

- Preheat oven to 350 degrees.
- In a small skillet over medium heat, sauté onion and olive oil until onion starts to brown and soften.
- In a large oven-safe skillet or 9x13" baking dish, place half the golden corn tortilla chips and blue corn tortilla chips. Top with half the sautéed onion, 1/2 cup refried beans (dropped in spoonfuls over the chips), half the chicken, and half the cheese. Repeat layers.
- Bake for 5-8 minutes, until cheese has completely melted.
- Remove from oven and top with pico de gallo, sour cream, guacamole, and cilantro. Serve warm.

- Season chicken with 3/4 teaspoon salt and 1/4 teaspoons pepper. Heat olive oil over medium-high heat in a large skillet with a tight-fitting lid. Add chicken in batches, in a single layer, and saute until brown about 7 minutes. Remove to a plate, cover loosely with foil and set aside.
- Saute onion and red bell pepper on medium heat until soft, about 5 minutes. Add chicken broth and stir, scraping up all brown bits on the bottom of the pan.
- Add taco seasoning, 1/4 teaspoon salt, 1/4 teaspoon black pepper, cumin, tomatoes, diced chilies, corn, black beans, and rice and bring to a boil. Reduce heat to low, cover and cook for 20 minutes.
- Remove lid and quickly add chicken to rice. Cover and cook 8 minutes or until rice is tender and chicken is heated through. Adjust seasoning, ladle into individual bowls, sprinkle with cilantro and serve.
