- To make patties, mix turkey with egg, crushed tortilla chips, onion, garlic, chili powder, lime zest and salt. Divide into 4 portions. Shape each into 1/2-inch (1 cm) thick patties. Cook on preheated grill, at medium-high heat, for 5 to 6 min per side or until cooked through.
- Make salsa by mixing the tomato, red onion, lime juice, cilantro, garlic and salt.
- Serve grilled burger patties in toasted buns with the tomato salsa.

FIESTA TURKEY TAVERN
This is a southern tavern with just a bit of a mild kick. You can add more heat by doubling the chili powder and cayenne pepper and adding a few of the seeds from the jalapeno. You can use beef, too! You can serve these on burger buns, in tortillas or in pitas garnished with with some shredded cheddar, pickled jalapeno slices and chipotle mayo. (If you have a more classic taste, American cheese, pickles and ketchup still tastes good as well!)

- Heat the olive oil over medium-low heat; cook and stir the ground turkey, using the back of a wooden spoon to work the meat into small crumbles as it cooks. When the meat is about half browned, stir in the onion, garlic, and black pepper; cook and stir until the turkey is crumbly, evenly browned, and no longer pink.
- Stir in 1 tablespoon of the prepared mustard, the cayenne pepper, chili powder, and water. Bring the mixture to a boil, reduce the heat, and simmer, stirring, until the water has evaporated, about 20 minutes. FETA-STUFFED JUICY LUCY TURKEY BURGERS
Ground turkey burgers get a bad rap for being a little bit boring. But when dressed up with flavors of the Mediterranean like olives, capers, garlic and dill, and then stuffed with salty and tangy feta cheese, they become anything but. To maximize the flavor we made a quick tzatziki sauce and slathered it over toasted sesame buns, then topped the burgers with fresh tomato slices and crunchy spinach.

- For the tzatziki sauce: Mix the yogurt, dill, cucumber, garlic, lemon juice, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl until smooth. Refrigerate until ready to use.
- For the turkey burgers: Prepare a grill for medium-high heat. Lightly oil the grill grates with vegetable oil.
- Mix the ground turkey, olives, dill, capers, oregano, garlic, lemon zest, 2 teaspoons salt and a generous amount of pepper in a large bowl until well combined. Divide the mixture into 4 equal balls (about 6 ounces each). Working with one ball at a time, divide it in half and flatten to make 2 patties, each about 4 1/2 inches in diameter. Spoon 1 tablespoon of feta into the middle of one of the patties, leaving about a 1-inch border. Top with the other patty and press the meat together very tightly, forming a large patty shape with the cheese secured inside. (If needed, refrigerate the patties if you notice they are becoming a little malleable and too soft to work with while you build the remaining burgers). Repeat with the remaining balls and cheese. (At this point, you can freeze the burgers, wrapped tightly in plastic wrap and placed inside a freezer bag, for up to 3 months.) Thaw in the refrigerator before cooking.)
- Grill the burgers, flipping once, until golden grill marks have formed, the meat is no longer pink on the top and an instant-read thermometer registers 165 degrees F, 5 to 6 minutes per side.
- Meanwhile, split the buns open and brush both sides with the olive oil. With about 2 minutes of burger cooking time left, toast the buns on the grill until golden and a few grill marks have formed, about 2 minutes.
- Spread about 2 tablespoons of the tzatziki sauce onto both halves of each bun. Layer each bottom bun half with a burger patty, 2 tomato slices, some red onion slices and iceberg leaves and the top bun half.
FIESTA BURGER
Steps:
- In a medium bowl, mix together the ground beef, chorizo, onion powder, cumin and 2 teaspoons each salt and pepper. Form the mixture into palm-size balls.
- Heat a griddle or large skillet over medium-high heat. Place the balls on the griddle and smash with a spatula or the back of a spoon. Cook, flipping once, until cooked through. Divide the Cheddar and queso blanco among the burgers and let melt. Remove the burgers to a plate.
- Meanwhile, combine the mayonnaise, ketchup and lime zest and juice in a bowl; mix to blend. Add cumin, salt and pepper to taste.
- Toast the slider buns on the griddle. Serve the burgers on the buns, topped with some rosada sauce.
FIESTA TURKEY LOAF OR BURGERS
Every so often I find frozen ground turkey on sale for about 70 cents a pound, and I seriously stock up. We're big meatloaf and burger junkies, and love to switch between beef and turkey. I found this recipe on about.com.

- Using a large serving fork, combine turkey, chicken sausage, 1/2 cup of the salsa, crushed tortilla chips, onions, bell peppers, 1/2 cup of the cheese, cilantro, salt, cumin, pepper, and liquid smoke. Mix until well-combined, but do not over-mix. Spoon into a loaf pan. Top with remaining 1/2 cup salsa and 1/4 cup cheese.
- Bake for 1 hour. Drain any liquid, then let rest for 15 minutes before cutting the turkey meatloaf to serve.

- Add burgers to pan and cook over medium-high heat for 5-6 minutes, then flip and continue cooking until done, about 5-6 minutes more. If you are adding sliced cheese to your burgers, you can do that when you flip them, so it melts.
